MY AUNT'S BANANA BREAD
I got this recipe from one of my aunts, who got it from an old woman she met in Hawaii while stationed there. It is hands-down the very best banana bread I've ever tasted!! No extra buttering required ;)

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
- Stir the bananas and vinegar together in a bowl, and set aside. Cream the sugar and butter together in a large bowl until creamy and smooth, then beat in the eggs. Stir in the reserved banana mixture. In a separate bowl, stir the flour, baking soda, baking powder, and salt together until the mixture is free of lumps. Mix the flour mixture into the butter-sugar mixture until well blended, and stir in the chopped walnuts and chocolate chips. Spread the batter into the prepared loaf pan.
- Bake in the preheated oven until lightly browned and a toothpick inserted into the center of the loaf comes out clean, 50 to 60 minutes. Let cool in pan about 5 minutes, then turn out onto a wire rack.

- Preheat oven to 350°F. Mash the bananas in a bowl. Add all the remaining ingredients and mix well with a wooden spoon. Bake in a buttered loaf pan until a toothpick stuck into the bread comes out clean, 55 to 60 minutes. Slice and serve.

- Peel the bananas and place in a medium saucepan. Add the water and then bring to the boil. Turn the heat down and simmer for about 20 minutes. Break the bananas up with a wooden spoon, fork or masher. Sprinkle the tapioca into the saucepan while stirring. Add the coconut milk and then simmer over low/medium heat until the tapioca is cooked, about 15 minutes. Stir frequently. Finally, taste the suafa'i. If you like a little more sweetness, then add sugar to taste. Remove from the heat, leave for about 30 minutes to cool and then serve in a bowl or cup. You can also cool suafa'i completely, and refrigerate it. Once cooled, serve it as a snack or dessert.
AUNTIE LISA'S BANANA BREAD
Steps:
- Mix shortening, sugar, eggs together. When well blended, add buttermilk and (flour and soda) alternating. When well blended, add mashed bananas, nuts and vanilla. Pour into well greased loaf pan. You can use small loaf pans for variety. Bake 1 hour at 275 degrees. Watch carefully as the deeper the pan, the more moist the bread and sometimes take longer to cook. Don't cut when hot. Line underneath pans while baking as tends to overflow pans. Have extended baking time at least 30 minutes.
AUNT CARRIE'S BANANA BREAD
This not "just another" banana bread. I've made it time and time again throughout the years. It's from an old and yellowed recipe clipping (50 plus years old) from my local newspaper that my great aunt had written her own success notes beside. My aunt was a caterer, and she writes that this banana bread was her most requested treat for her teas and luncheons.

- Cream shortening and sugar.
- Add unbeaten eggs.
- Beat well.
- Blend in well-mashed bananas.
- Add flour in which soda and salt have been sifted together.
- (Batter should be about the same consistency as a cake batter. If too stiff, add a small dash of milk. If too thin, add small amount of flour.) Stir in pecans.
- Pour into a greased and floured 5 x 9 inch loaf pan.
- Bake at 350* for about 50 minutes or until done.

This banana bread recipe was given to me by a good friend. My family begs for this all the time. I have to buy bananas just to make this. It is extremely easy to make and freezes well.

- Preheat oven to 350. Grease 9x5x3 loaf pan.
- Sift flour, baking powder, baking soda, and salt together.
- With mixer at medium speed, thoroughly mix shortening with sugar, then the eggs until light and fluffy (4 mins).
- At low speed, beat in flour mixture alternately with bananas until smooth. Turn into pan.
- Bake for 1 hour. (DO NOT OPEN DOOR WHILE BAKING) Cool in pan for 10 minutes. Remove.
