ASIAN CHICKEN (ASIAN MARINADE)
A great all rounder Asian Marinade that infuses chicken with sweet/savoury flavours. This Asian chicken can be grilled, baked or cooked on the stove! MINIMUM MARINADE TIME: 1 hour (or overnight)

Steps:
- Mix Marinade ingredients together. Add chicken and mix to coat. Marinade in the fridge for a minimum of 1 hour or up to overnight.
- Heat oil in a large non stick skillet or BBQ over medium high heat. (See notes for other cooking methods) Add chicken and cook until each side is dark golden brown and chicken is cooked through (about 3 minutes each side). Transfer to plate, cover loosely with foil and rest for 3 minutes.
- Garnish with chillies, shallots and sesame seeds if desired. Serve with white rice and slices of cucumber.

Steps:
- Fill a small saucepan with water, add chicken, and bring to a boil. Simmer and cook chicken for 10 minutes. Drain.
- Preheat the oven to 375 degrees F (190 degrees C).
- Wrap each chicken breast with 2 slices of bacon and place in an ovenproof baking dish. Cover with barbecue sauce. Sprinkle with grated Cheddar cheese.
- Bake in the preheated oven until the cheese is bubbly and chicken is no longer pink in the center, about 12 minutes.

ASIAN STYLE CHICKEN BREASTS AND BACON
This was in an issue of Food and Wine. It looked great and I thought I would share. I haven't made it yet, still looking for Chinese 5-spice powder.

Steps:
- In a small saucepan, mix the stock and 5-spice powder and simmer over low heat for 3 minutes.
- Set aside.
- In a large skillet, heat 1 tablespoon of the peanut oil.
- Add the bacon and cook over low heat until most of the fat is rendered and the bacon is browned (about 15-20 minutes).
- Add the garlic.
- Saute for 2 minutes.
- Add the chicken.
- Season with salt and pepper.
- cook over medium heat until the chicken is brown and just cooked through (about 8-10 minutes).
- Remove from skillet.
- Heat the remaining 1 tablespoon peanut oil in skillet.
- Add mushrooms and saute over medium heat until all of their liquid has evaporated and they start to brown (about 8 minutes).
- Remove mushrooms to plate.
- Add wine to skillet and simmer over medium-high heat until it is reduced by half.
- Add the soy sauce, spiced stock, bacon, garlic, chicken and mushrooms.
- Cook, stirring, until heated through.
- Add scallions.
- Serve (over rice).
