ASIAN NOODLE SALAD

8 ounces thin spaghetti
One 8-ounce bag julienne/fine-cut carrots (about 1 1/2 cups)
One 6-ounce bag baby sweet peppers, seeded and sliced thinly into rings (about 1 cup)
One 4-ounce bag bean sprouts (about 1 cup)
3 English cucumbers, halved, seeds removed and sliced
3 scallions, sliced
Up to 1 bunch fresh cilantro, chopped
1/2 head or more napa cabbage, sliced
1/2 head or more purple cabbage, sliced
1/2 bunch kale, leaves torn off the stalks and shredded
2 cups peanuts, chopped
1/2 cup olive oil
1/3 cup low-sodium soy sauce
1/4 cup oyster sauce
1/4 cup rice wine vinegar
1/4 cup brown sugar
3 tablespoons chopped fresh ginger
2 tablespoons sesame oil
2 to 3 cloves garlic, chopped

Steps:

  • For the salad: Bring a pot of water to a boil. Cook the spaghetti to al dente according to the package directions. Drain, rinse and let cool.
  • Mix together the cooked spaghetti, carrots, peppers, bean sprouts, cucumbers, scallions, cilantro, napa cabbage, purple cabbage and kale. Add the peanuts and toss together.
  • For the dressing: Whisk together the olive oil, soy sauce, oyster sauce, rice wine vinegar, brown sugar, ginger, sesame oil and garlic in a medium bowl.
  • Pour the dressing over the salad and mix together with tongs or your hands. If the salad seems a little dry, just mix up a little more of the wet ingredients of the dressing and throw it in. It's a very organic process.
  • Transfer to a large platter and serve.

1/8 cup rice wine vinegar
1 shallot clove, quartered
1/2 teaspoon salt
1/8 teaspoon black pepper
2 teaspoons tahini or peanut butter
1 tablespoon sesame seeds
1/2 cup sesame oil
6 cups mixed mesclun greens, soaked in salt water to remove grit, dried in a salad spinner and torn into bite sized pieces
1 cup baby corn from a jar or can
1 (8-ounce) can Mandarin orange segments, drained
1 red bell pepper, stem and seeds removed and sliced julienne
1 (4-ounce) can water chestnuts, rinsed to remove any tinny taste
1 cup grape tomatoes, halved

Steps:

  • Add 1 at a time through the feed tube of a running blender, vinegar, shallot, salt, pepper, tahini, and sesame seeds. Leaving the blender running add the oil in a slow thin stream. Set aside briefly.
  • Toss greens, corn, orange, bell pepper, water chestnuts, and tomatoes together in a large bowl with enough dressing to coat. Serve with additional dressing on the side.

1 (8 ounce) package soba noodles
1/4 cup chopped cilantro leaf
1/4 cup toasted sesame seeds
1 (14 ounce) package tofu, firm
2 tablespoons toasted sesame oil
3 tablespoons tamari
3 tablespoons balsamic vinegar
1 tablespoon hot pepper oil (skip this for the tots)
chopped red cabbage
finely slice radish
sliced scallion

Steps:

  • Make the dressing in a small bowl by combining all ingredients and whisking together.
  • Cube the tofu and marinade it in the dressing.
  • Cook the soba noodles according to package instructions.
  • Place drained noodles in large bowl and add dressing with tofu, cilantro, and sesame seeds.
  • Add any additional vegetables and toss gently and thoroughly.

I concocted this while in a pinch over not having all the ingredients on hand for my traditional Recipe #39439 to take to a potluck. I remembered I had Kraft Asian Toasted Sesame Dressing and Marinade on hand and how much it resembled the dressing in my other recipe. I made this very quickly and it was completely devoured at the potluck. I had many requests for the recipe. This recipe is potluck size, but you can adjust it to the size of your family or number of desired servings. One pound of spagetti gave about 30 servings and it was ALL gone. Not a drop left.

