CHEESY CRUNCHY NOODLE CASSEROLE

Kosher salt and freshly ground black pepper
8 ounces egg noodles
1 1/4 cups small-curd cottage cheese
1/2 cup sour cream
1 cup grated sharp Cheddar
1/2 cup sliced green onions, plus more for garnish
2 cups crushed potato chips

Steps:

  • Preheat the oven to 375 degrees F. Bring a large pot of salted water to a boil.
  • Cook the egg noodles until al dente as per the package directions. Drain and set aside.
  • In a medium bowl, combine the cottage cheese and sour cream. Add plenty of freshly ground black pepper. Add to the noodles and stir. Add the Cheddar and green onions, then stir.
  • Add the contents of the bowl to a 9-by-13-inch baking dish and bake for 15 minutes. Remove and top with the potato chips. Return to the oven and bake until golden, another 5 minutes.
  • Garnish with green onions, then serve.

Old Fashioned mac 'n cheese. The Lehman family favorite. A simple recipe that is always a hit at carry ins--especially with the little ones.

1/2 cup butter or 1/2 cup margarine
2 cups milk
1/4 cup all-purpose flour
1 lb Velveeta cheese
16 ounces egg noodles
buttered bread crumbs or French-fried onions

Steps:

  • Boil the noodles in water, just until tender. Don't overdo it or they get mushy. Drain and set noodles aside.
  • In a large pot melt the butter over medium-high heat.
  • Gradually add the milk, constantly stirring. Reduce the heat a little.
  • Slowly add in the flour, and keep stirring.
  • Cut the Velveeta into small chunks, and add to the sauce mixture, stir until melted; remove from heat.
  • Add the noodles to the sauce mixture. Mix until evenly coated.
  • Pour into a well greased glass 9x13-inch pan.
  • Bake at 350°F for about 35 to 45 minutes, depending on your preference and your topping choice.

2 to 2 1/2 pounds Wah King Noodle Company #4 Chinese Noodles
1 cup soy sauce
4 tablespoons brown sugar
5 tablespoons oil
4 tablespoons oyster sauce
4 chicken breasts slices into thin strips
6 to 8 pork chops sliced into thin strips
4 cups soy sauce
2 tablespoons oil
2 tablespoons cornstarch
2 to 3 tablespoons brown sugar
3 slices crushed ginger
4 cloves crushed garlic
2 to 3 tablespoons oyster sauce
2 tablespoons sherry
3 bundles green onions
2 heads broccoli
1 head cauliflower
1/2 pounds tender green beans
5 large carrots
1 large jicama
1 bunch celery
1 pound fresh mushrooms
1 pound Chinese snow peas
2 cans sliced water chestnuts
2 cans bamboo shoots

Steps:

  • Boil noodles in water until tender. Drain and convert to large bowl. Add seasoning, soy, brown sugar, oil, oyster sauce and blend well. Spray large metal broiler pan with cooking spray and spread 1/4 of the noodles onto the pan evenly. Bake at 350 degrees, turning noodles every 10 minutes for 30 minutes total, or until dry. Repeat with remaining noodles, baking 1/4 of the batch at a time. Marinate meat separately. Then, set meat aside in separate marinades while preparing vegetables.
  • Clean, wash, and julienne the vegetables. Set each vegetable aside in separate piles. Bring big pot of water to boil. Partially boil each vegetable group separately dipping them in the hot water for 1 minute or less. Do not par-boil the mushrooms or green onions. Saute the mushrooms in butter until cooked. Once the vegetables are all par-boiled or cooked, you can mix them together in a large bowl, along with the green onions.
  • Add 1 tablespoon of oil to a hot stir-fry pan. Remove garlic pieces and ginger from the meat marinade. Divide pork and ginger from meat marinade. Divide pork and chicken into 3 batches a piece. Stir fry each batch very quickly until cooked through and mix meats. Set aside.
  • Add 1 tablespoon of oil to the hot pan. Stir fry 2 to 3 handfuls of mixed vegetable for half a minute. Stir in small portion of meat mixture. Add 2 tablespoons of oyster sauce while stir frying. Toss together and serve on a bed of noodles. Repeat with the remaining ingredients. Be sure to keep the amount of vegetable you are stir frying in small batches until all has been cooked and blended together.

