- In food processor, combine apples, walnuts, cinnamon, orange juice, lemon juice and currants.
- Pulse briefly until desired texture is achieved.

CHAROSET
A simple recipe for this traditional Passover staple. I always make a great deal extra to munch on for days! Mixture will turn the appropriate shade of brown to look like the mortar which it represents. You can substitute sugar for the honey, if desired.

Steps:
- Gather the ingredients.
- Fit a food processor with an "S" blade or shredding disc. Feed the apples through the feed tube, pulsing several times to chop or grate the apples as desired.
- Transfer the apples to a large bowl. Add the chopped nuts, sugar, wine, and cinnamon.
- Stir well to combine.
- Cover and refrigerate until ready to serve. Leftover charoset will keep, covered in the refrigerator, for four to five days.

Steps:
- Heat the oven to 180C/160C fan/gas 4. Toast the walnuts until dark and fragrant, about 7-10 mins, taking care not to burn them. Allow to cool, then chop finely.
- Peel, core and finely chop the apples. Mix with the cinnamon, lemon juice, silan (date syrup), orange zest, sweet wine or grape juice and salt. Add the cooled nuts and stir again to combine. Transfer it to a closed container and keep chilled.

Steps:
- Heat 100ml wine or grape juice in a pan. Bring to a simmer and add the dried fruit and cinnamon. Simmer gently until the liquid is syrupy and the fruit tender, about 5-6 mins. If the liquid evaporates before the fruit has softened or starts to dry out, add another 20ml of wine or grape juice. Turn off the heat and leave to cool.
- Tip the toasted almonds into the small bowl of a food processor and pulse until you have larger and smaller pieces, but no whole nuts. Tip them into a mixing bowl, then spoon the cooled fruit mixture into the food processor and pulse until it starts to form a paste, but still has some bigger lumps of fruit remaining.
- Scrape the fruit into the mixing bowl with the nuts and stir to combine. Add a pinch of salt and taste, adding more cinnamon and salt to taste, if you like. Will keep for several days in an airtight container.

- Peel and core all apples and cut them into large chunks. Then, working in batches, run each apple chunk through your food processor using the shredding disk. Set aside in a large bowl.

- Add the green chopped apples to a 7-cup food processor. Pulse about ten times until apples are diced and no large chunks remain. Empty the diced green apples into a large mixing bowl. Repeat this process with the red apples.
- Add toasted walnuts to the food processor and pulse 5-7 times until roughly chopped and no large chunks remain. Add chopped walnuts to the large mixing bowl with the apples.
- Add raisins to the food processor and process for a couple of seconds to break the raisins up into smaller bits. Add to the mixing bowl with the other apples and walnuts. If using dried cherries or dates repeat this process.
- Stir everything together in the mixing bowl. Add the wine (or juice), maple syrup, cinnamon, allspice and salt. Mix again until everything is well incorporated.
