GRILLED MUSHROOM FLATBREAD

Number Of Ingredients 12

1 cup plus 2 tablespoons extra-virgin olive oil, plus more as needed
30 cloves garlic
Kosher salt and freshly ground black pepper
1 pound assorted mushrooms, such as chanterelles, porcini, cremini and oyster mushrooms, cleaned and sliced
1 small shallot, chopped
1 teaspoon chopped fresh thyme
1/2 cup dry white wine, such as sauvignon blanc
1 tablespoon creme fraiche
1 pound pizza dough
All-purpose flour, for dusting
2 tablespoons chopped fresh parsley
Flaky sea salt

Steps:

  • Combine 1 cup of the oil and the garlic in a small pot over medium-high heat and bring to a simmer. Turn the heat to low and cook until the edges of the garlic are slightly golden brown, 20 to 25 minutes. Turn off the heat and let cool.
  • Puree the garlic, 1/2 cup of the cooking oil and 1/2 teaspoon kosher salt until smooth. Set aside. (The garlic puree will keep in an airtight container in the refrigerator up to 1 month.)
  • Heat the remaining 2 tablespoons of oil in a large cast-iron skillet over high heat. Saute the mushrooms in batches (do not overcrowd the pan). Add another tablespoon of oil between batches if needed. Do not stir the mushrooms until they brown on one side, about 3 minutes. Add some of the thyme, then stir the mushrooms and cook for another 2 minutes. Once all the mushrooms have been browned, combine them in the skillet and season with 1 teaspoon kosher salt and 1/2 teaspoon pepper. Add the wine and cook until evaporated, about 3 minutes. Add the creme fraiche and stir until fully incorporated. Turn off the heat and keep warm.
  • Prepare a grill for medium-high heat. Roll out the pizza dough on a floured cutting board to about 1/2-inch thick. Lay the dough on the grill and cook until grill marks form, 4 to 5 minutes. Flip and cook for 3 to 4 minutes more. Spread with 2 to 3 tablespoons of the garlic puree. Cover the grill and cook for 30 seconds. Transfer the flatbread to a cutting board and top with the mushrooms and the parsley. Sprinkle with 1/2 teaspoon flaky sea salt.

1 teaspoon granulated sugar
One packet (2 1/2-teaspoons) instant yeast
4 cups plus 3 tablespoons (18 1/2 ounces) all-purpose flour
2 teaspoons kosher salt
2 tablespoons olive oil, plus more for oiling the bowl
4 tablespoons (2 ounces) unsalted butter
1 pound (about 4 cups) baby portobello, cremini or baby bella mushrooms, sliced
1 pound oyster or white button mushrooms, coarsely chopped (about 4 cups)
6 sprigs fresh thyme
1 dried bay leaf, broken in half
Kosher salt
All-purpose flour, for dusting
Olive oil, for brushing
1 cup (4 ounces) shredded truffled Pecorino, preferably Boschetto
1/2 cup (about 2 ounces) freshly grated Parmigiano-Reggiano
Chopped fresh chives, for garnish

Steps:

  • For the dough: Stir together the sugar in 2 cups warm water in a medium bowl until dissolved. Sprinkle the yeast over the water, cover with a clean kitchen towel and let sit until the mixture becomes slightly foamy, about 5 minutes. If the mixture doesn't become foamy, it means the yeast is dead; throw the mixture out and start over with a new packet of yeast.
  • Add the flour and salt to the bowl of a stand mixer fitted with the dough hook and mix on low speed until combined. Add the yeast mixture and the olive oil and knead on low speed for 4 minutes. Raise the mixer speed to medium-low and knead until the dough starts to pull away from the sides of the bowl, about 6 minutes. Raise the mixer speed to medium and mix until the dough is smooth, pliable, and elastic, 5 minutes more. Lightly oil a large, clean bowl and transfer the dough to the bowl. Cover with a clean kitchen towel and let rest in a warm place until doubled in size, about 1 hour.
  • For the mushrooms: Meanwhile, melt 2 tablespoons of the butter in a large saute pan over medium-high heat. Add half of the portobello mushrooms, half of the oyster mushrooms, 3 sprigs thyme and half of the bay leaf to the pan. Cook, stirring occasionally, until the mushrooms no longer give off liquid and are golden brown, about 5 minutes. Add a pinch of salt, stir and transfer the mushrooms to a large bowl. Return the pan to the stovetop over medium-high heat and add the remaining 2 tablespoons butter. When it has melted, add the remaining mushrooms, thyme and bay leaf. Cook the second batch in the same manner as above. Add a pinch of salt, stir and transfer the mushrooms to the bowl with the first batch. Set aside.
  • To assemble: Preheat the oven to 450 degrees F. Line 2 rimmed baking sheets with parchment paper. If you'd like to grill your crust first, preheat a grill for cooking over medium heat.
  • Dust your work surface with flour and cut the dough in half. Using your fingertips, press out each piece into an oval roughly 12 inches long and 4 inches wide. If grilling crust first, brush the dough with olive oil and place on the grill. Grill until cooked through and well-marked on each side, 3 to 4 minutes per side. Remove from the heat and transfer the flatbreads to the prepared pans. If not grilling, simply transfer one piece of dough to each of the prepared pans and brush with olive oil.
  • Divide the mushrooms evenly between the two crusts and top with the truffled Pecorino and the Parmigiano-Reggiano. Bake until the cheese has melted and the flatbreads are golden brown, 8 to 10 minutes if the crusts were grilled and 17 to 20 minutes if not (if your oven can't accommodate both flatbreads on the center rack, use the upper and lower racks and rotate and switch their positions halfway through). Garnish with chives and serve immediately.

