  • Now that the seasons for fresh produce have been stretched by imports, it's not quite as much of a thrill to see the first asparagus of early spring. A pity, since I once considered the arrival of asparagus to the market as much an awaited sign of spring as forsythia and robins. Still, I like to stick with vegetables that are in season by buying locally. Freshly picked, slender asparagus is more agreeable to my eyes and palate than thick, stringy imported winter asparagus.
  • Spring asparagus needs to have only about half an inch trimmed off the bottom of the stalks; scraping is unnecessary when the stalks are slender. Asparagus makes a good side dish, simply steamed, with a tiny bit of nonhydrogenated margarine or whipped butter added. Microwave cooking yields good results; place the stalks in a small casserole dish with just enough water to keep them moist. Cover and cook until tender-crisp to your liking. How long this takes depends on the quantity and quality of the asparagus, so test often and serve right away.
  • Another great way to prepare slender asparagus is to cut it into 2- to 3-inch lengths and sauté it in olive oil with minced garlic.

2 tablespoons butter
1 medium onion, cut in 1/4 inch slices (1/2 cup)

1 teaspoon fresh garlic, finely chopped
1 teaspoon fresh gingerroot, finely chopped
1 tablespoon rice vinegar or 1 tablespoon cider vinegar

1/2-1 teaspoon chili-garlic sauce

Steps:

  • Place water and asparagus in 2-quart casserole.

1 teaspoon freshly minced garlic

Steps:

  • Remove hard bottom stem of asparagus and slice rest of stalk into approximately 1-inch pieces. Blanch asparagus and put into-cold water to stop it from cooking further. Drain and set aside. Roast red pepper in 500 [degrees] oven for 20-30 minutes, turning occasionally. When skin has darkened and blistered, remove pepper from oven. Transfer to bowl and cover with aluminum foil. Let cool 30 minutes, then peel off skin and seed pepper. Slice into julienne strips and toss 1/2 cup roasted pepper with garlic and vinegar. 1 kg asparagus (2 pounds)
1/2 cup olive oil
salt and pepper, to taste
3 red bell peppers
1 tablespoon ginger, grated
3 tablespoons lemon juice
3 tablespoons olive oil
salt and pepper
1 garlic clove, minced (optional)

Steps:

  • Grill peppers over high heat turning as it browns about 20 minutes, or until the skins darken and blister. Remove the peppers from the grill, and place them in a paper bag. Close the bag by folding over twice. Set the peppers aside to cool. The steaming helps to loosen the skin.
  • Take the peppers from the bag and remove the skins, stems, and seeds. If necessary, rinse the peppers to make peeling easier.
  • Cut your roasted peppers in pieces and blend them with the other ingredients for the sauce with the food processor.
  • Place salsa in a bowl.
  • Snap off tough ends of asparagus.
  • Arrange 4-8 asparagus spears on a flat surface. Thread 2 (5 cm, 2-inch) skewers horizontally through spears 2-3 cm (1 inch) from each end to form a raft. Repeat procedure with remaining asparagus spears. Amount of skewers and asparagus depends on their size.
  • Prepare the other raft until all asparagus are fixed.
  • Brush asparagus with olive oil and season with salt and pepper.
  • Grill them for about 5 minutes and turn them on the other side for other 5-6 minutes (don't burn them).
  • Serve hot with salsa.
  • Tip: Prepare salsa with yellow and red peppers in saparate portions. Pop your table!
