Grandma's Pumpkin Bread is a moist pumpkin bread recipe that can be made plain, with nuts, raisins or chocolate chips. This easy to follow recipe gives options for one pumpkin loaf or two depending on whether or not you want to use an entire can of pumpkin.

1 cup canned pumpkin puree
1 1/2 cups sugar
1/2 cup vegetable oil
2 eggs
1 2/3 cup flour
1/4 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon allspice (optional)
1 cup chocolate chips
1/2 cup chopped nuts
1/2 cup raisins, soaked in 1/3 cup water (water drained and discarded)

Steps:

  • Preheat oven to 325 degrees F. Spray a 9 x 5 inch bread pan with nonstick cooking spray.
  • Combine pumpkin, sugar, oil and eggs and mix well.
  • Sift together flour, baking soda, baking powder, salt, cinnamon, nutmeg and allspice.
  • Add sifted, dry ingredients to wet ingredients. Mix until smooth.
  • Optional step: add in one or more of the optional additions. If adding raisins, be sure to drain off soaking water first.
  • Pour into prepared loaf pan.
  • Bake for approximately 1 hour or until a toothpick comes out clean.

This pumpkin bread is beautiful enough to give as a present--and it requires only three ingredients! The secret is in using pumpkin pie filling, which is already generously spiced and sweetened. Combine it with cake mix and you get a ton of flavor with very little effort.

1 cup canned pumpkin pie filling
2 large eggs, lightly beaten
One 15.25-ounce box spice cake mix

Steps:

  • Preheat the oven to 350°F. Line a 9-by-5-by-3-inch loaf pan with parchment paper (see Cook's Note), leaving a 2-inch overhang on the 2 longer sides.
  • Whisk together the pumpkin pie mix and eggs in a large bowl until smooth. Whisk in the spice cake mix until just combined and no lumps remain.
  • Transfer to the prepared loaf pan, smoothing out the top with a small offset spatula. Bake until deep golden brown and a toothpick inserted in the center comes out clean, about 45 minutes.
  • Transfer the pan to a wire rack to cool slightly, about 10 minutes. Use the parchment overhang to lift the pumpkin bread out of the pan and onto the wire rack to cool completely.

3 1/3 c all purpose flour
2 tsp baking soda
1 1/2 tsp salt
1 tsp cinnamon, ground
1 tsp nutmeg,ground
1/2 tsp ground gloves
1 tsp pumpkin pie spice
1/2 c chopped walnuts
3 c white sugar
1 c wesson oil
4 eggs
2 c pumpkin
1 tsp vanilla
2/3 c water

Steps:

  • 1. In a large mixer bowl, cream the sugar, oil, until well blended.
  • 2. In a another bowl mix the pumpkin, eggs, vanilla and water and blend well. Add to the sugar and oil mixture and mix well.
  • 3. In a separate bowl, mix the flour, salt, baking soda, cinnamon, nutmeg, cloves and pumpkin pie spice until well blended.
  • 4. Add this to the creamed mixture slowly blending well after each addition. Stir in the chopped walnuts.
  • 5. Pour the batter into a greased and floured loaf pan and bake in a 350 degree oven for 1 hour. Let the bread rest for 15 minutes before removing from the pan to a cooling rack.

Unsalted butter, for the pans
3 1/2 cups all-purpose flour, plus more for the pan (see Cook's Note)
3 cups sugar
1 cup vegetable oil
4 large eggs, lightly beaten
One 15-ounce can pure pumpkin puree
2 teaspoons fine salt
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon ground nutmeg
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
2/3 cup water

Steps:

  • Preheat oven to 350 degrees F. Butter and flour two 9-by-5-inch loaf pans.
  • Whisk together the sugar and oil in a large bowl until well combined. Whisk in the eggs and pumpkin until combined.

2/3 cup water
1 cup vegetable oil
2 cups pumpkin
3 1/2 cups flour
3 cups sugar

1 pinch clove
1 cup raisins (optional)
1 cup nuts

Steps:

  • Preheat oven to 350°F and grease two loaf pans.
  • Beat eggs, add oil, water, pumpkin; mix well.
  • Sift flour, then sift together with sugar, baking soda, salt, baking powder and spices.
  • Make a well in the center of the dry ingredients and add pumpkin mixture; stir well.

4 eggs
3 cups sugar
2 teaspoons baking soda
1 cup oil
1/2 teaspoon salt
1/3 cup water
1 teaspoon cinnamon
2 cups pumpkin (16 oz. can)
3 1/2 cups sifted flour
1 1/2 cups chopped walnuts or 1 1/2 cups pecans

Steps:

  • Beat 4 eggs gently with 3 cups of sugar.
  • Add 1 cup of oil, 1/3 cup of water and 2 cups which equals 1 - 16 oz. can of pumpkin.
  • Add 3½ cups of sifted flour, 2 tsps of baking soda, ½ teaspoons salt, and 1 teaspoons of cinnamon and mix thoroughly.