1 teaspoon sugar
One 1/4-ounce package quick rising yeast
2 1/4 cups all-purpose flour, plus more for dusting
1 teaspoon salt
1 tablespoon olive oil, plus more for greasing
1/2 cup diced white onions
2 cloves garlic, thinly sliced
2 tablespoons olive oil
2 cups heavy cream
2 cups grated truffled pecorino cheese, or other truffled cheese such as Sottocenare al Tartufo
1 cup finely grated Parmesan
8 ounces oyster mushrooms
6 ounces crimini mushrooms, stems removed
1 tablespoon olive oil
Salt and freshly ground black pepper
1/4 cup finely grated Parmesan
3 tablespoons chopped fresh chives

Steps:

  • For the pizza dough: Combine the water, sugar and yeast in the bowl of a mixer with a dough hook attachment. Let sit for 2 minutes to activate the yeast; it will begin to bubble. On low speed, add the flour and salt slowly, then add the olive oil. Once the dough is incorporated, about 4 minutes, remove from the bowl and knead on a lightly-floured surface for about 5 minutes. Place in a lightly-oiled bowl. Let sit in a warm place covered with a damp cloth until the dough has doubled in size, about 1 hour.
  • For the cheese sauce: Cook the onions and garlic in the olive oil in a large saute pan until translucent, 2 to 4 minutes. Add the heavy cream and simmer until the cream has reduced by half, 12 to 15 minutes. Turn off the heat and add the cheeses. Stir very well until all the cheese has melted. Cover with a lid or foil until ready to use.
  • For the flatbreads: Heat grill to medium heat. Toss the mushrooms lightly in the olive oil and some salt and pepper. Grill the mushrooms until lightly charred, turning occasionally, about 6 minutes. Cool slightly, then remove the stems from the oyster mushrooms and slice the cremini mushrooms.
  • For assembly: Divide the pizza dough into two equal portions and roll them out on a lightly floured surface to 10 inches long and 4 inches wide. Lightly oil the grates of the grill. Grill the flatbreads for 2 minutes per side. Remove and add 1 cup of the truffled cheese sauce to each flatbread along with the mushrooms and Parmesan. Return the flatbreads to the grill in a low-heated area. Close the lid and cook for about 4 minutes. Sprinkle with the chives, cut each into 8 pieces and serve.

6 medium golden beets
Coarse salt and freshly ground pepper
2 tablespoons unsalted butter
1 teaspoon Madras curry powder
1 leek, white part only, finely chopped
2 large red bell peppers, chopped
1/2 cup shiitake mushrooms, sliced
1/2 cup maitake mushrooms, sliced
8 brussels sprouts, thinly sliced on a mandoline
1/4 pound ricotta salata, thinly sliced
Juice of 1/2 lemon
1 tablespoon olive oil
1 cup plain yogurt

Steps:

  • Preheat oven to 400 degrees.
  • Place beets in a medium roasting pan and add 1/4 cup water; season with 1 tablespoon salt. Cover beets with a piece of parchment paper-lined aluminum foil and transfer to oven. Roast until tender and easily pieced with a paring knife, about 25 minutes. Using a paper towel, peel skin. Thinly slice beets and set aside.
  • Meanwhile, in a large skillet, heat butter and curry powder over medium heat. Add leeks and cook, stirring, until tender, 6 to 7 minutes. Add peppers and cook, stirring, until tender, about 10 minutes. Add mushrooms and cook, stirring, until steaming and heated through, 5 to 6 minutes. Remove from heat and set aside.
  • In a medium bowl, add brussels sprouts, ricotta salata, lemon juice, and olive oil; season with salt and pepper and toss to combine. In a small bowl, whisk together yogurt with a splash of water until smooth; season with salt and pepper.
  • Lay one piece of flatbread on work surface. Place 3 slices of beets over three-quarters of the flatbread; top with 1/4 cup sauteed vegetables, 2 tablespoons brussels sprouts, and 1 tablespoon yogurt. Starting with the covered portion, roll flatbread toward the uncovered portion and place seam side-up; insert a skewer through seam to secure. Repeat process with remaining pieces of flatbread and vegetable mixture. Remove skewers and slice each in half before serving.