1 lb spaghetti or 1 lb linguine, cooked
3 -4 green onions, chopped in long strips
1 large carrot, peeled, julienned
1 teaspoon garlic, from the jar (or to taste)
1 -2 teaspoon chopped fresh ginger, from the jar (or to taste)
1/2-1 cup kraft asian toasted sesame dressing (adjust for desired flavour or consistency) or 1/2-1 cup marinade (adjust for desired flavour or consistency)
1/4 teaspoon chili pepper flakes (adjust to taste)
1/4 cup toasted sesame seeds (adjust to taste)

Steps:

  • Boil pasta in salted water til cooked. Drain and run cold water to cool.
  • While pasta is cooking, chop onions and carrots. Toss into a large tupperware container.
  • Add ginger, garlic and optional red pepper flakes to the carrots and green onions. Stir to mix thoroughly.
  • Shake Kraft Asian Toasted Sesame dressing and pour into the carrot/onion/ginger/garlic mixture. Stir to thoroughly coat. Add more or less to your desired coverage. A little goes a long way.
  • Once pasta is completely cool, slowly add to the dressing mixture and toss until coated. Add more dressing until coated to your satisfaction/taste. You don't need alot because it has quite a bit of flavour.
  • Add more ginger/garlic/red pepper flakes for desired taste. Add sesame seeds.
  • Cover with a lid, put in fridge to chill and keep cool until ready to serve. Just before serving you may want to add a bit more dressing to mix around.

16 oz fettuccine noodles cooked
1/2 bottle KRAFT Asian Toasted Sesame Dressing
3-4 green onions
2 tablespoons of soy sauce
3 grilled chicken breasts from the freezer section
1 can sliced water chestnuts
Garnish with toasted sesame seeds

Steps:

  • Boil fettuccine noodles in salted water. Drain and put in a large mixing bowl. Add KRAFT Asian Toasted Sesame Salad Dressing while noodles are still hot to mix properly.
  • Dice green onions and add to pasta. Add drained can of water chestnuts to pasta along with soy sauce. Toss diced chicken and all other ingredients together and add a sprinkle of toasted sesame seeds on top of each serving.
  • Refrigerate for 4 hours or overnight to bring out all the flavors. Enjoy!

This is yet another version of asian salad. I love snow peas when they are in season so I cannot resist adding them to this salad. We enjoy this dish in the summer and spring for our main dish, and absolutely love it.

1 (8 -10 ounce) package ramen noodles
1/2 lb snow peas, cut in half
1 lb pork tenderloin, cut into 1/4 inch slices
1 teaspoon gingerroot, finely chopped
1 medium bell pepper, cut into strips
1 cup shredded carrot
8 medium green onions, sliced
1 tablespoon sesame seeds, toasted
1/2 cup rice vinegar
1/4 cup honey
2 tablespoons vegetable oil
2 tablespoons sesame oil
1 tablespoon soy sauce

Steps:

  • Make sesame dressing by shaking all ingredients in a tightyly covered container.
  • Set aside.
  • Cook noodles as directed on pkg, adding snow peas for last 1 to 2 minutes; drain.
  • Pinse with cold water; drain.
  • Spray 10 inch skillet with cooking spray.
  • Cook pork and gingerroot in skillet 4 to 6 minutes, stirring occasionally, until pork is slightly pink in center.
  • Toss noodles, bell pepper, carrots, onions and pork with half of the dressing.
  • Sprinkle with sesame seed.
  • Serve with remaining dressing.

1/3 cup warm water

1 1/2 tablespoons sesame oil
3 teaspoons honey
1/2 teaspoon crushed chili pepper flakes (or to taste)

2 tablespoons vegetable oil
4 green onions, chopped
1 red bell pepper, seeded and cut into thick strips

Steps:

  • Cook the pasta in a large pot of boiling salted water until tender; drain and rinse well under COLD water, then toss with 2 tablespoons vegetable oil, transfer to a large bowl, then add in the red bell pepper and green onions.
  • Using a blender puree all the dressing ingredients until smooth (about 2 minutes).
  • Just before serving pour the dressing over the cooked pasta and veggies, then add in the toasted sesame seeds; toss well to combine.
  • Sprinkle with chopped green onions if desired and serve.
