This asparagus becomes slightly pickled and is very refreshing during the summer. It is also very easy to make. The more you let it stand the more flavor the asparagus absorbs.

- Steam asparagus until crisp but fork tender Chill in cold water to stop cooking process.
- Mix together ingredients.
- Add asparagus to mixture and toss.
- Let stand in refidgerator for at least 1 hour.

Served cold on leaf lettuce. Great flavour and nice presentaion. Best if marinated overnight (hence the 24 hr cook time).

- Place onion& salt in a bowl large enough to hold the asparagus.
- Mix well& let steep for 30 minutes.
- Add the capers, lemon juice& mint leaf& marinate for at least 1 hour.
- Mix thoroughly from time to time.
- Meanwhile, bring an asparagus cooker to a boil& cook the asparagus until tender but still crisp, about 3 minutes.
- Drain.
- Toss the still warm asparagus with the marinade& add salt& pepper.
- Toss gently& serve.
- This can be refrigerated before serving, but I recommend eating it right after cooking.
- If not, reheat to at least room temperature.

- Cook the asparagus in boiling salted water until crisp-tender. (To cook them evenly, put the stalks in first, cook for a few minutes, then add the tips and cook for 2-3 minutes more.)
- Drain and run under cold water to stop the cooking and to fix the green color. Drain well.
- In the meantime, sauté the chopped onions in the oil until limp. Add the red chili paste and stir.
- Add the sugar and mirin, then add the miso. If it gets a bit stuck to the pan, add a few drops of water and stir and scrape to deglaze the pan. Take off the heat.
- Add the aspargus and mix well so each piece is coated with the marinade.
- Layer into glass or ceramic bowl or container (not plastic, because the miso and chili will stain it) evenly. Cover with kitchen parchment paper, then put another bowl or container filled with water; this acts as a weight.
- Leave the asparagus to marinate for at least an hour - you can leave it in the refrigerator overnight. Take off the weight and store the asparagus in a tightly covered container.
- The asparagus will keep for a couple of days in the refrigerator, but it will gradually lose its green color so you should try to eat it up as soon as possible. This is not that hard to do. (It's pretty good mixed with hot pasta.)
- You can halve the amount of marinade, and marinade just half a bundle of asparagus and use the rest of the cooked stalks for dinner.

- Trim the asparagus and cook in boiling water for 6-7 minutes, or until barely tender and still bright green; drain and rinse under cold water then drain again.

- In a large pot bring 1 inch of water to a boil over medium-high heat.
- Add asparagus, laying them flat, and simmer about 5 minutes or until crisp tender. Remove the asparagus and run them under cold water to stop the cooking process.
