Steps:
- Preheat oven to 425.
- Spray 12 muffin cups with nonfat cooking spray or line with paper baking cups.
- Combine pancake mix and cinnamon in medium bowl.
- Combine honey, egg, oil, milk and vanilla in small bowl with wire wisk; add to dry mixture. Mix just until dry ingredients are moistened.
- Fill muffin cups 3/4 full. Bake 15-18 minutes or until toothpick comes out clean (I baked 15 minutes and they were a little dry. Next time will check after 13 minutes).
- Cool 2 minutes in pan. Remove to cooling rack.

You want to make biscuits fast, but you discover that you're all out of biscuit mix (or flour...I'm guilty of this one)! Oh no! What can you do? You can grab your off-the-shelf pancake-and-waffle mix off the shelf, and get to work. That's what you can do!

Steps:
- Preheat oven to 450.
- Mix together pancake mix and sugar.
- Cut in shortening until mix resembles coarse cornmeal.
- Add milk, a little at a time, until a soft dough forms.
- Turn out on floured board (or wax paper) and knead about 10 times until dough is smooth and elastic.
- Let dough rest about 5 minutes.
- Roll out to 1/2 - 3/4 inch thick and cut with 2-1/4 inch biscuit cutter.
- Bake 8-12 minutes until done (keep an eye on them, they'll burn fast!).
AUNT JEMIMA DIXIE CORNBREAD
I found this from the Aunt Jemima Cornmeal website and I've used it several times. It's quite tasty, especially if you're not in the mood for sweet cornbread. :D Bacon drippings definitely MAKE this cornbread.

Steps:
- Preheat oven to 450°F
- Place shortening in 9-inch skillet with ovenproof handle or 8-inch square baking pan.
- Place in oven about 3 minutes. Skillet will be very hot when shortening is melted.
- While skillet is heating, in large bowl combine corn meal, flour, salt and baking soda; add buttermilk and egg, mixing well.
- Pour batter into hot prepared skillet.
- Bake 22 to 25 minutes or until surface cracks and edges are light golden brown and pull away from side of pan. Serve hot with butter.
