Coarse salt and freshly ground pepper
4 pounds jumbo asparagus, trimmed and bottoms peeled
1 large carrot, peeled and cut lengthwise into 1/8-inch strips
1/4 cup champagne vinegar
1 tablespoon Dijon mustard
2 tablespoons whole-grain mustard
3/4 cup extra-virgin olive oil

Steps:

  • Prepare an ice-water bath. Bring a large pot of salted water to a boil. Add asparagus; blanch until tender, 3 to 4 minutes. Transfer to ice bath; let cool, then drain on a paper towel-lined plate. Use 1-inch cookie or aspic cutters to shape carrot strips, then add to pot and blanch until crisp-tender, 1 to 2 minutes. Transfer to ice bath and let cool; drain on plate.
  • Whisk together vinegar and mustards; season with salt and pepper. Whisking continuously, add oil in a slow, steady stream.
  • Transfer asparagus to platter. Garnish with carrot cutouts. Serve, with vinaigrette on side.

ASPARAGUS WITH MUSTARD VINAIGRETTE

1.5 pounds asparagus, gently rubbed under cold running water, trimmed
2 Tablespoons vinegar (apple cider, red wine, or balsamic)
1 Tablespoon vegetable oil
1 Tablespoon mustard (Dijon or other)
1 teaspoon garlic powder
½ teaspoon dried basil
½ teaspoon dried oregano
⅛ teaspoon nutmeg (optional)

Steps:

  • Wash hands with soap and water.
  • Rinse produce.
  • In a large saucepan, bring 8 cups of water to a boil and cook asparagus for 3-4 minutes or until tender.
  • Strain asparagus and place in a bowl of cold water.
  • Mix vinegar, oil, mustard, garlic powder, basil, oregano, and nutmeg (optional) together in a separate bowl.
  • Strain asparagus again once cool and coat in the mustard vinaigrette dressing. Serve.
  • Store leftovers in a sealed container in the refrigerator for up to four days.

4 tablespoons soy sauce
2 tablespoons rice wine vinegar
1/2 tablespoon mustard
1 teaspoon grated lemon zest

  • Blanch asparagus in large quantity of salted water and refresh. Pat dry and cut stalks in to 1-inch sections.
  • In a bowl combine dashi, soy sauce, vinegar, mustard and lemon zest. Mix asparagus with dressing just before serving. Garnish with julienned lemon rind

1 1/2 cups vin santo (about 375 milliliters)
1 tablespoon lemon juice
1 tablespoon Dijon mustard
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/3 cup extra-virgin olive oil
1 bunch asparagus, bottom ends trimmed
6 leaves of Bibb lettuce
1 hard boiled egg, sliced
1/4 cup chopped toasted almonds

Steps:

  • In a small saucepan over medium heat, reduce the vin santo to 1/3 cup, about 10 minutes.
  • In a small bowl, combine the reduced vin santo, lemon juice, mustard, salt, and pepper. Whisk to combine, making sure the mustard is fully dissolved. While whisking slowly drizzle in the olive oil.
  • Bring a large pot of salted water to a boil over high heat. Add the asparagus. Cook until just tender, about 3 minutes. Transfer the asparagus to a bowl filled with ice water and let cool, about 3 minutes. Remove from water and pat dry with paper towels.
  • Place the lettuce leaves on a serving platter and top with the asparagus, then the slices of hard boiled egg and chopped almonds. Drizzle the entire platter with the vinaigrette. Serve immediately.

3/4 pound fresh asparagus, woody stems removed
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
1/2 teaspoon Dijon mustard
1/2 lemon, juiced
1 tablespoon olive oil

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large bowl toss the asparagus in the olive oil, and liberally season with salt and pepper. Spread the stalks out on a baking sheet, in a single layer, and roast until tender but still firm and moist, about 10 minutes.
  • Meanwhile, make the vinaigrette: In a small bowl, vigorously whisk together the mustard and lemon juice. Slowly drizzle in the olive oil, whisking quickly to emulsify the olive oil into the juice mixture. Season with salt and pepper, to taste.
  • Transfer the asparagus to a serving platter, toss with the vinaigrette and serve. The dish may be eaten warm or cold.

