1 lb asparagus spears
4 tablespoons gram flour
1 tablespoon oil
1 teaspoon carom seeds
1 tablespoon garlic (finely minced)
⅛ teaspoon hing (asafoetida, optional)
1 teaspoon kosher salt
1 teaspoon green chili (minced)
½ teaspoon ground cumin
½ teaspoon ground coriander
⅛ garam masala
½ lemon
cilantro for garnish

Steps:

  • Trim asparagus and discard the woody thick ends. Then cut into 1-inch pieces, if the asparagus is thick, slice it vertically down the middle to make thinner segments.
  • Preheat a medium skillet over medium heat. Dry roast gram flour for 5 minutes, breaking any lumps and stirring frequently. Take out the roasted flour and reserve.
  • Wipe the skillet with a dry towel and heat oil over medium heat. Add carom seeds, garlic, and hing and saute for 30 seconds to one minute or until aromatic.
  • Add the asparagus, salt, and green chili. Mix well and cook covered for 5 to 10 minutes on medium heat until the asparagus starts to get tender. Do not overcook as you want to have a crunchy bite.
  • Add cumin, coriander powder, and mix well. Sprinkle gram flour 1 tablespoon at a time, mixing well between each addition. Cook covered for 2 more minutes. Turn the heat off. Sprinkle garam masala, add a squeeze fresh lemon juice over the top and garnish with cilantro.

1/2 cup water
6 tablespoons unsalted butter

Steps:

  • Peel the lower part (root end) of the asparagus stalks with a vegetable peeler.
  • In a large nonreactive saucepan, bring the water to a boil. Add the asparagus in one layer, cover and cook over high heat for about 6 minutes, to the desired tenderness. Lift asparagus from the water (most of it should have evaporated) and arrange on a platter.
  • Meanwhile, heat the butter in a skillet until it is lightly browned and stops smoking. Sprinkle the asparagus with the salt and pepper, and pour the hot butter over it. Garnish with parsley, and serve immediately.

200 grams Asparagus , trimmed and halved
1 Red Bell pepper (Capsicum) , sliced
2 cloves Garlic , finely chopped
1/4 inch Ginger , peeled and grated

1 Bay leaf (tej patta)
1/4 teaspoon Cinnamon Powder (Dalchini)
3 tablespoons Balsamic Vinegar

1 sprig Mint Leaves (Pudina) , roughly chopped

Steps:

  • To begin making Asparagus with Paneer and Balsamic Butter Glaze, first chop vegetables in the desired cut for the recipe. Cut paneer into even size square pieces. Transfer to a bowl and keep aside until required. Trim and chop asparagus into halves. Once vegetables are chopped we can start cooking the dish.
  • Heat oil in a non-stick frying pan over medium heat. Add ginger, garlic, bay leaf and sauté for few seconds. No need to brown the ginger and garlic.
  • Add the butter along with brown sugar into the above onion garlic mixture. Stir until the butter melts completely and sugar is dissolved. Next add the balsamic vinegar, water, cinnamon powder and cook for about a minute.

2-1/2 cups sliced fresh mushrooms
3 cups cubed rotisserie chicken
SAUCE:
1/4 cup butter, cubed
1/4 cup all-purpose flour
1/4 teaspoon salt

1-1/2 cups 2% milk
6 slices Swiss cheese, halved
2/3 cup shredded part-skim mozzarella cheese

Steps:

  • In a large bowl, whisk the eggs, milk and butter. Combine flour and salt; add to egg mixture and mix well. Refrigerate for 1 hour., Heat a lightly greased 8-in. nonstick skillet over medium heat; pour 1/4 cup batter into center of skillet. Lift and tilt pan to coat bottom evenly. Cook until top appears dry; turn and cook 15-20 seconds longer. Remove to a wire rack. Repeat with remaining batter, greasing skillet as needed. 75g butter
½ lemon , zested and juiced
30g parmesan or vegetarian alternative, grated

Steps:

  • Trim about two thirds of the asparagus to get rid of any woody ends, then set aside. Peel the remaining into ribbons using a vegetable peeler and tip into a bowl.
  • Gently heat the butter, lemon zest and juice and lots of black pepper in a small saucepan. Stir in half the parmesan and keep warm.
  • Bring a large pan of salted water to the boil and cook the trimmed asparagus for about 2 mins until just cooked. Drain and tip into the bowl with the asparagus ribbons. Toss everything with the buttery sauce and the remaining parmesan. Season to taste, then serve.

