FREEZE-AND-REHEAT BREAKFAST BURRITOS
This recipe for hearty breakfast burritos is intended to be made in a large batch so that individual burritos can be frozen and reheated as needed. Making these in advance and freezing is a big time-saver for busy mornings!

Steps:
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on paper towels and crumble into bits. Keep skillet warm.
- Whisk eggs, milk, and salt together in a bowl. Pour into the hot skillet. Cook and stir over medium-high heat until eggs are set, about 5 minutes. Transfer to a bowl.
- Heat oil in same skillet over medium-high heat. Add frozen potatoes, garlic salt, and pepper. Fry until browned on the bottom, 4 to 5 minutes. Flip and cook until other side is browned, 4 to 5 minutes more. Let cool.
- Cut 10 squares of aluminum foil slightly larger than the tortillas. Lay 1 tortilla on each square; evenly distribute Cheddar cheese on top. Add eggs, bacon, salsa, and potatoes to each tortilla, in that order. Tightly roll the burritos, tucking tops and bottoms in first.
- Wrap aluminum foil tightly around each burrito, covering it completely. Place in resealable plastic bags in a single layer. Remove as much air as possible from the bags before sealing. Store in the freezer until ready to reheat.
- Reheat by removing the aluminum foil, placing the burrito on a microwave-safe plate, and topping it with a paper towel. Heat in the microwave until evenly warmed through, 1 to 2 minutes.

- Preheat oven to 400 degrees F.
- Line a large baking sheet with parchment paper so it over hangs on the sides. Place bacon pieces flat on the sheet, it's ok if the sides touch. Bake for 20 minutes or until desired crispiness.
- In a non stick skillet over low heat, add butter or some bacon grease to the pan. Crack eggs, whisk them well, add a splash of milk if you like, then pour into the pan. There should be no sizzling and it will look like the eggs are not cooking, but gently move the eggs with a spatula around the pan every 30 seconds or so. Turn off the heat right before the eggs are fully cooked and season with salt and pepper. Remove cooked eggs from pan and set aside.
- Warm flour tortillas in the microwave to make them more pliable, about 20-30 seconds. Layer scrambled eggs, cheese, and bacon slices in tortilla and wrap tightly. If eating now, add extra condiments like salsa, hot sauce, or sliced avocado. Toast burrito on a hot oiled skillet to crisp it up.
- To Freeze Burritos- Allow eggs and bacon to cool then assemble burritos. Wrap each burrito tightly with plastic wrap or foil. Then place in a large zip top bag or freezer container. Write the name and date and store up to 3 months in the freezer.To reheat- remove burrito from plastic or foil, and place on a microwave safe plate and heat for 1-2 minutes. Add any extra fresh toppings and toast burrito on a hot oiled skillet to crisp it up.

- In a large bowl, whisk 4 eggs and egg whites. Set Aside.
- Heat a large skillet to medium high heat. Add grape seed oil and onion. Saute until translucent, about 2-3 minutes. Add in minced garlic, and saute for 30 seconds.
- Next add red pepper and spinach. Saute until spinach is wilted, about 3-4 minutes. Stirring throughout.
- Next, add in eggs and cook for 3-5 minutes or until the eggs are cooked, stirring the entire time with a spatula.
- Place egg mixture in the refrigerator and allow the eggs to come to cool. (this will prevent the burritos from getting soggy or breaking when you roll them)
- Place flatbreads in microwave and warm up for 1 minute.
- Assemble the burritos.
- To each flatbread, add 1/5 of the egg mixture, 1-2 tablespoons of shredded cheese and 1 tablespoon of diced bacon.
- Wrap tightly. Then wrap each individual burrito with plastic wrap and place all of them in a freezer storage bag.

- In a large skillet over medium heat, cook bacon (in batches if necessary) until crispy. Remove the bacon to a paper towel lined plate - leave to cool.
- In the same skillet - using leftover bacon grease (drain some if necessary) add the potatoes and season with salt and pepper. Once lightly browned add in peppers and onion. Cook until potatoes have browned and the peppers and onions have softened. Remove from pan and place in bowl to cool.
- In the same saucepan, cook sausage until browned and cooked through. Remove to a paper towel lined bowl.
- Reduce heat to medium/low and pour beaten eggs into the skillet. Fold and stir eggs occasionally until cooked but still soft and moist. Remove from pan.
- While cooked ingredients are cooling slightly, gather flour tortillas, shredded cheese and sliced green onions (optional) and set them out on your table/workspace.
- To assemble the burritos, lay out a tortilla and start with a base of eggs followed by desired toppings and finish with cheese.
- To wrap, fold in both sides and then fold the bottom up and over all the ingredients. Roll up tightly.
- NOTE: If you find the tortillas are tearing, heat them up - a few at a time - for 20 seconds in the microwave before assembling.
- Wrap up in parchment paper. Place the parchment-wrapped burritos in a 1 gallon freezer bag and place in the freezer to store for up to one month.
- To Reheat: Remove the frozen burrito from the freezer. Unwrap from parchment paper and wrap the frozen burrito up in a damp paper towel. Place on a microwave safe plate and microwave for 3 minutes.
- Remove from microwave and rest for one minute before unwrapping. Remove the paper towel, serve with hot sauce, salsa, or sour cream!

Like most teens, my DD didn't have a lot of time for a healthy breakfast, and at most would just grab a bagel on the way out the door. Since she likes things pretty mild, I came up with these tasty breakfast burritos. They are so easy. She just heats one in the microwave and takes it with her to the bus stop. (Cooking time is for reheating in the microwave)

- In a skillet, fry bacon pieces until crisp; remove to paper towels.
- Drain, reserving 1- 2 tablespoons drippings.
- Beat eggs, salt and pepper and cook in reserved drippings.
- Add green onions just before eggs are done.
- Add bacon and remove from heat.
- Place about 1/2 cup of mixture down the center of each tortilla.
- Sprinkle with cheddar cheese.

With one DD commuting to college and the other one catching an early bus to high school, I've tried to come up with quick, tasty, on-the-go breakfasts. O.K., so bagels and muffins are good sometimes, but I wanted them to have a healthy meal. This is a combination of 3 different recipes that I have tweeked so that the girls will actually eat them! (Cooking time is for reheating in the microwave)

- Fry sausage; crumble and drain on paper towels.
- Reserve 1- 2 tablespoons drippings.
- Beat eggs, salt and pepper and add to reserved drippings.
- Add sausage, onion, red and green peppers, and cook with the eggs.
- Put 1/4 to 1/2 cup of sausage-egg mixture down the center of each tortilla.
- Sprinkle with shredded cheddar cheese.
- Fold bottom and sides of tortilla over filling.
- Place seam side down on a cookie sheet sprayed with Pam or lined with parchment paper.
- Place pan in freezer overnight or until solid.
- Wrap individual frozen burritos in waxed paper and then in aluminum foil.
