ASIAN PLUM SAUCE
This sauce is full of flavor. It's tangy, salty, spicy! Serve over or along side fried tofu, chicken or pork. Before serving garnish with fresh sliced scallions (green onions).

Steps:
- Place first 11 ingredients into pot.
- Bring to a boil then simmer 30 minutes.
- Mix water and cornstarch.
- Blend in a blender the solids from the pot with the cornstarch mixture and put back with the liquid simmering all the while.
- Simmer till thickened.
- Pour into sterilized jars (size you like) and put into a water bath for 10 minutes.
- Remove jars from water bath cool and store in a cool dark place.
GRILLED SALMON WITH HOISIN GLAZE AND PLUM-GINGER RELISH

Steps:
- In medium bowl, stir together plums, ginger, and vinegar. Refrigerate until ready to serve.
- Prepare grill for cooking: If using charcoal grill, open vents on bottom, then light charcoal. Charcoal fire is medium-hot when you can hold your hand 5 inches above rack for 4 to 5 seconds. If using gas grill, preheat burners on high with hood closed 10 minutes, then turn down to moderately high.
- Rub salmon fillets on both sides with oil and sprinkle with salt and pepper. Arrange fillets on grill, skin sides down. Grill, turning once, until just cooked through, about 6 to 8 minutes per side, brushing with hoisin sauce during last 30 seconds of cooking on each side.
- Transfer fillets to platter and sprinkle with scallions and sesame seeds. Serve, passing plum relish on side.
GLAZED BROILED SALMON
This recipe is my own version of one from the Wild Oats website. Simple, quick and delicious. The time in the oven is approximate. You can also easily grill this instead if you like. Enjoy!

Steps:
- Preheat oven to broil
- Mix glaze ingredients together.
- Clean and de-bone salmon.
- Coat one side of the salmon with the glaze. Place on a baking sheet.
- Broil salmon within 8-10 inches of the coils, be careful not to get too close you don't want it cooking too fast.
- It is done when it opaque and flakes easily in the center.

ALDER GRILLED FRESH ALASKAN KING SALMON WITH A LIGHT JUNIPER AND SAGE MARINADE
Steps:
- Preheat a grill.
- Whisk together celery seed, garlic, lemon pepper, onion, chopped sage leaves, thyme, oil, balsamic vinegar, wine, plum vinegar, and a dash of water (quantities of liquid and dry spice ingredients are best adjusted to individual taste). Place alder chips over coals of grill to add flavorful smoke (mesquite may be substituted). Dredge fillets lightly in marinade then rub in juniper berries and a few whole sage leaves. Place on hot grill (medium high if controllable). Cook for about 10 minutes per side. (Salmon is best cooked until it is still moist, but flesh starts to flake easily with a fork and translucency is gone. Salmon is a bit forgiving, so if it's not quite done, put it back on the grill...but don't cook it until it dries out!) Garnish with lemon slices.
PAN-ROASTED SOY-LACQUERED SALMON
Steps:
- In a bowl large enough to accommodate the salmon, mix the sake, soy sauce, mirin, and miso until the miso has dissolved. Add the garlic, ginger, cilantro, and salmon fillets. Cover and marinate for at least 20 minutes and up to 2 hours in the refrigerator.
- Heat the oven to 400 degrees F.
- Season the salmon with salt and pepper on both sides. Heat the oil in an ovenproof nonstick skillet over medium-high heat. When the oil is hot, add the salmon skin side down. Put the pan into the oven and roast until the salmon is cooked medium-rare, about 12 to 15 minutes. Serve garnished with cilantro leaves and lime wedges.
EASY BROILED SALMON
This delightful recipe appeared in one of DH's business magazines. It is both easy and delicious. Coating the salmon with mayonnaise before broiing keeps it moist and imparts wonderful flavor. You can use low-fat mayonnaise in this recipe. The recipe also works with swordfish, tuna, or halibut steaks. Steaks are preferred over fillets as they have an even thickness making for even cooking.

- Preheat broiler.
- Whisk together mayonnaise, mustard, and paprika in a bowl. Smear almost one-half on one side of salmon lightly.
- Broil salmon about 3 inches from flame for 4 minutes.
- Turn steaks and smear rest of dressing mixture on them. This coating should be a bit heavier than that on the other side. Broil for another 4 minutes.
- NOTE: Don't be afraid to substitute other mustards for the Dijon. I found a mustard with dill that works perfectly. I also like the Jack Daniels mustard. Or substitute 1/2 teaspoon dry mustard with lemon pepper for the paprika.

- Put the fish in a plastic bag with all the other ingredients and seal it with as much air pushed out as possible. Marinate for at least an hour, up to three.
- When you are ready to cook, turn on the broiler in the oven. Then make a little dish out of aluminum foil with sides. Slide the fish on your 'dish' and add a little of the marinade on top. Put the fish skin side down.
- Broil for 5-7 minutes.

BROILED SALMON
My husband loves Salmon and this is a quick and easy way to make a great supper. Just throw it together with a spinach salad with balsamic vinaigrette or your favorite fresh green. Also nice with hot rolls or garlic Vrench bread. Tips- Stay by your timer. Especially if you are not used to broiling. When it is ready to turn or take out, it is ready. You can by the Salmon pre-seasoned or season it from below.

- Spray broil pan with Pam.
- Lay salmon skin side down.

CRISPY ASIAN SALMON WITH STIR-FRIED NOODLES, PAK CHOI & SUGAR SNAP PEAS

- Make the marinade by mixing together all the ingredients. Place the salmon fillets in a small bowl and spoon over the marinade, turning the fish so that it's nicely coated. Cover with cling film and leave to sit for 10 mins (or longer if you have time).
- Meanwhile, cook the noodles following pack instructions, then drain and sit them in a bowl of cold water.
- Heat a non-stick frying pan. Add the salmon fillets, skin-side down, and leave for 3 mins. When the fish is slightly crispy, flip over and cook for a further 3 mins on the other side. Just before you remove the fish from the pan, add any remaining marinade and let it sizzle for 10 secs. Place 2 of the fillets, skin-side up, with their juices on a plate and cover with foil to keep warm. Put the other 2 fillets on another plate if using for Flaked salmon salad (see 'goes well with'), cover with foil, leave to cool, then chill.
- In a frying pan or wok, heat the rapeseed and sesame oils over a high heat. Add the spring onion, garlic, chilli and ginger, and stir constantly for about 1 min. Add the sugar snap peas, pak choi and pepper, and stir for another 1-2 mins, then add the cooked noodles. Toss well, then add the soy sauce, fish sauce and lime juice, and mix until well combined and the pan is sizzling.
- Remove from the heat and divide between 2 bowls. Top each with a salmon fillet and drizzle over any juices. Sprinkle with coriander and serve.

- Rinse salmon filets and pat dry with paper towels. Place fish on cedar planks, season with kosher salt and black pepper and put planks on a large baking sheet.
- Melt butter over medium heat in a small saucepan. Add ginger and cook for 1 minute. Add Bonne Maman Golden Plum Mirabelle Preserve to saucepan, mixing well with butter and ginger and cook for 2-3 minutes or until flavors have melded. Remove from heat.
- Coat each filet with at least 2 tablespoons of jam mixture, top with a sprinkling of Marcona almonds and add a few slices of serrano pepper to each filet. Bake in oven for 10-12 minutes.
