OVERNIGHT ASPARAGUS MUSHROOM STRATA

This recipe of my mom's is a colorful make-ahead dish that makes brunch a breeze! Substitute the asparagus with other veggies such as broccoli or zucchini, or add a cup of cooked diced ham or sausage for a non-vegetarian twist.

2 teaspoons butter, or as needed
1 ¾ cups sliced crimini mushrooms
5 English muffins, split and toasted
1 cup shredded Colby-Monterey Jack cheese
1 pound fresh asparagus, trimmed and cut into 1-inch pieces
½ cup chopped red bell pepper
½ onion, finely chopped
8 eggs
2 cups milk
1 teaspoon salt
1 teaspoon dry mustard powder
¼ teaspoon ground black pepper
1 cup shredded Colby-Monterey Jack cheese

Steps:

  • Melt the butter in a skillet over medium heat, and cook and stir the mushrooms until their liquid has mostly evaporated and the mushrooms are beginning to brown, about 10 minutes. Set the mushrooms aside.
  • Grease a 9x13 inch baking dish, and arrange 8 muffin halves, cut sides up, in the bottom of the dish. Stuff pieces of remaining muffins into the spaces between the halves. Spread 1 cup of Colby-Monterey Jack cheese over the muffins in a layer, and distribute the asparagus pieces, mushrooms, red pepper, and onion over the cheese.
  • Whisk together eggs, milk, salt, dry mustard, and black pepper in a bowl, and pour the egg mixture over the muffins and vegetables. Cover the dish, and refrigerate overnight.
  • The next day, preheat oven to 375 degrees F (190 degrees C).
  • Remove the casserole from the refrigerator and let stand for 30 minutes. Spread 1 cup of Colby-Monterey Jack cheese in a layer over the casserole.
  • Bake in the preheated oven until a knife inserted near the edge comes out clean, 40 to 45 minutes. Let stand 5 to 10 minutes before cutting into squares.

1 tablespoon unsalted butter
6 medium scallions, ends trimmed and thinly sliced (about 1 cup)
8 ounces asparagus, trimmed and cut into 1-inch pieces (about 2 cups)
6 large eggs
1 1/2 cups half-and-half
1 teaspoon kosher salt
1/2 teaspoon cumin
1/4 teaspoon ground black pepper
1/2 pound loaf ciabatta or French bread, sliced 3/4-inch thick
1 1/2 cups shredded Jack cheese (about 4 ounces)
1/2 cup pickled jalapenos, rinsed and coarsely chopped
1/2 cup chopped fresh cilantro leaves, plus more for garnish
Sour cream, for garnish
Avocado, for garnish

Steps:

  • Butter 8-by-8-inch baking dish and set aside. Heat butter over medium heat. When it foams, add scallions, and cook until just softened, about 1 minute. Add asparagus and cook until bright green and beginning to soften, about 2 minutes; remove from heat.
  • Whisk eggs, half-and-half, salt, cumin, and pepper in a large bowl until evenly combined. Arrange half of the bread in bottom of prepared dish. Sprinkle with 1/2 cup of the cheese and half each of jalapenos, cilantro, and asparagus mixture. Pour over half of egg mixture. Repeat layering with remaining bread, another 1/2 cup of the cheese, and remaining chilies, cilantro and asparagus mixture. Pour remaining egg mixture over top.
  • Sprinkle strata with another 1/4 cup of the cheese and push to ensure bread is submerged in egg custard. Cover with plastic wrap, put a plate and a 1-pound weight on top (a large can of tomatoes or rice in a re-sealable plastic bag works well), place in refrigerator for 1 to 12 hours.
  • When ready to bake, heat oven to 325 degrees F and arrange rack in the middle. Let strata sit at room temperature while oven heats, at least 20 minutes.
  • Sprinkle strata with remaining 1/4 cup of the cheese and bake until puffed and edges pull away slightly, about 40 to 45 minutes. Cool for at least 5 minutes before serving. Serve with some cilantro, sour cream, and avocado, as desired.

Asparagus, Egg, and Cheese Strata image

This asparagus, egg and cheese strata, made with eggs, Fontina, asparagus, and proscuitto, can be put together ahead of time or last minute.

