Steps:
- Cook the pasta according to the package directions; drain the pasta and return it to the pot.
- Meanwhile, heat the oil in a medium skillet over medium heat. Add the pine nuts and garlic and cook, stirring frequently, until golden, 1 to 2 minutes. Add the asparagus and cook, tossing occasionally, until just tender, 2 to 3 minutes.
- Add the asparagus mixture to the pasta along with 1 teaspoon salt and ¼ teaspoon pepper and toss to combine. Sprinkle with the Parmesan before serving.

- Preheat a grill to medium-high heat. Place a cooling rack upside down on the grill.
- Toss the asparagus with 1/3 cup of the olive oil and some salt and pepper. Grill the asparagus, turning often to ensure even charring, about 5 minutes.
- Add the Pecorino-Romano, lemon zest and juice and some salt and pepper to a bowl and mix to combine. Slowly whisk in the remaining 1/3 cup olive oil to form an emulsion.
- Arrange the asparagus on a serving plater. Drizzle with the dressing and garnish with the pine nuts and more Pecorino.

In this recipe video, I show you how to make a simple, yet "fancy", asparagus dish with the addition of a little bacon and some toasted pine nuts. Pork and asparagus are a natural combination - think about those prosciutto wrapped asparagus spears; and it lends this grassy, fresh tasty vegetable a salty, meaty quality. Then the pine nuts layer in another texture element and bring their own...nutty I guess...flavor to the table. With the inclusion of bacon in this dish, I prefer it with the lighter main courses, like fish or chicken. The bacon just feels a bit excessive if you've also got a steak on the plate. - Asparagus is one of my favorite spring time vegetables. And while it is available all year long, flown in from far away points, in the spring, when local and fresh, it's crazy good. I know that asparagus brings some challenges with wine pairings, but as a food pairing it's near the top of the list. It goes great with seafood, chicken, pork and beef, and it's great prepared simply or with some extras. In this recipe video, I use a few of those "extras" to jazz the asparagus up a bit. Bacon is a naturally combination (you may have seen prosciutto wrapped asparagus spears); and the pine nuts add a texture and nutty quality that I love. Hope you enjoy it. Recipe Overview & Keys to Success There isn't much to this recipe, just be careful of the following: Don't overcook the asparagus. It becomes soggy and limp, and even a bit bitter/sulfuric tasting when overdone. Try blanching the spears so that you get them just tender Make sure you crisp up the bacon on it's own. Making bacon lardons is easy, but they need to be cooked alone in the pan - once you add the asparagus the moisture will start making them soggy; so add them at just the last month I like to toast the pine nuts. Toasting them gives them a richer flavor, and crispier texture Make sure you season properly - after tasting. Remember the bacon is salty so factor that into your final seasoning Ingredients for Asparagus with Bacon & Pine Nuts (for 2) 1 piece of thick slice bacon cut into lardons 6 - 8 spears of asparagus 1 - 2 tablespoons of toasted pine nuts 1 lemon (for the juice) Asparagus with Bacon & Pine Nuts Blanch and shock the asparagus; set aside in a cool place In the video, I cut the asparagus into bit size pieces as I like to match small pieces of bacon, to small pine nuts, to small asparagus; but you can leave whole if you like Add the bacon to a sauté pan and cook until crisp Add the blanched asparagus and sauté over high heat until they are up to temperature Add the toasted pine nuts, and a small squeeze of lemon juice Toss, taste, and season with salt and pepper as needed It's a simple as that and you have a great vegetable side dish. - Melt butter in the same skillet.

- Preheat oven to 350 degrees.
- Spread pine nuts in a small baking pan and toast in the oven until golden and fragrant, 7 to 10 minutes.
- Transfer to a small bowl to cool.
- Increase oven temperature to 450 degrees.
- Snap off the tough ends of asparagus.
- Toss the asparagus with shallot, oil, 1/8 teaspoon salt and pepper.
- Spread in a single layer on a large baking sheet with sides.
- Roast, turning twice, until the asparagus is tender and browned, 10 to 15 minutes.
- Meanwhile, bring vinegar and the remaining 1/8 teaspoon salt to a simmer in a small skillet over medium-high heat.
- Reduce heat to medium-low and simmer, swirling the pan occasionally, until slightly syrupy and reduced to 1 tablespoon, about 5 minutes.

- Preheat the oven to 400 degrees F.
- If the stalks of the asparagus are thick, peel the bottom 1/2 of each. Lay them in a single layer on a sheet pan and drizzle with olive oil. Sprinkle with salt and pepper. Roast for 15 to 20 minutes, until tender. Sprinkle with the Parmesan and return to the oven for another minute. Serve with lemon wedges.
