2 tablespoons water
8 fresh mushrooms, sliced
1 large avocado - peeled, pitted, and cubed
1 zucchini, diced
1 large tomato, seeded and chopped
1 red onion, sliced
2 tablespoons lemon juice
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 teaspoon Dijon mustard
1 clove garlic, minced
½ teaspoon dried basil
½ teaspoon dried thyme
¼ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Place asparagus and water into a dish, cover, and microwave on high for 3 minutes; stir. Continue microwaving until asparagus are bright green and slightly tender, 2 to 3 more minutes. Drain and cool.
  • Toss asparagus, mushrooms, avocado, zucchini, tomato, and red onion gently in a large salad bowl. Combine lemon juice, olive oil, balsamic vinegar, Dijon mustard, garlic, basil, thyme, salt, and black pepper in a jar with a tight-fitting lid; cover and shake dressing to mix. Pour dressing over salad and toss again to coat. Cover salad and refrigerate until serving time.

1 each sweet red, yellow and green pepper, julienned
1 cup sliced fresh mushrooms
1 medium tomato, chopped
1 medium onion, sliced
1 can (2-1/4 ounces) sliced ripe olives, drained
2 garlic cloves, minced
2 tablespoons olive oil
1 teaspoon minced fresh parsley
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon lemon-pepper seasoning
1/4 teaspoon dill weed

Steps:

  • In a disposable foil pan, combine the vegetables, olives and garlic; drizzle with oil and toss to coat. This is a Taste of Home recipe with lots of delicious taste. I made this for my mom and I for lunch and we were slurping up the dressing. :) I put the recipe as written, but my changes are in parentheses.)

1 1/2 lbs asparagus spears, trimmed and cut into 2 inch pieces
2 small tomatoes, cut into wedges
3 tablespoons cider vinegar
3/4 teaspoon Worcestershire sauce
1/3 cup sugar
1 tablespoon grated onion (I used green onion)
1/2 teaspoon salt
1/2 teaspoon paprika
1/3 cup vegetable oil (I used canola)
1/3 cup sliced almonds, toasted
1/3 cup crumbled blue cheese (I really think this enhances the flavor) (optional)

Steps:

  • In large saucepan, bring water to oil. Add aspargus; cover and cook for 3-5 minutes or until crisp-tender. (I steamed my asparagus in the microwave.) Drain.
  • Add tomatoes; cover and keep warm.
  • In a blender, combine vinegar, Worcestershire sauce, sugar, onion, salt and paprika; cover and process until smooth. While processing, gradually add oil in a steady stream.
  • Pour over asparagus mixture and toss to coat.
  • Transfer to serving bowl; sprinkle with almonds and blue cheese if desired. Serve warm.

30-Minute Spring Salmon Bowls with Asparagus and Peas image

Celebrate Spring with these delicious crispy salmon bowls with asparagus, peas and radishes.

1 lb salmon fillet
1 Tbsp avocado oil
½ tsp garlic powder
½ tsp onion powder
½ tsp ground paprika
¼ tsp sea salt, to taste
2 Tbsp butter, ghee, or avocado oil
⅓ cup yellow onion, finely chopped
4 cloves garlic, minced
1 bunch asparagus, trimmed and chopped
1 cup green peas (I use frozen)
4 radishes, optional

Steps:

  • Spray cooking oil in the bottom of a casserole dish and place the salmon fillet in the dish. Drizzle with avocado oil and use your hands to spread it over the flesh. Sprinkle salmon with garlic powder, onion powder, paprika, and sea salt.
  • Place your oven on the high broil setting and place the salmon on the second shelf from the top. Broil for 12 to 15 minutes, until the salmon is crispy on the top and cooked through. Note: For thicker salmon, broil for 12 minutes then turn off the oven and allow it to continue to cook in the hot oven for another 5 to 10 minutes, until cooked through.
  • While the salmon is cooking, prepare the vegetables. Add the butter (or oil) to a skillet and heat to medium-high. Add the onion and sauté, stirring frequently, until the onion softens and turns translucent. Add the garlic, asparagus, and peas and stir well. Cover the skillet and cook for 5 to 10 minutes, stirring occasionally, until asparagus has softened but is still al dente.
  • Serve salmon with spring vegetable medley in a big bowl and enjoy!

1 bunch asparagus (about 10 oz.), ends trimmed and chopped in thirds
1/2 red onion, sliced
whole garlic cloves, as many as you like
2 - 4 small lemons, quartered and seeds removed
1 - 2 tablespoons olive oil, divided
himalayan salt & cracked pepper, to taste
1 teaspoon thyme
1 can (15 oz) white beans, drained and rinsed (optional)
cooked grain of choice - quinoa, farro, barley, brown, jasmine or basmati rice (optional)

Steps:

  • Prep: Prep your veggies and place in medium size bowl along with salt, pepper and thyme. Drizzle with 1 tablespoon olive oil and mix to coat.
  • Saute: Heat the remaining olive oil in a skillet over medium heat. Add vegetables and cook for about 8 - 10 minutes stirring occasionally. Done when asparagus is just for tender and tomatoes are soft and just about to burst.
  • Add optional beans: A few minutes before removing from heat, add beans and let warm through.
  • Serve warm on a bed of grains such as quinoa, farro, rice or barley.
  • Serves 3
  • Leftovers can be kept in the refrigerator for up to 5 days in a covered container.
