Spaghetti with Asparagus, Smoked Mozzarella and Prosciutto image

2 pounds asparagus, trimmed
3/4 pound spaghetti
4 tablespoons olive oil
4 garlic cloves, minced
Salt and freshly ground black pepper
6 ounces thinly sliced prosciutto, cut crosswise into strips
6 ounces smoked mozzarella cheese, diced (about 1 cup)
6 tablespoons thinly sliced fresh basil leaves

Steps:

  • Cook the asparagus in a large pot of boiling salted water until crisp tender, about 2 to 3 minutes. With a spider or slotted spoon, remove asparagus from boiling water to a bowl of ice water to cool and stop the cooking. When cool, strain, cut asparagus into 1-inch pieces, and set aside.
  • Return the water in the pot to a boil, adding additional water, if necessary. Add the pasta and cook until al dente, tender but still firm to the bite, about 8 minutes. Drain the pasta, reserving 1 cup of the cooking liquid.
  • Heat the oil in a heavy large skillet over medium heat. Add the garlic and saute until fragrant, about 20 seconds. Add asparagus to the skillet. Season with salt and pepper, to taste. Add the pasta, and if needed, some of the reserved cooking liquid. Toss to coat. Add the prosciutto, mozzarella, and basil, and toss to combine. Turn off the heat. Season with salt and pepper, to taste, and serve.

1-1/2 pounds bulk Italian sausage
1 jar (28 ounces) meatless spaghetti sauce

1/2 cup grated Romano cheese

Steps:

  • Cook pasta according to package directions; drain. Crumble sausage into a Dutch oven. Cook over medium heat until no longer pink; drain. Stir in spaghetti sauce and pasta. 1 pound fresh asparagus spears
salt and freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
1 ounce Pecorino Romano cheese
⅓ cup plain dried bread crumbs
2 large eggs
1 tablespoon olive oil, or as needed

Steps:

  • Bring a pot of well salted water to a boil over high heat.
  • Trim off up to 1 inch of the woody bottom parts of the asparagus. Cut asparagus in half if necessary to fit your pot.
  • Transfer asparagus to the boiling water. Boil until slightly tender, 2 to 3 minutes. Transfer asparagus to a bowl of very cold water using a slotted spoon. Let asparagus cool completely.
  • Grate Pecorino Romano cheese finely using a rasp grater.
  • Drain asparagus well and slice into very small pieces. Place in a bowl; season with salt and pepper. Add cayenne pepper, grated Pecorino Romano cheese, and bread crumbs. Mix in 1 egg to start. Add the second egg and continue mixing until well combined.
  • Heat olive oil in a skillet over medium heat. Scoop some of the asparagus mixture into the hot oil; flatten with a fork. Cook until bottom is browned, about 4 minutes. Flip over and brown the other side, about 4 minutes more.

1/2 cup almond flour
1/4 cup unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon fine sea salt
1/4 teaspoon ground nutmeg
Zest of 1/2 large lemon
Zest of 1/2 small orange
2 tablespoons extra-virgin olive oil
2 tablespoons unsalted butter
1 cup sugar
1/4 cup whole milk
2 tablespoons dark rum
1 large egg, at room temperature
1 1/2 cups semisweet chocolate chips (9 ounces), such as Ghirardelli
1/4 cup heavy cream

Steps:

  • Position a rack in the center of the oven and preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper or silicone liners.
  • For the cookies: In a food processor, pulse together the flours, cocoa powder, baking powder, cinnamon, salt, nutmeg and the lemon and orange zests. Add the olive oil and butter and pulse until blended.
  • In a large bowl, whisk together the sugar, milk, rum and egg until smooth. Gradually stir the flour mixture into the egg mixture until a stiff dough forms. With damp fingers, shape the dough into 1-inch balls and place about 1-inch apart on the prepared baking sheets. Bake until the cookies are firm to the touch, 10 to 11 minutes. Cool for 10 minutes, then transfer the cookies to wire racks to cool completely, about 15 more minutes.
  • For the icing: Put the chocolate chips and cream in a heatproof medium bowl and place the bowl over a pan of barely simmering water. Stir frequently until the chocolate has melted and the mixture is smooth.

