This is my Aunt Ro's recipe for baked beans. It's closer to chili than baked beans, and it's great for a potluck or BBQ.

8 ounces bacon
1 pound ground beef
½ cup chopped onion
2 (12 ounce) cans pinto beans, drained and rinsed
2 (15.5 ounce) cans canned butter beans, drained and rinsed
2 (15 ounce) cans canned baked beans with pork
1 cup barbeque sauce
1 cup ketchup
1 cup brown sugar, packed

Steps:

  • Place the bacon in a large, deep skillet and cook over medium-high heat until evenly brown. Drain on paper towels, crumble, and set aside. Drain bacon fat from the skillet.
  • Using the same skillet, cook the ground beef and onion over medium heat, stirring until the meat is no longer pink, 5 to 7 minutes. Drain.
  • Transfer the ground beef to a slow cooker. Add the pinto beans, butter beans, baked beans with pork, barbeque sauce, ketchup, and brown sugar to the ground beef mixture; stir to blend well. Cover and cook for 4 hours on High. Top each serving with crumbled bacon.

6 strips thick-cut bacon
Three 16-ounce cans regular pork and beans
1/2 cup ketchup
1/4 cup molasses
1/4 cup brown sugar
2 tablespoons dry mustard
1/2 medium onion, diced

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the bacon to a large skillet and fry over medium heat until browned, 8 to 10 minutes. Remove the bacon to a paper towel-lined plate and remove all but 4 tablespoons bacon fat from the skillet.
  • Add the beans, ketchup, molasses, brown sugar, dry mustard and onions to an 8-by-8-inch casserole dish. Add in the bacon fat from the skillet. Lay the reserved bacon strips on top of the bean mixture. Bake until heated through, 30 to 45 minutes.

1 pound dry red kidney beans
2 quarts water
1 large yellow onion, cut in eighths
1 bay leaf
6 whole black peppercorns
3/4 cup medium amber pure maple syrup
1/2 cup light brown sugar, lightly packed
1/2 cup ketchup
1 tablespoon Chinese chili paste
1 tablespoon grated fresh ginger
1 teaspoon kosher salt
5 ounces thick-cut smoked bacon, cubed

Steps:

  • Place the beans in a large bowl and cover with cold water by 1-inch and cover with plastic wrap. Refrigerate overnight. Drain and rinse the beans and then drain again.
  • Place the beans in large pot with 2 quarts water, the onion, bay leaf, and peppercorns. Bring to a boil, then lower the heat and simmer for about 50 minutes, or until tender. A good test is to scoop up several beans in a spoon and blow on them: if the skin starts to peel off, they're done. Drain the beans, reserving the cooking liquid.
  • Preheat the oven to 225 degrees F.
  • In a small saucepan, whisk together the maple syrup, brown sugar, ketchup, chili paste, ginger, salt, and 1 1/2 cups of the cooking liquid, still reserving the remaining liquid. Bring to a simmer and cook over medium heat for 6 minutes.
  • Transfer the beans to a medium Dutch oven or a bean pot. Push half the bacon into the beans and place the rest on the top. Pour the maple syrup sauce over the beans. Place the lid on top and bake for 6 to 8 hours. Check occasionally; if the beans are too dry, add 1/2 cup more of the cooking liquid. If you like, you can remove the lid for the last 30 minutes to thicken the sauce. Discard the bay leaf. Serve hot.

1 canned chipotle chiles in adobo
3 big (28-ounce) cans cannelloni beans, drained and rinsed
Kosher salt and freshly ground black pepper

Leaves from 6 fresh rosemary sprigs
Extra-virgin olive oil

Steps:

  • Special equipment: 4 individual crocks
  • Preheat the oven to 350 degrees F.
  • Put the molasses, ketchup, mustard, and chiles in a blender and puree. Scrape that into a big bowl, add the beans and season with salt and black pepper, and gently toss so that the beans are coated with the molasses mixture. Divide the mixture evenly amongst individual crocks. Top each crock with a piece of pancetta, sprig of rosemary and a drizzle of extra-virgin olive oil. Bake in the oven until the bacon is browned and fat is rendered, about 25 minutes.

