Everything wonderful about Chicken Cordon Bleu but pressed into a crispy panini, this sandwich makes for a great lunch or dinner!

1 batch chicken milanese (*)
4 ciabatta rolls (or other bread)
butter (for spreading)
coarse dijon mustard (for spreading)
1/4 lb thinly sliced swiss cheese
1/4 lb sliced deli ham
homemade french fries
kale caesar salad
white bean salad

Steps:

  • Preheat panini press to high.
  • Slice the ciabatta rolls in half lengthwise. Butter the top and bottom of each roll.
  • Spread a little mustard on the bottom half of each roll. Layer on the cheese and ham by placing a slice of cheese on both the bottom and top pieces, and a piece of ham on just the bottom.
  • Place a piece of chicken on the bottom half of each sandwich. Top the sandwiches and move to the panini press.
  • Pressing down on the panini press, grill until the sandwiches are golden brown and the cheese is melted, about five minutes. The sandwiches are now ready to enjoy!

4 ounces cream cheese (light or regular, softened)
1 tablespoon Dijon mustard
1 tablespoon mayonnaise or sour cream
4 slices French bread (see note)
4 slices Swiss cheese
1 cup shredded cooked chicken (see note)
4-6 thinly sliced deli ham
Salt and pepper or garlic/herb seasoning - (see note)

Steps:

  • In a small bowl, stir together the cream cheese, Dijon mustard and mayo (or sour cream) until smooth.
  • For each sandwich: spread sauce on both sides of the bread (I spread a light coating on the outside of the bread and a more generous dollop on the inside of both pieces). Sprinkle the outside of each piece of bread with a bit of salt and pepper or a garlic/herb seasoning blend and place the pieces of bread seasoning side down.
  • Continue layering one slice of bread with a slice of Swiss cheese, cooked chicken, a couple slices of deli ham, and a final slice of Swiss cheese. Top with the other slice of bread (seasonings on the outside).
  • Cook the sandwich on a preheated panini press or on a hot griddle or skillet on the stove until golden and the cheese is melted. If using a skillet or griddle, flip as needed to cook through - you can also weigh the sandwich down with a heavy pan or skillet for a panini-like effect. Serve warm.

4 skinless, boneless chicken breast halves
¼ teaspoon salt
⅛ teaspoon ground black pepper
6 slices Swiss cheese
4 slices cooked ham
½ cup seasoned bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.
  • Pound chicken breasts to 1/4 inch thickness.
  • Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.
  • Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately.

2 boneless skinless chicken breasts, halved horizontally to make 4 cutlets
1/2 teaspoon coarse salt
1/8 teaspoon fresh ground black pepper
1/2 cup all-purpose flour
1 large egg, beaten
1/2 cup plain breadcrumbs
2 tablespoons extra virgin olive oil
1/4 cup honey
1/4 cup Dijon mustard
1/4 cup butter, at room temperature
8 slices rustic white bread, sliced from a dense bakery loaf
4 ounces sliced ham
4 ounces swiss cheese, sliced

Steps:

  • Season the chicken with salt and pepper on both sides. Set up a dredging station with the flour, beaten egg and bread crumbs each in its own separate shallow bowl.
  • In a large skillet, heat the olive oil over medium-high heat. Dredge each piece of chicken in the flour, then the egg, then the bread crumbs and place it carefully in the skillet.
  • Cook the chicken for 3 to 4 minutes on each side. Transfer the chicken to a wire rack or a paper towel-lined plate to drain.
  • For the panini: Heat the panini press to medium-high heat.
  • Whisk together the honey and Dijon mustard in a small bowl; set aside.
  • For each sandwich: Spread butter on two slices of bread to flavor the outside of the sandwich. Flip over both slices and spread 1 tablespoon honey mustard on the other side of each slice. Top one slice with a breaded chicken breast, followed by ham and cheese slices.
  • Close the sandwich with the other slice of bread, buttered side up.
  • Grill two panini at a time, with the lid closed, until the cheese is melted and the bread is toasted, 4 to 5 minutes.

  • Flatten chicken to 1/4-in. thickness; top each with ham and cheese. Roll up and tuck in ends; secure with toothpicks., Place butter in a shallow bowl. 1/4 teaspoon salt
1/8 teaspoon pepper
3 tablespoons butter
1 package (17.3 ounces) frozen puff pastry, thawed

1/8 cup white meat rotisserie-cooked chicken
4 slices deli ham
3/4 cup crumbled blue cheese

  • Preheat panini press. Place the roll bottoms on a work surface and top with the chicken and ham.

I've been on a HUGE panini kick lately, and am having fun creating a ton of them! This is just one of my recent ones. (*I can't recommend enough, purchasing a cast iron grill pan, I LOVE the one I got for Christmas!) I thought it would get stored and used ocaissionally, but it's permanant home is on the stove! I use it almost daily! I have the long one with the grill on one side, and the flat side on the other. It makes everything from paninis, to burgers to pancakes like you wouldn't believe! Highly recommend checking them out!

Number Of Ingredients 7

2 slices hearty bread
2 tablespoons mayonnaise
1 teaspoon spicy brown mustard or 1 teaspoon mustard, of your choice
1/2 cup cooked chicken, see note at bottom
2 slices prosciutto
2 slices swiss cheese, more if needed
olive oil

Steps:

  • Preheat whatever pan, griddle, etc., that you are using.
  • In very small bowl, mix mayo and mustard, set aside.
  • Spread evenly on 2 slices bread.
  • Top each slice of bread with the swiss cheese.
  • On one slice, top with chicken.
  • Scrunch up proscuitto, and place on top of chicken.
  • Top with other slice of bread.
  • Brush top with a little olive oil, evenly and thinly.
  • Place sandwich, olive oiled side-down onto hot pan.
  • Brush top lightly with more olive oil.
  • Press lightly once with spatula.
  • Grill/cook about 30 seconds to 1 minute, depending on how hot your pan is. Check to see for yourself. You want it lightly toasted with nice grill marks.
  • With your spatula, lift up a corner and hold it up with your fingers. Then slip the spatula underneath, and turn over carefully.
  • Brown other side the same way, and remove to cutting surface.
  • Cut in half diagonally and enjoy!
  • *Note: Any kind of chicken that you happen to have on hand works fine for this, such as leftover roasted, rotisserie, grilled, baked or stewed. Nice way to use up some leftovers and not feel like they're "leftover". Leftover turkey can be subbed as well.
  • *Also, the amount of chicken is just approximate. Make your sandwich how YOU like it using as much or little as you want.
  • Don't have proscuitto? That's ok, subbing a thin slice or 2 of any kind of ham is just fine. ;).

  • Place the flour, egg, and panko each into separate, shallow bowls. Whisk the egg slightly to blend it together. Season each piece of chicken with salt and pepper, and then coat each piece in flour, egg, and panko, in that order. Set the breaded chicken aside.
