Steps:
- Seed and wash peppers in cold water and let them soak in cold water while you mix the following
- Mix softened cream cheese with ripe olives, chopped celery, pimentos, and pecans. Add enough Mayonnaise to help the cream cheese mix smoother. Too much Mayonnaise or thyme will take away from the cream cheese.
- Rinse peppers again with cold water and dry on paper towels
- Stuff or put cream cheese mixture into peppers. Cover with saran wrap(you can separate each layer of peppers with saran wrap). Place in refrigerator to chill for one hour or longer...really taste better if made day before.
STUFFED JALAPENO PEPPERS
Quite a spicy little treat, feel free to play with the stuffing mixture. *NOTE* I have never made a single batch of these, we always have to double or triple the recipe!

STUFFED JALAPENOS
If you love jalapenos, a Chili Grill is the perfect gadget for you. There are so many fillings you can use for stuffing these wonderful little peppers. This cornbread filling is one of my favorites. These are totally addicting.

Steps:
- Preheat grill to medium.
- Wash jalapeños and cut off tops.
- Using end of vegetable peeler, scrape out seeds and membrane (NOTE: wear plastic gloves to protect hands if you are sensitive to hot peppers).
- Poke a hole in the bottom of each pepper (so it can release moisture during cooking and so it won't force the cornbread filling to boil out of the top).
- Season inside of each pepper with a little salt or creole seasoning.
- Make cornbread mix according to directions on box adding cheese and liquid smoke.
- Fill peppers to within 1/4-inch to top of pepper leaving that space for cornbread to bake and rise.
- I use a pastry bag or a Zip style bag with the end cut off to fill the peppers.
- If your peppers are small they will shrink more as they cook so stick a toothpick through the tops of them to keep them from falling through the Chili Grill® holes.
- Place them all in the Chili Grill® holder and place on preheated grill (med heat).
- Close grill cover and let them cook for about 30 minutes checking them halfway through.
- (You might have to adjust the heat to low if they are browning too quickly).
- Peppers will look shriveled and cornbread will pop up over top of peppers when done.
- Enjoy!

Yield 10 Jalapeños, 3 serving(s)

Steps:
- cut a slit in each jalapeno pepper so that you can open it up. Remove the entire contents of the inside of the pepper. Leaving some of the placenta and seeds will result in a hotter pepper, so how much you clean on the inside is totally up to your taste. I recommend using disposable latex gloves while doing this, because failure to do so may result in unintended pains later -- particularly if you are a male :).
- Preheat oven to 375 degrees.
- Soften the cream cheese in the microwave for about 20 seconds.
- Place the cream cheese in a bowl.
- Add the ranch dressing powder and the grated cheese to the bowl with the cream cheese. MIx well.
- Fill the jalapenos with the creame/ranch/cheese mixture.
- Trim any excess fat from the bacon, preferably with kitchen scissors.
- Wrap all of the peppers with the bacon.
- Cook at 375 degrees for about 40 minutes. Keep an eye on them, because depending on the fat in the bacon, thickness of the bacon and so on, your time will vary. This can also be put on a grill -- it will take far less time but will demand your constant attention.
- Enjoy the best stuffed jalapeños you have ever had.
