Delicious and bursting with flavor, Asian lettuce wraps are a great idea for entertaining or a family style meal. Each person can build their own fresh, delicious wrap. Just be sure to have plates or napkins available since the mixture can sometimes drip a little. To serve, allow each person to spoon a portion of the meat into a lettuce leaf. Wrap the lettuce around the meat like a burrito and enjoy!

16 Boston Bibb or butter lettuce leaves
1 pound lean ground beef
1 tablespoon cooking oil
1 large onion, chopped
¼ cup hoisin sauce
2 cloves fresh garlic, minced
1 tablespoon soy sauce
1 tablespoon rice wine vinegar
2 teaspoons minced pickled ginger
1 dash Asian chile pepper sauce, or to taste
1 (8 ounce) can water chestnuts, drained and finely chopped
1 bunch green onions, chopped
2 teaspoons Asian (dark) sesame oil

Steps:

  • Rinse whole lettuce leaves and pat dry, being careful not tear them. Set aside.
  • Heat a large skillet over medium-high heat. Cook and stir beef and cooking oil in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease; transfer beef to a bowl. Cook and stir onion in the same skillet used for beef until slightly tender, 5 to 10 minutes. Stir hoisin sauce, garlic, soy sauce, vinegar, ginger, and chile pepper sauce into onions. Add water chestnuts, green onions, sesame oil, and cooked beef; cook and stir until the onions just begin to wilt, about 2 minutes.
  • Arrange lettuce leaves around the outer edge of a large serving platter and pile meat mixture in the center.

For the marinade:
1 teaspoon fish sauce
1 tablespoon soy sauce
1 tablespoon rice wine vinegar
2 tablespoons orange juice
2 tablespoons plus 2 teaspoons vegetable oil
1 (2-inch) piece fresh ginger, peeled and minced (about 1 tablespoon)
2 cloves garlic, minced (about 1 tablespoon)
1/4 teaspoon dried chile flakes
1 scallion, green and white parts, sliced
8 to 12 ounces boneless, skinless chicken thighs (about 4 thighs, or 2 thighs and 2 legs), cut into small cubes or stripsFor the slaw:
3 tablespoons rice wine vinegar
2 tablespoons orange juice
1/4 teaspoon dark (asian) sesame oil
1/2 teaspoon salt
1/4 teaspoon grated fresh ginger
1 thick carrot (about 4 ounces), cut into 1/8-inch strips
1 cucumber, cut into 1/8-inch strips
2 stalks celery, sliced 1/4 inch thick diagonally
2 to 3 scallions, white and green parts, sliced on the diagonal
16 lettuce leaves (romaine, Boston, Bibb, or green or red leaf)
2 tablespoons roasted salted peanuts, coarsely chopped

Steps:

  • Make the marinade.Combine the fish sauce, soy sauce, vinegar, orange juice, 2 tablespoons oil, the ginger, garlic, chile flakes, and scallion in a medium bowl. Add the chicken and stir to coat the meat. Cover the bowl and place in the refrigerator, letting the chicken marinate for at least 30 minutes.
  • Meanwhile, prepare the slaw. Whisk together the vinegar, orange juice, sesame oil, salt, and ginger in a large bowl. Toss the vinaigrette together with the carrot, cucumber, celery, and scallions. Taste for seasoning and adjust as needed.
  • To prepare the lettuce, rinse and pat the leaves dry. Transfer to the refrigerator until ready to use. (If you choose romaine, use the leafy top part of the lettuce for the wrappers. You can tear off the stiffer bottom stem half, chop it up, and add it to the slaw for extra crunch if you like.)
  • Cook the chicken. Heat 2 teaspoons oil in a large skillet or wok over medium-high heat. Add the marinated chicken and marinade and cook for 5 to 7 minutes, stirring often, until the chicken is firm to the touch and beginning to brown. Stir in the peanuts.
  • To assemble and serve, set out the slaw and chicken in bowls along with a platter of the lettuce. Wrap a scoop of slaw and chicken in each lettuce leaf. Have a napkin handy!

2 scallions, chopped

  • 1 head Boston lettuce, leaves separated, cleaned and dried In a skillet over medium-high heat, add the vegetable oil and saute beef until brown. Stir in ginger, scallions, garlic, soy sauce, red pepper flakes, and hoisin and cook for 1 minute. Remove from the heat and stir in the peanuts. Season with salt and pepper and serve warm wrapped in lettuce cups.

