HAM, ASPARAGUS, AND PASTA CASSEROLE
I have no idea where this came from, but I'm pretty sure I tweaked it from some cookbook or another. This is not only easy, it's incredibly tasty. Not too heavy, and doesn't take long in the oven so it's not bad for a summertime casserole.

Steps:
- Cook pasta in boiling water seven minutes.
- Add asparagus; cook an additional 2-3 minutes; drain.
- Meanwhile, melt butter in large frying pan and preheat oven to 450°F.
- Add onion to butter and saute 4-5 minutes, just until softened.
- Combine flour, thyme, salt, and pepper in a bowl.
- Add milk and chicken broth; combine well with a whisk.
- Add milk mixture to frying pan.
- Cook over medium heat, stirring frequently, until thickened (about 5 minutes).
- Remove sauce from heat; stir in lemon juice.
- Combine all ingredients except parmesan and bread crumbs in a large casserole dish.
- Combine parmesan and bread crumbs, and sprinkle over top of casserole.
- Bake at 450F for approximately 10 minutes, until casserole is bubbly and the bread crumbs are golden brown.

Steps:
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Stir asparagus into pot in the last five minutes of cooking; drain.
- While pasta is cooking, heat butter and cream in a medium saucepan over medium heat. When mixture begins to bubble, stir in Parmesan, garlic powder, pepper and cayenne. Continue cooking until mixture thickens, stirring occasionally. Stir in ham and heat through.
- Toss pasta and asparagus with sauce and serve immediately.

ASPARAGUS, HAM, PASTA BAKE

- 1. Preheat oven to 350°F. Put a large pot of salted water on to boil. Grease a 9" X 13" baking dish.
- 2. In a large skillet heat oil over a medium heat. Add ham and scallions to skillet, setting aside reserved green parts for topping. Saute until onion begins to soften. Set aside.
- 3. In a mixing bowl or food processor, combine eggs, 1 1/2 cups of the grated cheese, ricotta, milk, mustard, salt and pepper. Beat until very smooth.
- 4. Boil pasta according to directions on box, adding asparagus during last minute of cooking. Rinse under cold water until cooled, and drain.
- 5. Add drained noodles back to pot. Add ham and egg mixtures to noodles. Mix until well combined and pour into prepared dish.
- 6. Bake for 30 minutes. Remove from oven and top evenly with remaining 1/2 cup cheese and reserved scallions. Bake 15 minutes more. Let rest for 5 minutes and serve.
PASTA WITH ASPARAGUS
Steps:
- Boil water for the pasta. Cook as you are preparing the garlic/asparagus sauce. In a skillet, cook garlic, red pepper flakes and hot pepper sauce in heated oil and butter for 2 to 3 minutes. Add asparagus, salt and pepper; saute until asparagus is crisp-tender, about 8 minutes. Add Parmesan cheese, mix well. Pour over hot pasta and toss to coat. Serve immediately.
PRIMAVERA WITH PROSCIUTTO, ASPARAGUS AND CARROTS

- Bring a pot of water to a boil, salt it generously and cook the pasta for 8 minutes; add the asparagus, carrot and snap peas and cook for 3 minutes. Check the pasta and vegetables to make sure they're cooked through but still have texture, then drain.
- While the pasta is cooking, heat the olive oil in a large saute pan, add the ham and shallot and cook until lightly browned, 3 minutes or so. Add the garlic and pepper flakes and cook until fragrant, 1 minute. Add the cream, stock and mustard and simmer for a minute or two, scraping up any brown bits.
- Add the pasta and vegetables to the pan. Toss and cook for another 2 minutes, until cooked through and the pasta is coated. Taste for seasoning, add salt if necessary and serve immediately in warm bowls.
HAM & ASPARAGUS BRUNCH BAKE
This came from a Sunday supplement page in an ad for Uncle Ben's rice. I've never seen these ingredients put together in this way before. It is a very different and tasty dish! Serve it for brunch or Sunday supper.

- To prepare the asparagus, cut off and discard the woody ends, then neatly cut the tips away from the stalks. Keep the tips and stalks separate. In a small saucepan bring the cream and garlic to the boil. Take off the heat, remove the garlic, then set the pan aside.
- Cook the stalks in boiling salted water for about 4-5 mins until tender, drain, then tip into the cream with the grated parmesan. Blitz with a hand blender until smooth.
- Cook the pasta according to pack instructions, then throw in the tips 2 mins before the end of cooking time. Gently reheat the cream, drain pasta, then tip into a bowl with the cream. Toss, divide into pasta bowls, top with parmesan shavings and serve.

- Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In large bowl, toss ham, asparagus, potatoes, onion and cheeses. Spoon into baking dish.
- In same bowl, beat eggs, milk, sour cream, lemon-pepper seasoning salt and mustard with fork or wire whisk until well mixed. Pour egg mixture over potato mixture. (Baking dish will be very full.) Cover; refrigerate 8 hours or overnight.

- Scrape and trim the asparagus; discard the tough ends. Slice the spears on the bias into 1-inch lengths.
- In a kettle or large saucepan, bring 2 quarts of water to a boil. Add salt and the fettuccine. Boil gently for 9 minutes, or until al dente. Reserve 1/4 cup of the cooking water and drain the pasta.
- Heat the olive oil in a large saucepan and add the asparagus, ham, tomatoes and garlic. Cook, stirring, over medium heat for 3 minutes. Do not overcook. Add the drained fettuccine, goat cheese, cream, basil leaves, the reserved water and salt and pepper to taste. Toss well over medium heat until blended well.