EASY CHEESY NOODLES

Well, the name says it all except how good it tastes! This has a secret ingredient that tastes good and adds nutrition too. Submitted for RSC#18.

8 ounces egg noodles (1/2 pound)
1 1/2 cups 10% cream (half and half)
1/2 cup plain yogurt
4 tablespoons butter, melted, divided
1/4 cup all-purpose flour
8 ounces cheddar cheese, grated (I love sharp)
2 ounces monterey jack cheese, grated (or other cheese of choice)
1 medium parsnip, diced
olive oil
1/4 teaspoon fresh ground black pepper
1/4 teaspoon nutmeg
1/4 teaspoon red pepper flakes (more or less to desired heat)
3/4 cup fresh breadcrumb

Steps:

  • Roast parsnip:.
  • Cut parsnip into small cubes and place on baking sheet. Drizzle with a couple teaspoons of olive oil and a sprinkle of salt. Toss to coat and bake at 400*F. for about 15-20 minutes, until browning on the edges and tender.
  • Meanwhile, cook the egg noodles in boiling water for about 8-9 minutes(al dente). Drain well.
  • In a small pan, heat the half and half and plain yogurt until hot(don't let boil) Turn off heat.
  • Heat a skillet and add 2 tbls. butter, stirring with a whisk to melt.
  • Add the yogurt mixture, remove from heat and stir until smooth.
  • Add cheeses, roasted parsnip, salt, pepper, nutmeg and red pepper flakes. Add the cooked noodles, stir well.
  • Pour mixture into a 1 1/2 quart baking dish.
  • Melt the remaining 2 tbls. butter and combine with the fresh breadcrumbs. Sprinkle over top of casserole.
  • Bake 30-35 minutes, until bubbly and top browned.
  • Enjoy!
  • Note: Add some shaved cauliflower(roast with parsnips last 10 minutes), peas, grated onion, or other vegs. to give more nutrition and flavor.

1 1/2 lbs sirloin steaks
1 tablespoon shortening
1 (21 g) envelope brown gravy mix
2 cups water
1 tablespoon dried onion flakes
1 tablespoon brown sugar
2 tablespoons red wine vinegar
1 teaspoon Worcestershire sauce
1/4 teaspoon ground ginger
1 bay leaf
1 (375 g) package broad egg noodles, cooked

Steps:

  • Cut meat into 1-inch squares.
  • Brown meat in hot shortening in a large saucepan or deep skillet.
  • Transfer meat to a casserole or small roasting pan.
  • To the pan, add water and gravy mix.
  • Bring to boiling, stirring constantly.
  • Stir in onion, brown sugar, vinegar, Worcestershire sauce, ginger, and bay leaf.
  • Season to taste with salt and pepper.
  • Pour sauce over meat in casserole, and cover.
  • Bake at 350 degrees F for 1 1/2 hours.
  • Serve over hot cooked noodles.

  • Cook the noodles in a large saucepan of boiling, salted water with 1tsp cooking oil, until just soft (about 7-10 minutes).

2 1/2-3 lbs chicken pieces
1 small onion, finely chopped
1/2 cup thinly sliced celery
1 garlic clove, minced
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1/2 teaspoon poultry seasoning
1/2 teaspoon chopped fresh thyme
1 (10 1/2 ounce) can condensed chicken broth
1/4 cup cornstarch
1/3 cup cold water
12 ounces medium egg noodles
chopped fresh parsley

Steps:

  • Rinse chicken and pat dry with paper towels. Combine chicken, onion, celery, garlic, salt, pepper, poultry seasoning and thyme in a 3 1/2 quart slow cooker. Add chicken broth. Cover and cook on low 4 or 5 hours. Or until chicken is tender.
  • Remove chicken from slow cooker. Discard skins and bones; cut chicken into bite-sized pieces and set aside.
  • Turn control to HIGH. Dissolve cornstarch in cold water. Stir into juices in slow cooker. Cover and cook on HIGH 15 to 20 minutes or until slightly thickenend. Stir in chicken.
  • Meanwhile, cook noodles according to package directions and drain. Spoon mixture over cooked noodles. Sprinkle with chopped parsley.
