Steps:
- Preheat the grill to high.
- Wash the potatoes, chop into 3cm chunks, then cook in a large pan of boiling salted water with the lid on for 12 minutes, or until tender.
- Meanwhile, put a shallow casserole pan on a high heat.
- Season the pork with sea salt and black pepper, then place in the pan with 1 tablespoon of olive oil and sear for 3 minutes, turning regularly, while you pick the sage leaves.
- Remove the pork to a plate, toss the sage leaves into the fat in the pan for just 5 seconds, then scoop on to a plate, leaving the pan off the heat to use again.
- Drain the spuds, tip into the casserole pan, grate over half the cheese, add 1 tablespoon of extra virgin olive oil and mash well, loosening with a splash of water, if needed.
- Taste, season to perfection, and spread out to the edges. Grate over the remaining cheese, sit the pork on top, then gratinate under the grill for 10 minutes.
- Lay the prosciutto around the pork in waves, sprinkle over the crispy sage, then grill for 2 more minutes, or until the pork is cooked to your liking.
- Rest for 2 minutes, then slice the pork and dish up.

- Preheat oven to 350 degrees F (175 degrees C).
- Place the sliced potatoes and sliced onion in a greased 9x13 inch baking dish; mix gently. Cover the potatoes and onions with cheese. Fill dish with milk halfway. Place butter in several places on top of the cheese. Place the pork chops on top. Salt and pepper to taste. Bake 60 minutes or until potatoes are tender. Turn pork chops over halfway through cooking.

- Preheat oven to 350°.
- Place dried potatoes into a greased 9x13" glass baking dish.
- Spread evenly to cover dish.
- Combine mushroom soup, one cup half-and-half, and the contents of one sauce mix package in a small mixing bowl.
- Pour mixture evenly over top of potatoes in baking dish.
- Sprinkle with 1 ½ teaspoons fresh, snipped chives.
- Top with green beans, then pork chops.
- Combine cheese soup, remaining half-and-half and the contents of the other remaining sauce packet.
- Pour mixture over top of pork chops and green beans.

CROCK POT SMOTHERED PORK CHOPS AND POTATOES

- Heat olive oil in a large skillet over high heat. Season pork chops with salt and pepper. Brown both sides of the pork chops (don't fully cook the pork chops - just a minute on both sides to get them brown.) Set aside pork chops.
- In a medium bowl, whisk together the cream of chicken soup with the heavy cream, milk and minced garlic (this is the sauce.) Set aside.
- Slice potatoes and chop onions. Note: You could slice the potatoes in half after slicing them lengthwise (into a half-moon shape) to make them more bite-sized if you like.
- Spread the sliced potatoes and the onions into the bottom of a 5 quart or larger oval slow cooker. Season with salt & pepper.
- Spread half the sauce mixture on top of the potatoes.
- Sprinkle one cup of shredded cheddar cheese on top.
- Place pork chops in a single layer on top of cheese.
- Spread the rest of the sauce mixture on top of the pork chops. Cover with remaining cheese.
- Cover slow cooker and cook on low for 4-6 hours. (It only took about 4 hours in my slow cooker)
- When done, sprinkle the top with sliced green onion.
- Then serve. Be sure to spread extra cream sauce on top!