Butter for the baking dish
4 thick slices (4 1/2 oz) artisan bread, preferably hearty whole grain or multigrain
2 large eggs, lightly beaten
1 cup whole milk
8 ounces (about 1 cup) grated Fontina cheese
Sea salt and freshly ground black pepper
6 to 8 asparagus stalks
4 thin slices prosciutto or mortadella, thinly sliced (optional)
1 tablespoon finely snipped chives (optional)

Steps:

  • Preheat the oven to 350˚F (176˚C). Butter a smallish, 4-cup ovenproof baking dish.
  • Trim the crusts from the bread and toss them to the birds or in the compost. Place the slices of bread in the baking dish, overlapping the slices slightly and, if necessary, allowing the edges to hang over the side of the dish just a little.
  • Whisk together the eggs and milk. Stir in half of the cheese and season with salt and pepper. Pour 3/4 of the egg mixture over the bread and set the rest of the egg mixture aside.
  • Break off the stem ends of the asparagus where each one snaps naturally. Cut the spears into 1 1/2-inch lengths.
  • Layer the prosciutto or mortadella, if using, on the bread. Place the asparagus spears on top and pour the remaining egg mixture over the asparagus. Sprinkle with the rest of the cheese. At this point, if you have the time, we strongly encourage you to cover the strata with plastic wrap and refrigerate it overnight to allow the bread to soak up the egg mixture and so the flavors can meld.
  • Bake the strata until set, 30 to 35 minutes. (If you refrigerated the strata overnight and are baking it straight from the fridge, you may need to allow a few extra minutes baking time.)
  • Let the strata cool slightly. Grind a little pepper over the top, if you please, and sprinkle with chives, if using. Plonk the baking dish on the table and scoop the strata straight from it onto plates. Originally published March 26, 2012.

2 large eggs, lightly beaten
1 cup/240 ml whole milk
8 oz/225 g grated Fontina cheese {about 1 cup}
Sea salt
Freshly ground black pepper
6 to 8 asparagus stalks
4 thin slices mortadella or prosciutto {optional}
1 tbsp finely snipped chives

Steps:

  • Preheat the oven to 350°F/180°C/gas 4. Butter a small 4-cup/960-ml ovenproof baking dish.
  • Remove the crusts from the bread and cut into slices; you should have about 3 cups. Lay the slices across the baking dish, slightly overlapping and allowing some edges to hang over the sides.
  • Whisk together the eggs and milk in a large bowl. Stir in half of the cheese and season with salt and pepper. Pour three-fourths of the egg mixture over the bread cubes.
  • Peel the bottom half of the asparagus and break off the stem ends where it snaps naturally. Discard any woody stems.
  • Layer the mortadella over the bread and top with asparagus spears. Pour the remaining egg mixture over the top and finish with the remaining cheese. 4 slice bacon, uncooked
1/2 c onions, vidalia, peeled
2 c asparagus, fresh
cooking spray

  • 1. Heat oil in a large ovenproof Cast Iron skillet over medium heat.
  • 2. Add bacon and cook, stirring, until golden brown, about 4 minutes. Add onion and asparagus; sauté until vegetable are soft, about 3 to 5 minutes. Remove vegetables from pan and set aside.
  • 3. Preheat broiler. Off heat, coat same skillet with cooking spray. Arrange bread slices tightly in bottom of skillet. Grandma knew how to make a hearty meal out of leftover bits of bread and cheese. This recipe is meant for riffing, so use any type of cheese, leafy greens, meat or bread you happen to have on hand.

1 sheet frozen puff pastry (about 1/2 pound), thawed
All-purpose flour, for dusting
1 cup grated fontina cheese (about 3 ounces)
1 cup grated comte or gruyere cheese (about 3 ounces)
1 tablespoon minced shallot
2 large egg yolks
3 tablespoons whole milk
1/8 teaspoon freshly grated nutmeg
Kosher salt and freshly ground pepper
2 teaspoons extra-virgin olive oil
1/2 teaspoon finely grated lemon zest

Steps:

