Asparagus-Spinach Dip (Vegan) image

1 tablespoon olive oil
4 garlic cloves, sliced
1 lb asparagus (woody ends snapped off and cut into 2-inch pieces)
1 lb spinach, coarsely chopped
1/3 cup water
1 cup raw cashews
1 -3 tablespoon capers with brine
salt
fresh ground black pepper
1 tablespoon fresh lemon juice

Steps:

  • Preheat a large pan over medium heat (I use my big soup pot so I can fit all the spinach in at once). Saute the garlic in the oil for about a minute or until fragrant.
  • Add the asparagus and water, cover, and bring to a boil. Reduce heat to medium or medium-high and let simmer for about 5 minutes, until the asparagus is bright green.
  • Add the spinach (in batches if necessary, covering the pan and letting the leaves wilt so there's room for more). Once all the spinach has wilted (about 3 minutes), cook uncovered for about 5 minutes.
  • Meanwhile, put the cashew, capers, salt, and pepper in a food processor, and blend until cashews are small, coarse crumbs. Scrape down the sides to make sure you get everything.
  • When the spinach is cooked, add the veggies to the food processor, making sure to include all the garlic and any remaining liquid. Puree until relatively smooth. Add the lemon juice and adjust the seasonings if necessary.
  • Transfer to a container with a lid and refrigerate for a few hours. Serve with crackers, pretzel sticks, crudites, bread, etc. The sky's the limit. I think it would even make a good sauce for pasta.

This is a major crowd pleaser! And nobody would guess it's vegan! My meat loving friends thought this was amazing. And you feel really good eating it! Creamy, fresh, well-seasoned.

12 ounces frozen spinach
2 (12 ounce) cans artichoke hearts, chopped fine
1 onion, chopped fine
3/4 cup nutritional yeast
6 garlic cloves
1 (12 ounce) can white beans
5 tablespoons apple cider vinegar
3 tablespoons vegan mayonnaise
1 1/2 cups vegetable broth
1 tablespoon salt
1 tablespoon ground pepper
1 teaspoon dried basil
1 dash cayenne

Steps:

  • 1. Preheat oven to 350.
  • 2. Sautee finely chopped onion and garlic for 3 minutes until starting to brown. Add in spinach, and artichokes and sautee for about 6 minutes or until well combined and tender (You may want to food process this depending on your desired texture).
  • 3. In a food processor or blender add white beans, veganaise, vegetable broth, nutritional yeast, ACV, and spices until creamy.
  • 4. Combine all ingredients in a baking dish and bake for 20 minutes until hot.
  • Add extra vegetable broth during cooking to give it a silky, bubbling texture.
  • (this batch is for a large party, make 1/2 if under 10 people).

"SOUR CREAM" AVOCADO DIP (VEGAN)



I made this up when I had an avocado that was getting too ripe and some leftover cilantro. It's good with chips or cut-up veggies, as a topping for mexican food or baked potatoes, etc. Totally vegan and even my husband liked it.

1 (12 ounce) box soft silken tofu
1 large very ripe avocado
1/2 cup bottled chunky salsa (I used Trader Joe's Garlic Salsa)
1/4 cup chopped fresh cilantro
1 tablespoon lime juice or 1 tablespoon lemon juice
1/8 teaspoon hot sauce (I used the Chipotle Tabasco)
salt and pepper, to taste

Steps:

  • Peel and pit avocado, put in a LARGE mixing bowl (dip is a bit splattery when blending).
  • Add entire block of tofu and salsa.
  • Combine ingredients using a hand mixer on medium speed for about 1 minute or until the mixture becomes smooth.
  • Add remaining ingredients, mix on low speed until all ingredients are blended together.
  • Chill for one hour and serve.
  • Store leftovers in the fridge in an air-tight container.

Really Good Vegan Spinach Tofu Dip (Even if You Hate Tofu/Vegan image

The olives really make this dip - don't omit them! :) I'm a diehard carnivore, but I was going to a potluck and wanted to bring a cheap, egg-free, dairy-free dish in case there were allergies or vegetarians there. I took about six recipes off the Internet, combined them and added a few more things, and it was great! I let it sit in the fridge for two days and just re-mixed it before serving. At the potluck, there was not a single vegetarian there, and they all liked this dip. Cayenne and grated carrot would probably be great in this and make it a more "traditional" spinach dip. You may want to start with less garlic if you're not a big fan.

1 (3/4 lb) package tofu
3 tablespoons olive oil
1 (10 ounce) package frozen chopped spinach
1/2 teaspoon black pepper
2 tablespoons vegetable bouillon granules
2 teaspoons dried basil, crumbled
2 teaspoons garlic powder
1 tablespoon soy sauce
2 1/2 tablespoons lemon juice
1/2 large onion, finely minced
10 -15 kalamata olives, pitted and chopped

Steps:

  • Defrost spinach and squeeze out as much liquid as you can.
  • Drain tofu of any excess liquid.
  • Place tofu and oil in a large bowl. Use a hand mixer on high speed to combine them until creamy.
  • Add pepper, vegetable bouillon powder, dried basil, garlic powder, soy sauce, and lemon juice. Blend on high speed for 1 minute.
  • On low speed, mix in onion, spinach, and olives.
  • Taste and adjust seasonings to your preference.
  • Cover the bowl and place in the fridge. Let it sit for at least 8 hours for the flavours to meld, preferably overnight.
  • Serve with crackers, bread, chips, or vegetables for dipping.
