OLD-FASHIONED SWEET POTATO CASSEROLE
My family likes the marshmallow topping, but you can also vary it if you prefer a crunchier texture.

Steps:
- Place sweet potatoes in a large saucepan; cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender; drain. , Transfer to a large bowl and mash. Add the milk, brown sugar, butter, egg, cinnamon, vanilla, allspice, salt and nutmeg; beat until smooth., Transfer to a greased shallow 2-1/2-qt. baking dish. Bake, uncovered, at 350° for 40-45 minutes or until heated through. Top with marshmallows. Bake 5-10 minutes longer or just until marshmallows begin to puff and brown.

SUGAR-CRUSTED SWEET POTATO CASSEROLE
FLAVOR GALORE!!! This is a popular dish in my area and it is also my Aunt Catherine's recipe. The dish always comes back empty from a potluck! The crunchy goodness on top is what makes this casserole go over well. A great dish to have any time of the year.

Steps:
- Note for quick method of cooking sweet potatoes -- I put the sweet potatoes in a baking dish and add 1/4 cup of water. Put a lid on and microwave for approximately 20 minutes. After they have cooled, peel and mash.
- Mix all 8 ingredients for sweet potato mixture. Pour into a greased casserole dish. Bake in a 350 degree oven for 35 minutes and see below for crunchy topping.
- Mix all 4 ingredients for topping and sprinkle over potatoes. Bake for an additional 8 minutes and remove from oven.
- Enjoy!

- Mix the mixture ingredients together in a bowl; pour mixture into a greased 8" x 8" glass pan.
- Mix the topping ingredients into a loose mixture; this is best done by melting the butter and slowly stirring it into the brown sugar and flour mixture. Once it is mixed completely, sprinkle it on top of the mixture in the glass pan.

AUNT MARION'S SWEET POTATO CASSEROLE
This recipe belongs to my ex-husband's aunt (Aunt Marion). It was my favorite dish she prepared for every Christmas and Easter dinner. It wasn't right if this dish was missing from the meal! The Jack Daniel's Whiskey gives the casserole a nice taste but the alcohol cooks out it. I don't even like sweet potatoes but I love this...

Steps:
- 1. Pre-heat oven to 350 degrees. Trim ends off sweet potatoes and cut in half and boil in a pan of lightly salted water until tender. Allow to cool and slide off skins and mash until smooth and creamy.
- 2. Add butter, milk, cinnamon, and brown sugar into mashed sweet potatoes and Jack Daniels whiskey. Stir until well blended.
- 3. Pour mixture into a well-greased 13"x9" baking dish. Place into a pre-heated oven for 30 minutes or until bubbly.
- 4. Chop up pecans and place in a bowl. Mix in crushed cornflakes, brown sugar and softened butter. Mix until crumbly and sprinkle over the top of the potatoes. Put back into oven for 15 min. Cool and serve.
