1 1/2 lbs extra lean ground beef
1 medium onion, chopped
6 cloves garlic, chopped
2 tsp fresh ginger, grated
2 lbs frozen sugar snap peas
4 tbs soy sauce
2 tbs hoisin sauce
2 tsp hot chili garlic sauce
1 cup beef broth
1 tbs cornstarch
14 oz Instant Egg Noodles

Steps:

  • Brown the ground beef along with the garlic, onions, and ginger in a large skillet.
  • Meanwhile bring a large pot of water to a boil and cook the instant egg noodles according to the package directions.
  • Once the meat is browned and the onions are tender add in the sugar snap peas.
  • Allow to cook for a few minutes to begin to thaw.
  • Meanwhile mix together the beef broth, soy sauce, hoisin sauce, hot chili garlic sauce, and the cornstarch.
  • Add the cooked noodles to the meat and pea mixture.
  • Add the liquid mixture to the skillet.
  • Continue cooking until the sugar snap peas are tender crisp and the sauce is thickened.

Here's a stir-fry far better than most take-out Chinese, and you can make it with any lean cut of meat - flank steak, London broil, tenderloin, sirloin or skirt steak - so long as it is cut thin against the grain. Most takeout joints use snow peas, but sugar snaps are juicier and more succulent, and just as crunchy. (Their downside is that they are slightly more work: they need to be thinly sliced.) As for the sauce, it's simple: thick dark soy sauce (tamari works well), sesame oil, chicken broth and Madeira.

1 pound lean beef, cut into 1/4-inch strips
3 tablespoons tamari or dark soy sauce
2 teaspoons toasted sesame oil, more for drizzling
1/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 pound sugar snap peas, trimmed
3 fat scallions
2/3 cup chicken broth
2 1/2 tablespoons Madeira or sweet sherry
1 tablespoon cornstarch
3 tablespoons peanut or olive oil
4 garlic cloves, minced
Rice, for serving
2 tablespoons toasted sesame seeds (optional)
Sriracha or other hot sauce, or rice wine vinegar for garnish
chili oil, for garnish

Steps:

  • In a medium bowl, mix beef, 2 tablespoons tamari, sesame oil, salt and pepper. Set aside.
  • Thinly slice sugar snap peas crosswise into disks. Thinly slice scallions, reserving dark green parts for garnish.
  • In a small bowl, mix chicken broth, Madeira, 2 tablespoons water, remaining 1 tablespoon tamari and cornstarch.
  • Heat a large skillet over high heat. Add 2 tablespoons oil. When pan is hot, stir-fry beef until browned, about 2 minutes. Transfer beef and any liquid to a plate.
  • Add remaining tablespoon oil to skillet and when hot, add garlic and white and light green scallion parts until lightly browned, about 1 minute. Add sugar snap peas and chicken broth mixture, lower heat to medium and cover. Let cook for 2 minutes. Transfer beef and juices to skillet and stir-fry 2 minutes. Serve over rice, garnished with more sesame oil, sesame seeds, dark parts of scallions, and hot sauce or vinegar and chili oil.

1/2 lb beef fillet or boneless sirloin steak
2 shallots, chopped
2 tablespoons chopped drained bottled lemongrass
1 garlic clove, smashed
1 tablespoon chopped peeled fresh ginger
1 1/2 teaspoons salt
1 teaspoon Thai red curry paste
1 pinch sugar
4 oz dried rice vermicelli (rice stick noodles)
2 tablespoons vegetable oil
6 oz sugar snap peas, trimmed and halved crosswise
1 cup well-stirred canned unsweetened coconut milk
2 tablespoons finely chopped fresh cilantro

Steps:

  • Cut beef against the grain into ‿-inch-thick slices. Pulse shallots, lemongrass, garlic, ginger, salt, curry paste, and sugar in a food processor until finely chopped.
  • Cook noodles in a large pot of boiling salted water until tender, 3 to 4 minutes, and drain in a colander. Rinse briefly and drain well.
  • Heat 1 tablespoon oil in a wok or large heavy skillet over high heat until it just begins to smoke, then sauté beef, stirring, just until no longer pink. Add snap peas and sauté, stirring, 30 seconds. Transfer mixture to a bowl. Heat remaining tablespoon oil in wok over moderate heat until hot but not smoking, then cook shallot mixture, stirring frequently, until it begins to stick to bottom of wok, about 2 minutes. Stir in coconut milk and simmer, scraping up brown bits, until slightly thickened. Stir in beef mixture and cilantro and spoon over noodles.

Steps:

  • Cook pasta as directed on package. Meanwhile, snip off stem ends of sugar snap peas and remove strings if desired. Drain pasta; cover to keep warm.
  • In 12-inch nonstick skillet, heat 3 teaspoons of the oil over medium-high heat. Stir-fry beef in oil about 2 to 3 minutes, until no longer pink. Remove from skillet; keep warm.
  • In same skillet, heat remaining 2 teaspoons oil over medium-high heat. Stir-fry peas and carrot in oil about 3 to 4 minutes, until crisp-tender. Stir in pasta, beef and teriyaki baste and glaze; toss until well blended.

1 lb beef round tip steak, cut 1/8 to 1/4 inch thick
4 ounces uncooked vermicelli or 4 ounces thin spaghetti
3 tablespoons water
1 (8 ounce) package fresh sugar snap peas
1 cup packaged fresh matchstick-style shredded carrot
2/3 cup prepared stir-fry sauce, such as sesame-ginger flavor
1/4 teaspoon crushed red pepper flakes

Steps:

  • Cook vermicelli according to package directions; drain.
  • Keep warm.
  • Meanwhile, stack beef steaks; cut lengthwise in half and then crosswise into 1" wide strips.
  • Heat water in large nonstick skillet over medium-high heat until hot.
  • Add sugar-snap peas and carrots; cook and stir 3-4 minutes or until water is evaporated and vegetables are crisp-tender.
  • Remove from skillet.
  • Heat same skillet over medium-high heat until hot.

1 lb sugar snap peas, trimmed

2 bunches scallions (white and pale green parts only), cut into 3/4-inch pieces
Accompaniment: steamed rice

Steps:

  • Stir together soy sauce, Sherry, cornstarch, sugar, and salt.
  • Heat a wok or deep heavy skillet over high heat until hot but not smoking, then stir-fry sausage 2 minutes. Transfer with a slotted spoon to a plate.
  • Add garlic and ginger to fat remaining in wok and stir-fry until fragrant, about 30 seconds.
  • Add peas and stir-fry 1 minute. Return sausage to wok, then add water and boil, stirring occasionally, until peas are crisp-tender, 1 to 2 minutes.

250g lean minced beef
3 nests medium egg noodles
thumb-sized piece ginger , finely grated
3 garlic cloves , finely grated
1 heaped tsp five-spice powder
¼ tsp chilli powder
225g pack mangetout or sugar snap peas
400ml beef stock
3 tbsp light soy sauce , or more to taste
sesame oil , to serve
red chilli , deseeded and shredded to serve (optional)

Steps:

  • Heat a large non-stick frying pan or wok, then fry the beef for 10 mins until very well browned. Don't add any oil. Meanwhile, boil the noodles following pack instructions, then drain.
  • Add the ginger, garlic, five-spice, chilli powder and mangetout to the browned mince, then fry for a few mins more until fragrant and the pods are bright green. Splash in the stock, add the noodles, then season with the soy sauce. Pile into bowls (use tongs, it's easier), sprinkling with the sesame oil and red chilli if using.