  • Fill a large bowl with ice water. Bring about 1 inch of water to a boil in a large skillet. Add the asparagus; cook until bright green and crisp-tender, 2 to 5 minutes, depending on the thickness of the asparagus. Drain and transfer to the ice water to stop the cooking; drain and pat dry. Preheat the oven to 400 degrees F.
  • Roll out the puff pastry into a 10-by-16-inch rectangle on a floured surface. Transfer to a parchment-lined baking sheet and prick all over with a fork. Bake until light golden brown, about 12 minutes. Let cool slightly on the baking sheet.
  • Meanwhile, mix the fontina, comte, shallot, egg yolks, milk, nutmeg and a pinch each of salt and pepper in a bowl until combined. Spread the cheese mixture evenly over the puff pastry, leaving a 1-inch border on all sides. Toss the asparagus with the olive oil, 1/4 teaspoon salt, and pepper to taste. 1 lb asparagus, frozen or fresh
8 oz mushrooms sliced
2 Tbsp butter
5 to 6 english muffins toated and cubed
7 eggs
3 c milk
1 tsp dry mustard
1 tsp salt and pepper ( may have used more pepper, we like pepper)
2 c sharp cheddar cheese, shredded
1 c italian blend cheese, shredded

Steps:

  • 1. Blanch asparagus in boiling water, saute mushrooms in butter. After the asparagus is blanched cut into 1 and 1/2 in pieces.
  • 2. Beat eggs then add milk, mustard and salt & pepper in large bowl
  • 3. mix cheeses together
  • 4. I used my broiler to toast my muffins to save time, cube muffins and place in a 9x13 greased baking dish add half the cheese then the asparagus and mushrooms add the other half of cheese and pour egg mixture over all, slowly.
  • 5. cover and place in the frig over night or at least 5 hours. Bake at 350 for 40 to 60 minutes.

1 cup egg substitute or 4 eggs
1/4 cup fat free sour cream
1 1/4 cups skim milk
2 tablespoons onions, finely chopped
1 tablespoon Dijon mustard
1/8 teaspoon black pepper

Steps:

  • In a greased 2-quart baking dish spread half the muffin pieces.
  • Top with ham, asparagus, and cheese.
  • top with remaining muffin pieces.
  • In bowl whisk together eggs and sour cream.
  • Stir in milk, onion, mustard, and black pepper.

  • Cover, chill for 2 to 24 hours.

1 loaf sourdough bread, thinly sliced with crust removed (16-ounce)
1 lb asparagus, blanched and slivered
3/4 lb Fontina cheese, grated
1/2 cup chopped sun-dried tomato packed in oil, drained,sliced or chopped
3 tablespoons dried chives
1 cup pine nuts, toasted
12 eggs, beaten
3 cups milk
2 cloves garlic, minced
salt and pepper

Steps:

  • Grease the bottom of a large casserole dish (13X9 works well).
  • Place a single layer of bread in the pan, using 1/2 the bread.
  • Cover with 1/2 asparagus, cheese, tomatoes, chives and pine nuts.
  • Repeat layers, starting with bread.
  • In a large bowl, combine eggs, milk, garlic, salt and pepper.
  • Pour evenly over layers.

Steps:

  • In a large bowl, beat the milk, egg substitute, mustard and basil. Gently stir in remaining ingredients. , Pour into a 13x9-in. baking dish coated with cooking spray. Cover and refrigerate 8 hours or overnight. , Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 1 hour or until a knife inserted in the center comes out clean. Let stand 5 minutes before cutting.

To cut down on brunch stress, prepare this easy strata recipe the night before, then bake in the morning. Serve with fresh fruit--and a batch of mimosas, if you like.

8 ounce asparagus spears, trimmed and cut into 2-inch pieces
5 cup French bread cubes
2 cup shredded Gruyére or white cheddar cheese, (8 oz.)
0.5 cup chopped onion
0.25 cup chopped chives or green onions
8 ounce cooked ham, diced
10 eggs
1.5 cup milk

Steps:

  • Bring a large pot of salted water to boiling. Add asparagus; cook 5 minutes or until bright green.
  • In a greased 3-quart baking dish spread half the bread cubes. Top with cheese, onion, chives and half the ham and asparagus. Top with remaining bread.
  • In a bowl whisk together four of the eggs and the milk. Evenly pour over layers in dish. Press down bread pieces into the egg milk mixture with the back of a spoon. Top with remaining ham and asparagus. Cover with plastic wrap, then chill for two hours.
  • Bake, uncovered, in a 325 degrees F oven 30 minutes. With the back of a wooden spoon, press 6 indentations in top of strata. Pour a whole egg into each indentation. Bake 20 to 25 minutes more or until an instant-read thermometer inserted in center of strata registers 170 degrees F and eggs are set. Let stand 15 minutes.
  • Cut into squares to serve. If desired, drizzle lightly with olive oil and sprinkle with salt and cracked black pepper. Makes 6 to 8 servings.

