Breakfast Grilled Cheese image

Start your day off right with this Breakfast Grilled Cheese recipe with scrambled eggs and cheese - add ham, sausage, or bacon for a tasty morning meal.

1/2 pound ground breakfast sausage
6 large eggs, beaten
8 slices Colby-Jack cheese
4 tablespoons soft butter, divided
8 slices sourdough bread

Steps:

  • In a large non-stick skillet, cook and crumble the ground breakfast sausage until no longer pink. Transfer the cooked sausage to a medium paper towel-lined mixing bowl and set aside. Wipe out the pan with a paper towel.
  • In the same skillet, melt 2 tablespoons of butter over medium-high heat. Pour the eggs into the pan. Once the eggs begin to set, gently stir making scrambled eggs, until the liquid is almost gone. Remove the pan from the heat.
  • Remove the paper towel from under the sausage leaving the sausage in the bowl. Add the scrambled eggs to the bowl with the sausage and gently stir to combine. Wipe the skillet with a paper towel and heat it over medium heat.
  • Butter one side of each piece of bread. Place one slice of bread into the skillet, butter side down.
  • Top the bread slice with one slice of Colby-Jack cheese. Scoop about 1/2-cup of the sausage-egg mixture over the top of the cheese. Top the sausage-egg mixture with another slice of cheese, then another slice of buttered bread with the butter side facing up.
  • Cook the bread until it begins to turn golden brown, about 3-4 minutes. Carefully flip the sandwich over and cook until golden brown on the second side.
  • Remove the sandwich to a cutting board and cut it in half, if desired.
  • Repeat the process with the remaining bread, cheese, and sausage-egg mixture.
  • Serve immediately.

The PERFECT excuse to have grilled cheese for breakfast - with scrambled eggs, sausage and of course, ooey gooey melted cheese!

1 tablespoon olive oil
4 links breakfast sausage, casing removed
2 tablespoons unsalted butter
4 large eggs, lightly beaten
1/4 cup half and half
Kosher salt and freshly ground black pepper, to taste
2 tablespoons unsalted butter, at room temperature
4 slices whole wheat bread
1 cup shredded cheddar cheese

Steps:

  • Heat olive oil in a large skillet over medium high heat. Add sausage and cook until browned, about 3-5 minutes, making sure to crumble the sausage as it cooks; drain excess fat, reserving 1 tablespoon in the skillet. Add eggs to the skillet and cook, whisking, until they just begin to set. Gently whisk in half and half; season with salt and pepper, to taste. Continue cooking until thickened and no visible liquid egg remains, about 3-5 minutes; set aside. With a butter knife, spread butter on one side of each slice of bread. Place 2 slices, buttered side down, on work surface. Divide sausage, eggs and cheese evenly on both slices. Top with remaining slices, buttered side up. Heat the skillet over low heat. Add sandwiches and cover; cook, turning once with a spatula, until golden brown and the cheese has just melted, about 2-3 minutes per side. Slice and serve immediately.

3 slices cinnamon-swirl bread
1 tablespoon butter
2 tablespoons coconut milk
1 tablespoon Grand Marnier
2 tablespoons mascarpone cheese
1 tablespoon white chocolate (finely chopped)
1 teaspoon powdered sugar
2 tablespoons neufchatel cheese
1 tablespoon dried apricot (chopped)
1 teaspoon orange marmalade
1 teaspoon honey
1 pinch cinnamon

Steps:

  • Butter outsides of 2 of the pieces of cinnamon bread and set aside.
  • In a small bowl, mix together the coconut milk and grand marnier. Brush BOTH SIDES of 1 slice of bread (The one with no butter) with this mixture. Let soak while preparing the cheeses.
  • In a separate bowl, mix the chopped white chocolate with the mascarpone cheese and powdered sugar- set aside.
  • In another bowl mix the Neufchatel, honey, chopped dried apricots, marmalade and pinch of cinnamon.
  • Spread the first mixture (white chocolate/mascarpone)onto inside of 1 of the dry pieces of cinnamon bread and sandwich it together with the soaked piece.
  • Take the remaining dry piece of bread and spread the second mixture (neufchatel/apricot mixture)onto the inside- sandwiching it to the other side of the soaked piece. each cheese mixture will be sandwiching either side of the soaked piece.
  • Place sandwich into a non-stick skillet over medium heat. Let sit for 2 to 3 minutes or until cheese is starting to melt and bread is browning. flip and press firmly- cook an additional 3 min or until chocolate has melted and undersides of bread are browned. Flip one more time and press firm- let sit 30 sec. Remove from heat and let sit 2 minutes, slice diagonally and garnish with a light dusting of powdered sugar.
  • Enjoy!

18 flour tortillas
1 pound breakfast sausage
1/3 stick (about 2 1/2 tablespoons) salted butter
18 large eggs
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 tablespoon hot sauce, plus more for serving
1/4 of a 16-ounce jar jalapenos plus liquid from the jar, plus more jalapenos for serving
3 cups grated cheese
Salsa, for serving

Steps:

  • Wrap the flour tortillas in paper towels and microwave them for 1 minute to make them pliable. Set them aside.
  • Crumble the sausage finely into a large skillet over a medium heat and cook until brown, 5 to 6 minutes.
  • Add the butter to a large nonstick skillet over a medium heat. Beat the eggs in a large bowl with the salt and pepper. Stir in the hot sauce, jalapenos and a splash of jalapeno juice. When the butter has melted, turn the heat to low and pour in the eggs, then add the sausage. Slowly cook the mixture, using a wooden spatula to push it around the skillet, until the eggs are totally cooked through, 8 to 10 minutes.
  • Place approximately 1/2 cup of the egg and sausage mixture into a warm tortilla, then add a pinch of cheese and roll up (do not tuck in the ends). Wrap in a foil square and keep warm until ready to serve. Repeat with the remaining ingredients. Serve with more hot sauce, jalapenos and salsa.