3 tablespoons extra-virgin olive oil
2 dried arbol chiles, stemmed
1 tablespoon kosher salt
1 teaspoon finely grated lemon zest

Steps:

  • Preheat the oven to 425 degrees F.
  • Toss the mushrooms and asparagus with the oil on a baking sheet and roast, stirring once, until tender and brown in spots, about 15 minutes.
  • Meanwhile, grind the chiles in a spice grinder until coarsely ground into flakes. Mix the chiles with the salt and lemon zest in a small bowl.

1 pound hamburger, browned and drained
1 small onion, chopped
2 cloves garlic, minced
1 small green pepper, chopped
1 cup fresh mushrooms, sliced
1 (16 ounce) can tomatoes, petite diced
1 (6 ounce) can tomato paste
½ teaspoon basil
1 teaspoon oregano
1 bay leaf
1/2 teaspoon salt, or more
1/4 teaspoon black pepper
1/4 cup dry red wine, good quality
16 ounces of cooked and drained mostaccioli pasta

Steps:

  • 1. In a medium saucepan, brown hamburger; drain.
  • 2. To the browned beef, add; onion, green pepper, garlic, mushrooms, tomatoes, tomato paste, wine, basil, oregano, salt and pepper, and bay leaf.
  • 3. Cover and let simmer for 30-45 minutes.
  • 4. In a large stock pot, cook the pasta in boiling salted water for approximately 12-15 minutes or until tender.
  • 5. Drain the pasta in a colander and add pasta back into the stock pot.
  • 6. Add the meat sauce to the pot of pasta and mix thoroughly. Add a little more wine or water if it looks to thick or dry. Simmer until mostaccioli noodles and meat sauce are heated evenly. (Or you can spoon the sauce over individual plates of pasta instead).
  • 7. Serve with freshly grated or shredded parmesan cheese on top.

Chimichurri is the South American green herb sauce that goes with just about everything. Easy to put together, it tastes best freshly prepared. When green garlic is in season in spring and early summer, use that; or substitute 2 or 3 regular garlic cloves at other times of the year. To keep it green and fresh tasting, add the vinegar just before serving. Char the asparagus in a hot cast-iron skillet or griddle, over hot coals, or under the broiler. Pencil-thin asparagus cooks quite quickly this way, but medium-size spears may be substituted.

3 tablespoons olive oil
1 lb hot Italian sausage, removed from casing
4 cloves garlic, thickly sliced
12 -15 cherry tomatoes, cut in half
6 shallots, diced with greens
1/2 lb broccoli, cut into florets,stems peeled
1/2 lb asparagus, peeled from 1 inch below the tips if the spears are large,cut into 1 inch pieces
8 ounces fresh sliced mushrooms
1 red bell pepper, sliced
1/2 teaspoon salt
fresh ground black pepper
fresh diced basil
fresh oregano
1/3 cup white wine
red pepper flakes
1 cup chicken stock
1 package rigatoni pasta or 1 package penne pasta
3 tablespoons freshly grated pecorino romano cheese or 3 tablespoons parmigiano-reggiano cheese

Steps:

  • Heat oil in a large saute pan set on medium heat, until almost sizzling, about 2 minutes.
  • Cook the sausage meat for 3 minutes or until lightly browned. Bring your water for the pasta to a boil and add pasta at this time.
  • Transfer the sausage with a slotted spoon to a bowl and set aside.
  • Add the garlic, shallots, salt, pepper and red pepper flakes to the same pan.
  • (If you like it spicy, add more red pepper flakes)!
  • Cook over medium heat for 3 minutes, stirring to mix well.
  • Add the cooked sausage, basil, oregano and white wine and cook for 3 more minutes, stirring to scrape up any brown bits from the bottom of the pan.
  • Add the chicken stock and bring to a slow boil. Lower heat. Add broccoli, tomatoes, asparagus and mushrooms at this time.

  • Cover the pan and cook with lid slightly ajar, simmer for 8-10 minutes or until vegies are crisp.
  • Drain your pasta and add it to the veggies. Co0k for 1-2 minutes.
  • If you have too much liquid, thicken with the corn starch, not enough add water.
  • Serve immediately with freshly grated cheese.