2 cups cubed cooked ham or 2 cups chicken (10-ounces)
2 cups fresh cooked asparagus or 2 cups broccoli
4 ounces process swiss cheese, torn or 4 ounces gruyere cheese, cut up
4 beaten eggs
1/4 cup sour cream
1 1/4 cups milk
2 tablespoons finely chopped onions
1 tablespoon dijon-style mustard
pepper (Salt if using chicken)

Steps:

  • In a greased 2-quart square baking dish spread half of the English muffin pieces.
  • Top with ham, asparagus, and cheese.
  • Top with the remaining English muffins pieces.
  • In a bowl whisk together eggs and sour cream, Stir in milk onion, mustard, and 1/8 teaspoon black pepper.
  • (If using chicken add salt.) Pour evenly over layers in dish.
  • Cover and chill 2 to 24 hours.
  • Bake, uncovered, in a 325 degree oven for 60 to 65 minutes or until internal temperature registers 170 degrees on an instant thermometer.

1/3 c. Chopped Shallots
10 Eggs
4 c. Whole Milk
1 tsp. Dry Mustard
1 tsp. Kosher Salt
1/2 tsp. Freshly Ground Black Pepper
1 c. Grated Gruyere Cheese
1 c. Grated Cheddar Cheese
1/4 c. Fresh Italian Parsley
6 c. (Lightly Packed) Torn French Bread

Steps:

  • Grease a 9x13 pan. Chop bacon into 1 1/2 inch pieces. Cook until crispy. Set aside on paper towels and pat to remove excess grease. Pour all but a couple of tablespoons of the bacon grease out of the pan. Cook shallots in remaining fat until softened. Set aside. Whisk eggs for 1-2 minutes. Whisk in milk, mustard, salt, and pepper. Stir in reserved bacon, shallots, cheese, and parsley. Fold in the torn bread. Pour into the prepared pan and cover with foil. Refrigerate for at least 6 hours, up to 24. Preheat oven to 350ºF. Bake strata for 1 hour and 10 minutes, or until golden, puffed, and set in the center. Remove from oven and let rest for 5 minutes before serving. (The strata will deflate as is rests.) Scoop portions with a large spoon rather than trying to cut into squares.

Perfect after a late night with friends/ overnight guests. Almost any vegetables and coked meats can be used, ie. sausage and red peppers, broccoli and ham, etc. (just be sure to pre-cook any meats!) 2 1/2 cups whole milk
1/2 cup whipping cream
2 cups green onions, sliced
1/2 cup romano cheese, finely grated
2 tablespoons fresh oregano, finely chopped
1/2 teaspoon salt
1/2 cup butter, softened
1 lb fresh asparagus, trimmed
4 -5 roma tomatoes, sliced
1 lb loaf French bread, rustic style, cut into 1/2 inch slices
2 cups Fontina cheese, coarsely grated and loosely packed

Steps:

  • Heat oven to 350°F Butter a 13x9 baking dish.
  • Cook Asparagus in salted, boiling water just until crisp-tender. Drain.
  • Whisk together first 7 ingredients, then sprinkle generously with pepper.
  • Butter both sides of each slice of bread. Arrange half of the slices in the bottom of the prepared baking dish. Pour half of the egg mixture over slices.
  • Top with half the fontina cheese, half the asparagus and sliced tomatoes.
  • Repeat layering. Sprinkle tomatoes on top with a bit more oregano and pepper. Let sstand at least 20 minutes before baking, occasionally pressing bread down to submerge. * can sit overnight in fridge, covered.

8 stalks asparagus, peeled and cut diagonally into 1-inch pieces
1 1/2 cups shredded jarlsberg cheese
1/4 cup chopped fresh cilantro or 1/4 cup parsley (optional)
6 large eggs
1 1/2 cups low-fat milk
1/4 teaspoon salt
1 (8 ounce) container sour cream

Steps:

  • Grease a 9-inch square baking dish.
  • In a large bowl, stir together bread cubes, asparagus, 1 cup shredded cheese and the cilantro or parsley, if using.
  • In a small bowl, beat together eggs, milk and salt.
  • Add to bread cube mixture and stir to combine.
  • Transfer to greased baking dish; top with remaining 1/2 cup cheese.
  • Wrap tightly and refrigerate until ready to bake--several hours or overnight.
  • Preheat oven to 350 degrees.