  • Cook asparagus to your taste and drain, reserving liquid.

1 tablespoon lemon juice
2 tablespoons butter, cut in small pieces
Pinch of nutmeg

Steps:

  • Peel the asparagus, using a swivel-bladed knife, starting about 2 inches from the top. Remove the tough ends.
  • Bring enough water to a boil to cover the asparagus. Add salt and the asparagus and cook 2 to 3 minutes, until crisp tender. Drain well, reserving 3 tablespoons of the liquid. Arrange on warm platter.
  • Combine the shallots, lemon juice and reserved liquid in a small saucepan. Bring to a boil and cook over high heat until half the liquid evaporates. 2 Tablespoons olive oil, divided
1 shallot, diced (or 1/2 red onion, diced)
1 clove of garlic, minced
3 teaspoons green curry paste
3 Thai basil leaves**
1 pound (450g) green asparagus, divided and diced
1/2 cup (120 ml) coconut cream (creamy part of coconut milk)
Salt and pepper, to taste
1 lime, juiced
1/4 cup cashews, toasted
Black sesame (optional)
A few spoonfuls of coconut cream, for serving (optional)

Steps:

  • Heat olive oil in a medium skillet over medium heat. Once hot, add the shallot, garlic, and green curry paste. Cook for about 3 minutes, or until shallots are soft and tender.
  • Add half of the asparagus (keep the ones with the head for later) to the skillet and cook for 5 minutes, stirring regularly to prevent sticking.
  • Pour in the coconut milk, basil leaves, salt and pepper. Cover and let simmer over medium heat fo 5 to 10 minutes, or until the asparagus are soft but still green in color.
  • Remove Thai basil leaves, then transfer asparagus to a blender, and blend on high speed until smooth and creamy. Add lime juice and give a good stir. If too thick, add a little bit water or coconut milk, one Tablespoon at a time.
  • Wipe the skillet, then heat the remaining olive oil. Once hot, add the remaining half of asparagus and sauté on medium heat until tender, stirring often. Season with salt and pepper.
  • Cook pasta according to package instructions. Drain and serve with the Thai green curry sauce. Add asparagus heads on top, sprinkle with toasted cashews, and enjoy!

2 lb large sea scallops, tough ligament removed from side of each if attached

2 teaspoons white-wine vinegar
1/2 stick (1/4 cup) unsalted butter, cut into tablespoon pieces

Steps:

  • Trim asparagus, then cut stems into 1/4-inch-thick diagonal slices, leaving tips whole.
  • Heat 1 tablespoon oil in a 12-inch heavy nonstick skillet over moderately high heat until hot but not smoking, then sauté asparagus, stirring occasionally, until just tender, 5 to 6 minutes. Transfer with a slotted spoon to a plate, reserving skillet off heat (do not clean).
  • Pat scallops dry and sprinkle with pepper and 1/2 teaspoon salt. Add 1 tablespoon oil to skillet and heat over moderately high heat until hot but not smoking, then sauté half of scallops, turning over once, until browned and just cooked through, 4 to 6 minutes total. Transfer scallops with tongs to another plate as cooked.

