5 garlic cloves, minced
1/4 to 1/2 teaspoon crushed red pepper flakes
2 to 3 dashes hot pepper sauce
1/4 cup olive oil
1 tablespoon butter
1 pound fresh asparagus, cut into 1-1/2-inch pieces
Salt to taste
1/4 teaspoon pepper
1/4 cup shredded Parmesan cheese
1/2 pound mostaccioli or elbow macaroni, cooked and drained

Steps:

  • In a large cast-iron or other heavy skillet, cook the garlic, red pepper flakes and hot pepper sauce in oil and butter for 1 minute. Add the asparagus, salt and pepper; saute until asparagus is crisp-tender, 8-10 minutes. Stir in cheese. Pour over hot pasta and toss to coat. Serve immediately.

3/4 cup chicken stock
1/2 cup frozen chopped onion
1 teaspoon crushed garlic
1/2 cup roasted red pepper, cut into 1/2-inch strips
1/2 cup roasted yellow pepper, cut into 1/2-inch strips
1 teaspoon Italian seasoning
2 tablespoons finely chopped fresh flat-leaf parsley
1 tablespoon balsamic vinegar
12 ounces penne pasta, cooked per package directions
1/4 cup grated Parmesan

Steps:

  • In a large skillet, combine asparagus, stock, onions, garlic, peppers, and Italian seasoning. Bring to a boil and reduce liquid to 1/4 cup, about 8 to 10 minutes.
  • Stir in remaining ingredients, except cheese. Toss with hot, cooked pasta. Top with cheese and serve hot.

3 large bell peppers, stemmed, seeded and cut into 1½-inch pieces
½ cup plus 2 Tbsp extra-virgin olive oil, divided
1 tsp salt, divided
Pepper
1 minced garlic clove
½ tsp grated lemon zest
¼ cup lemon juice (from 2 lemons)
1 lb fusilli or farfalle pasta
⅓ cup grated Parmesan cheese
3 Tbsp chopped fresh chives

Steps:

  • Preheat oven to 425°F. In a bowl, combine asparagus, bell peppers and 2 Tbsp extra-virgin olive oil. Season with ¼ tsp salt and pepper and toss to combine. Transfer vegetables to a baking sheet and roast until tender and lightly browned, 15 to 17 minutes. Let cool. Meanwhile, bring 4 quarts water to boil in a large pot. Whisk garlic clove, lemon zest, lemon juice and ¾ tsp salt together in a large bowl. Season with pepper to taste, then whisk ½ cup olive oil in a slow, steady stream until smooth. Add 1 lb fusilli or farfalle pasta to boiling water and cook 11 minutes, stirring often, until al dente. Drain pasta. Re-whisk dressing and add Parmesan cheese, chives, asparagus, bell peppers and pasta to bowl; toss to mix thoroughly. Let salad cool completely and serve at room temperature.   • Cook 1 pound trimmed asparagus in salted boiling water until crisp-tender, 2 to 3 minutes. Remove with a slotted spoon and transfer to ice water to cool; drain and pat dry, then roughly chop. Puree the asparagus in a food processor with 1 cup fresh parsley, 1/2 cup fresh mint, 1/3 cup toasted unsalted pistachios, 1 garlic clove, 1/2 teaspoon lemon zest, 1 teaspoon kosher salt and a few grinds of pepper. Drizzle in 1/3 cup olive oil and puree until smooth. Toss with 1 pound cooked pasta and 3/4 cup parmesan, adding pasta cooking water as needed to loosen.

1 pound fresh asparagus, cut into 1-inch pieces

Steps:

  • Boil water for the pasta. Cook as you are preparing the garlic/asparagus sauce. In a skillet, cook garlic, red pepper flakes and hot pepper sauce in heated oil and butter for 2 to 3 minutes. Add asparagus, salt and pepper; saute until asparagus is crisp-tender, about 8 minutes. Add Parmesan cheese, mix well. Pour over hot pasta and toss to coat. Serve immediately.

I have not tried this yet but it was passed to me and looks very good. Serve this with grilled chicken breasts or diagonally slice the grilled chicken into strips and arrange them atop the servings of pasta.

12 ounces penne rigate (about 4 cups)
1 tablespoon olive oil
1 dash fresh ground pepper, to taste
1 dash salt, to taste
1 lb thin asparagus spear, diagonally cut into 2 inch long pieces
1 cup chicken broth
1 tablespoon butter
2 teaspoons lemons, zest of
2 tablespoons fresh lemon juice
1/4 cup toasted pine nuts
2 tablespoons snipped fresh chives
fresh ground pepper, for garnish (optional)
crumbled feta cheese, for garnish (optional)

Steps:

  • Preheat the oven to 400° F.
  • Cook Penne in salted boiling water until al dente; drain and return to pot.
  • While the penne is cooking, combine the oil, pepper, and salt in a medium bowl; Add the asparagus and toss.
  • Place the asparagus in a single layer on a baking sheet; Roast in the preheated oven, tossing or stirring the asparagus several times, until it is tender and lightly browned, about 15 minutes: (If the asparagus is very thin, reduce the cooking time by several minutes and check often to prevent burning.).
  • While the penne and asparagus are cooking, combine the chicken broth, butter, lemon zest, and lemon juice in a small saucepan over medium heat; Heat, stirring occasionally, until the butter is melted.
  • Add the asparagus and pine nuts to the pasta and toss.
  • Gently toss in the chicken broth mixture over medium heat just until heated through.
  • Taste and adjust the seasoning.
  • Toss in the chives just before serving.

2 cups uncooked bow tie pasta
1 lb fresh asparagus, cut into 1 inch pieces
3 tablespoons olive oil
1/4 cup minced shallot (about 2 large)
2 cloves garlic, minced
salt and pepper
1/4 cup shredded parmesan cheese (optional)

Steps:

  • Cook pasta in boiling salted water 10 minutes or until almost tender.
  • Add asparagus; continue cooking 3 to 4 minutes or until pasta and asparagus are tender.
  • Drain well.
  • Meanwhile brown ground beef in large non-stick skillet over medium heat 8 to 10 minutes or until beef is not pink, breaking up into 3/4 inch crumbles.
  • Remove from skillet with slotted spoon.
  • Pour off drippings.
  • Heat oil in same skillet over medium heat until hot.
  • Add shallots and garlic; cook 3 to 4 minutes or until tender, stirring frequently.
  • Remove from heat.
  • Add beef; toss to mix.
  • Season with salt and pepper, as desired.

1 cup diced multi-colored bell peppers

1 tablespoon Italian seasoning
1 pound large shrimp, peeled and deveined
3 tablespoons diced tomatoes and green chiles (such as RO*TEL®)

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine at a boil until tender yet firm to the bite, about 8 minutes.
  • At the same time, heat oil in a wok or large skillet over medium heat. Add bell peppers, green onions, and garlic; cook until almost tender, 5 to 6 minutes.
