ASIAN STEAMED SHRIMP

For a simple dish like this, it is essential that the shrimp be very fresh.

Number Of Ingredients 6

1 tablespoon brown rice wine
2 tablespoons soy sauce
1/2 teaspoon sugar
6 large bok choy or Chinese-cabbage leaves
24 large shrimp, shells left on (about 1 pound)
1 tablespoon thinly sliced scallion greens

Steps:

  • In a small bowl, whisk together rice wine, soy sauce, and sugar, and set aside.
  • Arrange bok-choy leaves in the two compartments of a bamboo steamer; divide shrimp between the two layers, and cover. Set steamer over a wok filled with 5 to 6 cups of water; place wok over medium heat, and steam until shrimp are cooked through, 8 to 10 minutes. Transfer shrimp to a serving plate, pour the sauce over, and garnish with scallion. Serve immediately.

20 large tiger prawns with shell
2 tablespoons light soy sauce
5 cloves garlic, minced
1 teaspoon brandy

Steps:

  • Wash prawns thoroughly and leave on shells and heads. In a bowl, mix the soy sauce, garlic, and brandy. Arrange the prawns on a dish, and cover with the soy sauce mixture.
  • Fill a pot or wok about 1/2 full with water. Place a steamer basket over the water, and bring water to a boil. Place the dish with the shrimp onto the steamer basket. Cover wok, and steam prawns for 10 minutes, until opaque. Serve hot.

1 pound fresh shrimp
salt to taste

Steps:

  • Set a steamer basket into a heavy saucepan and pour in enough water, so the steamer basket sits just on top of the water without touching it. Remove steamer basket and bring water to a boil.
  • Meanwhile, butterfly the shrimp with a sharp paring knife, carefully running the knife 1 inch down the bottom of the shrimp without cutting all the way through. Press shrimp open.
  • Set shrimp into the steamer basket and sprinkle with salt. Set steamer basket over the boiling water (shrimp should not touch the water).
  • Steam shrimp until they are bright pink on the outside and the meat is opaque, carefully moving shrimp around using tongues so they cook evenly, about 5 minutes.
  • Serve immediately or chill for later use.

  • Prepare the dipping sauce first. Mix the minced ginger and minced scallion in a small heat-proof bowl. Heat up 1 tablespoon of oil until it just starts to smoke, and pour it over the ginger and scallion to flash fry the mixture. Now, add the light soy sauce, water, sugar and black vinegar. Stir until the sugar is completely dissolved. That’s the sauce!
  • Next, trim, de-vein, and clean the shrimp as shown in the step-by-step photos. Rinse, drain and set aside.
  • In a medium pot, add 5 cups of water, 3 slices of ginger, the 2 whole scallions, 1½ tablespoons salt, and 2 tablespoons Shaoxing wine. Bring the mixture to a boil. Add the shrimp and stir slowly. The shrimp will cook very fast, and they’re done once they’ve turned completely pink. It should only take a minute. Scoop the shrimp out of the pot immediately to avoid overcooking. Plate and serve with the dipping sauce!

  • For the cilantro green chili version, pound the minced green chilies and 1/4 teaspoon salt together in a mortar and pestle. Set aside for 30 minutes. Then mix in the cilantro, sugar, water, light soy, and shaoxing wine.
  • Spread out the glass noodles in two shallow, heat-safe bowls. Fan out equal amounts of shrimp on each plate. Spoon the prepared sauces evenly over each of the shrimp dishes.