1 teaspoon curry powder
1 teaspoon poppy seeds
1 teaspoon kosher salt, plus additional as needed
1 1/2 sticks (12 tablespoons) unsalted butter, cubed and chilled
3 to 4 tablespoons ice water
2 tablespoons extra-virgin olive oil
1 bunch (about 12 ounces) "pencil" asparagus, ends trimmed
Kosher salt and freshly ground black pepper
Unsalted butter or nonstick cooking spray, for the pie dish
1/2 pound (8 ounces) cream cheese, softened
4 large eggs, lightly beaten
1 cup heavy cream
2 teaspoons Worcestershire sauce
1 teaspoon hot sauce, preferably Tabasco

Steps:

  • For the dough: Pulse the flour, curry powder, poppy seeds and salt in a food processor. Pulse in the butter until it turns to loose crumbs. (Do not overmix.) Add 2 to 3 tablespoons ice water through the top and pulse until the dough comes together and forms a loose ball, adding additional ice water as needed. Remove the dough and form it into a disc. Wrap in plastic and refrigerate for at least 20 minutes.
  • For the batter: Heat a 12-inch skillet over medium heat and add the olive oil. Once the oil is hot and begins to smoke lightly, add the asparagus and cook over high heat until the excess water is cooked out and the stems are softened slightly, 3 to 4 minutes. Season with salt. Remove from the skillet and arrange in a single layer on a kitchen towel to drain and cool.
  • Place a baking sheet in the center of the oven and preheat to 350 degrees F. Grease a 9-inch pie dish with butter or nonstick cooking spray.
  • Turn the dough onto a floured surface. Roll the dough into an 11- to 12-inch round. Roll the dough up around the rolling pin and roll it back over the pie dish. Press it gently into the bottom and up the sides. (Ideally, there should be about an inch of excess dough hanging over the sides.) Pinch the dough up to create a crimped top edge. Line the dough with a piece of parchment paper, then fill it with pie weights or dry beans and bake until light brown, 18 to 20 minutes. Remove the parchment and weights and cool at least 15 minutes.
  • Whisk the cream cheese with the eggs in a large bowl until smooth. Whisk in the heavy cream, Worcestershire, hot sauce, nutmeg and black pepper to taste. Line the asparagus up in piles of 5 to 6 at a time. Cut three-quarters of each asparagus into 1-inch slices, leaving the pretty tips separated and intact. Fill the quiche shell with the batter and the 1-inch pieces of asparagus stems. (Reserve the tips for later.) Place the quiche carefully on the baking sheet in the oven and bake until the batter sets and browns on top, 20 to 25 minutes. Remove from the oven and place the reserved asparagus tips on top, then sprinkle with an even layer of the Parmesan. Place back in the oven until the top browns slightly, an additional 5 to 8 minutes. Cool at least 20 minutes, then cut and serve.

1 lb asparagus, ends trimmed and cut into 1-inch pieces

Steps:

  • Combine butter, curry powder, lemon juice and salt in a small bowl, creating a curry butter.
  • Heat oil in a large nonstick skillet over medium heat. Add shallot and cook, stirring, until softened, about 2 minutes.
  • Add asparagus and cook, stirring, until just tender, 3 to 5 minutes.
  • Stir the curry butter into the asparagus; toss to coat and serve.

1 pound fresh asparagus

Steps:

  • Heat the olive oil in a medium saucepan, add the onion, and cook until the onion softens, about 4 minutes. Add the rice and toast the grains, stirring occasionally, until the rice begins to look opaque (bright white), about 4 minutes. Add the water, butter, lemon slice, and lemon zest, reduce the heat to low, cover, and simmer for 25 minutes.
  • Meanwhile, slice off the tough ends of the asparagus stalks and discard them. Cut the spears on a diagonal into 1-inch lengths. Fill a large non-reactive pot with a steamer rack with 1/2 inch water, place the pot over medium heat, and bring the water to a simmer. Add the asparagus, cover, and cook until just tender, 4 to 5 minutes.
  • Transfer the cooked rice to a serving bowl and toss in the asparagus. Season with salt and pepper and serve.
