ASIAN BRAISED PORK SHOULDER

Extra-virgin olive oil
One 3-pound pork shoulder, cut into 4 to 5 pieces
Kosher salt
5 cloves garlic, smashed and finely chopped
One 2-inch piece ginger, peeled and grated
1/2 cup soy sauce
1/2 cup rice wine vinegar
3 to 4 cups chicken stock
1 cup oyster sauce
1/2 cup brown sugar
1/4 cup sambal oelek
3 star anise
Zest and juice of 1 orange, zest removed in wide strips with a peeler

Steps:

  • Preheat the oven to 300 degrees F.
  • Coat a large wide ovenproof pan or Dutch oven with olive oil and bring the pan to high heat. Sprinkle the pork with salt and brown it on all sides. Remove from the pan and reserve.
  • Ditch the fat from the pan and add a few drops of fresh oil. Toss in the garlic and ginger and cook for 1 to 2 minutes. Add the soy sauce and rice vinegar and reduce by half. Add the 3 cups chicken stock, oyster sauce, brown sugar, sambal, star anise, orange zest and juice. Stir to combine, bring to a boil and reduce to a simmer. Taste to make sure it is delicious and adjust the seasoning if needed.
  • Return the pork to the pan, cover and put in the oven. Braise the pork for 2 hours, turning it over once. If the liquid reduces too much during the cooking process, add the remaining 1 cup chicken stock. Remove the lid for the last 30 minutes of cooking.
  • When the pork is VERY tender, remove the pan from the oven. Remove the pork, place the pan over medium heat, bring the liquid to a simmer and cook until the liquid reduces to a sticky sauce consistency.
  • Serve the pork draped with the sauce.

1/2 teaspoon ground black pepper

2 tablespoons canola oil
2 shallots, finely diced
1 cup low sodium chicken stock
1/2 cup ketchup
2 tablespoons gochujang

2 tablespoons rice vinegar
1 teaspoon toasted sesame oil
1/4 cup rice vinegar

Steps:

  • For the Korean pulled pork: Remove the pork from the refrigerator 30 minutes before cooking.
  • Whisk together the soy sauce, gochujang, hoisin, ketchup, vinegar, honey, sesame oil, five-spice powder and pepper until smooth. Rub the pork with the marinade, cover and refrigerate for at least 4 hours and up to 24 hours.
  • Prepare the Caja China according to manufacturer's directions. Cook until the pork reaches 190 degrees F, 3 to 3 1/2 hours. Remove the pork, place in a baking pan, tent with foil and let the pork rest for 20 minutes. Reserve the juices for the BBQ sauce.
  • For the Korean BBQ sauce: Heat the oil in a medium high-sided saute pan. Add the shallots and cook until soft. Whisk in the reserved juices from the pork, the chicken stock, ketchup, gochujang, honey, soy sauce and five-spice powder and cook until slightly reduced. Remove from the heat, add the vinegar and sesame oil.
  • For the Asian slaw: Whisk together the vinegar, honey, sesame oil, and soy sauce until the honey is dissolved. Add the peas, carrots, cabbage and sesame seeds. Toss to combine; season with salt and pepper. Cover and refrigerate until cold, at least 1 hour.
  • For serving: Using tongs, pull the pork into bite-size bits. Toss with the BBQ sauce. Mound some slaw on the bottoms of the buns. Top with the pork and the top bun.

For The Pork Butt:
1 pork butt (between 10-15 lbs)
1 asian pear , grated
1/2 cup soy sauce
1 Kirin beer(or another Japanese rice beer)
salt and pepper
oil for searing the meat
For The Asian Slaw:
2 cups red cabbage
3 tbsp chopped apple
2 tbsp shredded carrot
1 tbsp diced red onion
2 tbsp mayo
1 tbsp seasoned ricewine vinegar
1/2 tsp sesame oil
1 pinch sugar
1 pinch salt
For The Sandwiches:
10 slider buns (I recommend using King's Hawaiian)
2 cups pulled pork
1 cup asian slaw
10 sweet n spicy pickle chips Asian bbq sauce

Steps:

  • Begin by seasoning the butt. Heavily salt and pepper the butt while massaging into the meat.
  • Heat a large cast iron skillet over high heat.
  • Add oil to the bottom of the pan and quickly add in your pork butt. Let the meat sear for a few minutes until the exterior is crispy and golden.
  • Continue flipping and browning the meat until most of the sides are crispy.
  • Put your browned pork butt in a large crock pot and add the grated pear, the soy sauce and the Kirin beer.
  • Let the pork butt cook over low heat for at least 6 hours or until the meat is tender and practically falling off the bone.
  • In a large bowl, combine the mayo, rice wine vinegar, sesame oil, sugar, and salt and mix until smooth.
  • Add in the cabbage, apple, carrots and red onion and stir.
  • Let sit for 20 minutes before using.
  • Split and broil your buns in the oven until lightly golden.
  • Evenly distribute the pork, the asian bbq sauce, the slaw and lastly the sweet and spicy pickles.