1 small bunch asparagus (12 ounces), cut into 1-inch pieces (2 cups)
Kosher salt and freshly ground pepper
1 cup shelled fresh or unthawed frozen peas
2 tablespoons heavy cream
1 tablespoon fresh lemon juice
1 tablespoon white-wine vinegar
1 tablespoon Dijon mustard
2 teaspoons nigella seeds
3 tablespoons extra-virgin olive oil
4 heads Little Gem lettuces, leaves separated

Steps:

  • Prepare an ice bath. Cook asparagus in a small pot of generously salted boiling water 1 minute. Add peas; cook 15 seconds more. Drain vegetables and transfer to ice bath until cold. Drain and pat dry.
  • In a jar with a resealable lid, combine cream, lemon juice, vinegar, mustard, nigella seeds, and oil; generously season with salt and pepper. Seal lid and shake vigorously until thick and creamy. Toss asparagus and peas with enough dressing to lightly coat.
  • Toss lettuce leaves with more dressing to lightly coat and arrange on a platter in a single layer. Top leaves evenly with asparagus mixture, and serve with remaining dressing alongside.

Light and healthy. This can be a great starter, nice side salad, toss on some chicken or grilled salmon or scallops and make this a main dish. Perfect for a Holiday meal and is so easy. Store bought bagged greens, a can of cannelloni beans, a simple vinaigrette which is made ahead and uses fresh lightly blanched asparagus. Easy and quick and so healthy. You will spend a little extra for the micro greens, but it is well worth it. I took this on a big platter for a pot luck and topped it with my smoked salmon and the dressing. It was gone in 10 minutes. It really is a nice salad.

2 cups asparagus (cut in 2-inch pieces on an angle, ends trimmed)
2 (15 ounce) cans cannellini beans, drained and rinsed (you can add more or less if you want)
3 cups arugula
2 cups micro greens (you can use any of your favorites, I usually just grab what looks fresh, pea shoots are one that I l)
1 small onion, cut in half and very thin sliced
1 cup pecorino romano cheese, grated (parmesan will work fine, NO green can please)
1 teaspoon fresh dill
1/2 cup olive oil
3 tablespoons champagne vinegar (this is the key to this salad for me, but a white wine vinegar will also work)
1/2 cup Dijon mustard
1 teaspoon lemon juice
1/2 teaspoon minced garlic
salt
pepper
lemon wedge
fresh sprig dill

Steps:

  • Asparagus -- In a small sauce pan, fill with about 1" or a bit less of water and salt and bring to a low boil. Add the asparagus and cook, just 2-3 minutes depending on it's thickness. Then immediately remove and add to a ice bath. Just a bowl of water with ice. This will stop the cooking and keep the asparagus a bright green color (call blanching). Just let them cool off in the ice bath for a minute then remove and let drain and dry.
  • Vinaigrette -- Just mix the vinegar, olive oil, mustard, garlic, lemon, sugar, salt, and pepper. I like to use a small tupperware and then I just shake it up. You can also mix it in a small measuring cup or bowl. Whatever is easier for you.
  • Salad -- In a small bowl, I like to add the beans (drained and rinsed), asparagus, dill, and just a couple of teaspoons of the vinaigrette (not too much) and toss well.
  • Greens -- On your serving platter, I add the arugula, micro greens, onion and a squeeze of one of the lemon wedges and another couple of spoons of the vinaigrette and toss lightly. Then top with the asparagus and bean mixture. Just lightly toss.
  • Top the whole thing with the pecorino romano, a sprig of dill and the lemon slices around the side.
  • Serve -- Grill some salmon or possibly chicken - slice and top the salad. Drizzle the vinaigrette over the top. This makes an amazing dinner.

There are, of course, a number of ways to prepare and serve asparagus, but this method, in which it is paired with a savory vinaigrette, is one of Martha's seasonal favorites.

Steps:

  • Prepare an ice-water bath; set aside. Bring a large pot of water to a boil. Add a generous amount of salt, and the asparagus. Return to a boil, and cook until asparagus are bright green and tender, about 3 minutes. Transfer to ice bath to cool. Drain well, pat dry, and transfer to a serving platter.
  • In a small bowl, whisk together mustard, vinegar, and sugar. Season with a pinch each of salt and pepper. Whisk in oil. Add lemon zest and tarragon; whisk to combine. Taste, and adjust for seasoning. Drizzle over asparagus. Serve immediately, or let stand at room temperature for up to 30 minutes before serving.