1 tablespoon brown sugar
2 tablespoons japanese miso (or Korean toenjang bean paste)
1 teaspoon sesame seeds
8 pieces leaves lettuce leaves
8 pieces basil leaves (or other fresh herb, such as cilantro)
1 tablespoon olive oil
3 ounces firm tofu, cubed
1/2 avocado, peeled
1/4 red bell pepper, seeded
2 1/2 ounces white radishes, julienned (or daikon)
2 ounces bean sprouts, raw
2 teaspoons sesame oil
2 teaspoons sesame seeds
2 teaspoons brown sugar
1 1/2 teaspoons salt
1 teaspoon paprika (or Korean red pepper powder)
2 small cucumbers, peeled and diced

Steps:

  • To make Miso Sauce:.
  • Place brown sugar in heavy saucepan, and melt over medium-low heat, being careful not to burn. Remove from heat, and stir miso and sesame seeds into melted sugar.
  • To make Wrapping:.
  • Trim edges of lettuce leaves to make them uniformly circular. Stack sesame or basil leaves alongside.
  • To make Salad:.
  • Heat oil in skillet or wok over medium-high heat, and stir-fry tofu about 2 to 3 minutes. Remove from heat, and set aside.
  • Slice avocado into 1½-inch-long pieces. Slice red pepper into 1 ½-inch-long pieces. Set aside.
  • Combine white radish with 1 teaspoon sesame oil, 1 teaspoon sesame seeds, 2 teaspoons brown sugar, ½ teaspoon salt and 1 teaspoon red pepper powder. Set aside.
  • Combine bean sprouts with 1 teaspoon sesame oil, 1 teaspoon sesame seeds and 1 teaspoon salt.
  • To assemble rolls, place 1 lettuce leaf on flat surface, and layer remaining ingredients in following order: basil leaf, bean sprout mixture, radish mixture, tofu, cucumber, avocado and red pepper. Spoon about ½ teaspoon Miso Sauce over top. Wrap by tucking ends in, and roll up. Repeat with remaining ingredients.

16 leaves boston bibb lettuce
1 lb lean ground beef
1 tablespoon cooking oil
1 large onion, chopped
2 fresh garlic cloves, minced
1 tablespoon soy sauce
1/4 cup hoisin sauce

1 tablespoon rice wine vinegar
1 (8 ounce) can water chestnuts, drained and finely chopped

Steps:

A few months back I posted this recipe for Spicy Basil Lettuce Chicken Wraps. Made with PF Chang's lettuce wraps in mind, I created the aformentioned recipe as a healthier alternative. PF Chang's version is laden with calories, carbohydrates (22% of your daily recommended value) and unhealthy fats (15% of your daily recommended saturated fat allocation). 2 (14 ounce) cans chickpeas, drained and rinsed
1 tablespoon thai style chili sauce
2 tablespoons hoisin sauce
1 tablespoon low sodium soy sauce
1 tablespoon olive oil
2 tablespoons rice vinegar
1/2 tablespoon sugar
1 teaspoon red pepper flakes
1 tablespoon hot sauce (optional)
1/2 cup chopped basil (optional)
6 -8 lettuce leaves, Bibb, boston or 6 -8 romaine leaves

Steps:

  • Drain and rinse both cans of chickpeas.
  • Place chickpeas in a food processor and puree in 5-10 second increments. You do not want to turn the chickpeas into a mash, you simply want to grind them into pieces.
  • Add 1 tbsp of olive oil to a pan and heat.
  • Add the chickpeas and let cook over medium heat for 3-4 minutes, continuously stirring so as not to burn.
  • Add remaining ingredients, except basil, and stir. Cook over low heat for 10 minutes, stirring occassionally.
  • If using basil leaves, add them and cook for 1-2 minutes, stirring the basil in and allowing it to wilt.
  • Wash lettuce leaves and pat dry.
  • Spoon a healthy serving of chickpea mixture onto lettuce wraps and serve immediately. Drizzle with sirachi sauce if desired.

1 1/4 lbs 96% lean ground beef (or any ground meat you prefer)
1 tablespoon olive oil
1 cup onion, roughly chopped
4 garlic cloves, diced
1 inch piece ginger, diced
3/4 cup water chestnut, roughly chopped
5 tablespoons hoisin sauce
1 tablespoon soy sauce
bibb lettuce
shredded carrot
roughly chopped peanuts
toasted sesame seeds
chopped green onion

Steps:

  • Heat 1 tbsp olive oil in a large pan. Add in the ground beef and break it apart with a cooking spoon into smaller pieces. Season with salt and pepper to taste and cook till no longer pink. Set aside on a separate plate.
  • In the same pan, cook the onion, garlic, and ginger for 3-4 minutes. Add the meat and water chestnuts into the pan.
  • Stir in the hoisin sauce and soy sauce and cook everything together for a few minutes.
  • To serve, place the meat mixture in the lettuce cups and top with shredded carrots, peanuts, sesame seeds, green onion, and extra hoisin sauce.

1/2 lb ground pork