1/2 cup water
3 tablespoons brown sugar

  • Whisk together first 8 ingredients. Place roast in a 6-qt. slow cooker. Pour soy sauce mixture over top. Cook, covered, on low until pork is tender, 8-10 hours. , About 1 hour before serving, mix first 5 slaw ingredients until blended. Place coleslaw mix in a large bowl; toss with dressing and, if desired, sesame seeds. Refrigerate, covered, until serving., Remove roast; skim fat from cooking juices. Shred pork with 2 forks; return to slow cooker and heat through. Serve in tortillas with slaw. If desired, serve with green onions and additional chili sauce. Freeze option: Freeze cooled pork mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water or broth if necessary.

1/4 cup seasoned rice vinegar

Recipe is for a crock pot! Delish and easy! This is based off of a traditional Char Siu sauce, but true to my nature I can never leave well enough alone! I modified this recipe a lot. I just couldn't help myself. Also, the meat is usually prepared over fire or roasted, but I really wanted to find a recipe that worked well in a slow cooker and I think I accomplished that by making my mods. Hope you like it too! ENJOY!

3 lbs pork shoulder or 3 lbs tenderloin
1/2 teaspoon black pepper
1/4 teaspoon salt (or to taste)
1 large yellow onion, cut in large chunks
1/2 cup water
2/3 cup hoisin sauce (I use Koon Chun Sauce Factory brand)
1/2 cup honey
1/2 cup low sodium soy sauce
1/2 cup water
1 tablespoon sesame oil
3 tablespoons mirin
1 tablespoon rice wine (shaoxing)
2 inches lemongrass, fresh, finely diced
2 tablespoons ginger, fresh, finely grated
2 garlic cloves, finely grated
1/2 teaspoon Chinese five spice powder

Steps:

  • In a small sauce pan add the following items: hoisin sauce, honey, soy sauce, ½ cup of water, sesame oil, mirin, shaoxing rice wine, lemongrass fresh, ginger, garlic, and the Chinese five spice powder.
  • Whisk together. Reserve 1/4 cup for basting and set the pan with the rest of the sauce on the stove over low hit to thicken. About 30 min, whisking occasionally to prevent burning. Remove from heat and set aside to cool completely.
  • Place onion chunks in bottom of crock pot and set as low. Salt and pepper the pork on both sides and place on top of the onions.
  • Baste top and sides of pork with the reserved sauce. Add the lid and cook for 6-8 hours on low or 3-5 hours on high. You will know it's done when it is falling apart. YUM!
  • Add the cooled Korean inspired BBQ sauce reduction to a magic bullet or blender and blend until smooth. Set aside. Will keep in fridge for 2 weeks.
  • I use this for Asian pork tacos or pulled pork sliders. Serve either one topped with shredded green and purple cabbage, thinly slices quick-pickled radishes and cucumbers, green onion, cilantro and basil. Dress with a drizzle of spicy sriracha aioli and a drizzle of the Korean inspired BBQ sauce reduction.

1 tablespoon soy sauce
2 tablespoons red onions, finely minced
1/2 teaspoon fresh ginger, finely grated
8 slider buns (or mini potato rolls)
6 cups coleslaw mix with carrots (14 ounce bag)
3 tablespoons freshly squeezed lime juice (not bottled)
3 tablespoons olive oil
2 tablespoons mayonnaise
1/4 teaspoon kosher salt
1/2 teaspoon granulated sugar
1 jalapeno pepper, seeded if desired, then thinly sliced (can sub a squirt of Sriracha)
1/2 cup fresh cilantro leaves, roughly torn

Steps:

  • Make the Tri-Color Asian Slaw: Put all ingredients in a bowl and toss well. Let the slaw sit at least 15 minutes before serving.
  • Make the sliders: Preheat a grill to medium heat.
  • Put the pork, soy sauce, red onion, and ginger in a large bowl and stir together to incorporate. Form 8 patties, using 3 to 4 tablespoons of pork mixture in each one and shaping them 1/2-inch thick. Be sure not to overwork or overhandle the mixture.
  • Grill the burgers over direct heat, turning once, until fully cooked through, 5 to 7 minutes per side.
  • Toward the end of the sliders' grilling time, grill the buns: Slice them in half if necessary, then grill the cut sides until lightly marked and lightly toasted, about 1 minute.
  • Let the sliders rest on a platter or cutting board for 5 minutes after grilling, then set 1 slider in each bun and top with Tri-Color Asian Slaw. Serve.