Steps:

  • Heat a grill or grill pan until hot. Place water in a medium bowl, and sprinkle yeast on top; stir to dissolve. Let sit until foamy, about 5 minutes. Add olive oil, flour, and salt; combine. Turn dough out onto a well-floured surface, and knead until smooth and elastic, 1 to 2 minutes. Place in a lightly oiled bowl, cover with plastic wrap, and let stand in a warm place for 30 minutes.
  • Turn dough out onto a lightly floured surface. Divide into 4 equal pieces, and roll out each into a 1/8-inch-thick round. Lightly brush both sides of each round with olive oil, and place the rounds directly on the hot grill. Grill the flatbread until golden brown, about 2 minutes per side. Remove from grill, and season with salt.

2 1/4 teaspoons (1 envelope) active dry yeast
3/4 cup warm water (110 degrees)
2 cups all-purpose flour, plus more for surface
Coarse sea salt
1 tablespoon plus 1 1/2 teaspoons extra-virgin olive oil, plus more for bowl and drizzling

Steps:

  • Preheat oven to 450 degrees. Combine yeast and water, and let stand until foamy, about 5 minutes. Stir well.
  • Pulse flour and 1 teaspoon salt in a food processor to combine. Add yeast mixture and oil. Process just until dough forms. Turn dough onto a lightly floured surface. Knead for 1 minute. Shape into a ball. Place in an oiled bowl, and turn to coat. Cover loosely with plastic wrap. Let rise until doubled, about 1 hour.
  • Punch dough. Divide into 4 pieces. Shape each piece into a 6-inch disk. Drizzle with oil. Sprinkle with salt. Place flatbreads on an inverted baking sheet.

1 1/4 teaspoons active dry yeast
3 cups plus 1 1/2 teaspoons all-purpose flour
Pinch of sugar
1 1/4 cups warm water (100 to 110 degrees), plus more if necessary
1/4 cup yellow cornmeal
1/4 cup fresh rosemary needles
1 teaspoon coarse salt, plus more for sprinkling
1 1/2 teaspoons freshly ground pepper, plus more for sprinkling
4 tablespoons olive oil, plus more for bowl
1 medium red onion
1 bunch fresh sage leaves
4 tomatillos, husked and thinly sliced
6 cherry tomatoes, thinly sliced

Steps:

  • In the bowl of an electric mixer fitted with the whisk attachment, combine yeast, 1 1/2 teaspoons flour, and sugar. Stir in 1/4 cup of the warm water, and let stand until foamy, about 10 minutes.
  • Whisk together the remaining 3 cups flour, cornmeal, rosemary, 1 teaspoon salt, and 1 1/2 teaspoons pepper; add to the yeast mixture. Using the dough hook, mix on low speed while slowly adding the remaining 1 cup of warm water. Mix, adding more warm water, if necessary, 1 tablespoon at a time, until the dough starts to pull away from the sides of the bowl. Mix until the dough is smooth and elastic, 5 to 6 minutes. Turn out the dough onto a clean surface, and knead four turns into a ball.
  • Place the dough in a lightly oiled large bowl, and coat the dough with the oil. Cover tightly with plastic wrap, and let the dough rise in a warm place until doubled in size, about 1 hour. Turn out onto a clean surface; divide into 6 smaller balls, each about 4 inches in diameter. Transfer the balls to a parchment-lined baking sheet, and loosely cover them with plastic wrap.
  • Preheat the oven to 400 degrees. On a lightly floured surface, shape one of the balls into a 3-by-5-inch rectangle, then roll it out to a 5-by-17-inch rectangle; it should be very thin. Place on the diagonal on an ungreased baking sheet. Slice the onion lengthwise as thinly as possible, leaving the root end intact. Fan out each slice of onion. Brush the surface of the dough with olive oil; place 3 or 4 sage leaves, 2 to 3 slices of onion, 2 to 3 slices of tomatillo, and 2 to 4 slices of tomato on top. Sprinkle with salt and pepper. Brush again lightly with olive oil. Repeat with remaining dough, and place on the sheet.
  • Bake until the flatbread turns golden brown, 12 to 14 minutes. Transfer the flatbread to a wire rack to cool. Working in batches, roll out, top, and bake remaining dough. Store in an airtight container up to 1 week.