Pat: Every Fourth of July, Mama Neely made her famous baked beans: she'd brown ground beef and then doctor that beef with molasses, brown sugar, and plenty of spices. Let me tell you, those beans were good. And so are these. We've found that using smoked sausage in place of the ground beef (or pork shoulder, as in our restaurant recipe) adds a smoky depth to the dish. Once you make these beans, there is no going back. If you want to put your own spin on it, you can use kidney beans instead of pork and beans, but I say my mama's way is best.

2 tablespoons canola oil
1 large onion, finely chopped
3 cloves garlic, finely chopped
1/2 pound smoked sausage, sliced
Three 16-ounce cans pork and beans
1/2 cup ketchup
1/2 cup light molasses
1/4 cup light-brown sugar
2 tablespoons apple-cider vinegar
2 tablespoons prepared mustard
Dash of hot sauce, preferably Tabasco

Steps:

  • Preheat the oven to 350 degrees F. Heat the oil in a Dutch oven set over medium- high heat. Once it's hot, toss in the onion and garlic, and saute until the onion is tender, about 3 or 4 minutes. Add the sausage, and continue to cook until the meat has browned, about 4 minutes more. Stir in the pork and beans, ketchup, molasses, sugar, vinegar, mustard, and hot sauce. Bring the beans up to a simmer, then put in the hot oven for 45 minutes, uncovered, until the mixture is bubbly and thick.

  • Bake at 350 degrees for 1 hour.
  • You can adjust the amount of ketchup to your taste. I use between 3/4 and 1 cup.

1 (28 ounce) can baked beans (I use Bush's)
1 medium onion, diced
1 medium bell pepper, diced
6 slices bacon, fried and crumbled (you can use more if you like)
2 tablespoons chili powder
3 tablespoons Worcestershire sauce
4 tablespoons vinegar
1/2 cup packed brown sugar
1/2 cup ketchup
1 teaspoon garlic powder
1/4 teaspoon cayenne pepper (optional)
salt

Steps:

  • Preheat the oven to 350°F (175°C).
  • In a large Dutch oven, combine the baked beans, onion, bell pepper, and the bacon. Season with chili powder, Worcestershire, vinegar, brown sugar, ketchup, garlic powder and salt. Add cayenne if using.
  • Cover and bake for one hour in the oven.
  • You can uncover the second 1/2 hour if you like your beans on the thick side.
  • I have also made these in the crock pot on high for 2-3 hours depending on how thick you like them.

½ cup white sugar
½ cup ketchup
2 tablespoons dark molasses
1 ½ teaspoons dry mustard

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Transfer beef to a bowl with a slotted spoon. Drain and discard grease.
  • Place bacon in the same skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon on paper towels. Discard all drippings.
  • Add baked beans, kidney beans, butter beans, onion, brown sugar, white sugar, ketchup, molasses, and dry mustard to the beef. Add bacon and mix all ingredients together. Transfer to a 9x13-inch aluminum pan and cover with aluminum foil.

2 (15 ounce) cans white beans
1 (10 3/4 ounce) can tomato soup
1/2 cup brown sugar
1 cup small onion (chopped)
1 teaspoon prepared mustard
8 slices bacon (uncooked)

Steps:

  • Pam a baking dish. Open can of pork and beans and both cans of white beans, pour into baking dish. Add the tomato soup, brown sugar and the mustard to the bean mixture. Mix well, making sure there are no lumps of brown sugar. Chop the onion to desired pieces and add to the bean mixture, mix well. Layer the uncooked bacon on top of the beans. Bake in an oven at 350 degrees for two hours. Turn oven off and let sit in oven overnight. (This is what the recipe says to do.) Or cool and refrigerate. Reheat the next day and enjoy.
