½ lime, juiced
1 ½ teaspoons honey
1 ½ teaspoons minced fresh ginger root
1 teaspoon peanut butter
½ teaspoon minced garlic
½ teaspoon sesame oil
¼ teaspoon red pepper flakes
½ teaspoon sriracha sauce
½ large red onion
2 cucumbers, unpeeled
2 tablespoons chopped peanuts, or to taste
½ jalapeno pepper, seeded and sliced, or to taste

Steps:

  • Whisk rice vinegar, lime juice, honey, ginger, peanut butter, garlic, sesame oil, red pepper flakes, and sriracha sauce together in a small bowl to make dressing.
  • Slice red onion into spirals with a spiralizer fitted with a straight-flat blade. Spiralize cucumbers into thin, curly ribbons; snip into serving-size lengths with kitchen shears or a knife. Transfer to a shallow bowl.
  • Drizzle dressing over onion and cucumbers; mix gently to combine. Garnish with peanuts and jalapeno pepper.

1/2 finely chopped red jalapeno
1 tablespoon sesame seends

Steps:

  • Mix 3 tablespoons rice wine vinegar, 1 tablespoon sesame oil, 1/2 teaspoon sugar and 1/4 teaspoon kosher salt in a medium bowl. Toss with 1 pound sliced Persian cucumbers, 2 sliced scallions, 1/4 cup cilantro, 2 tablespoons sliced pickled ginger, 1/2 finely chopped red jalapeno and 1 tablespoon sesame seeds.

1/2 green pepper, diced
1/2 cup cherry tomatoes, halved
2 tablespoons red onions, diced
2 -3 tablespoons sesame oil
4 -6 tablespoons seasoned rice vinegar

Steps:

  • Add vegetables to a tupperware container. Add oil and vinegar according to your taste(Water from cucumbers will make more "dressing when marinating so keep in mind when measuring your oil and vinegar). Seal with lid. Refridgerate at least one hour before serving. I sometimes add a few sunflower seeds right before eating.

  • Peel the cucumbers & cut in half lengthwise then scrape out & discard the seeds. Cut the cucumber into slices & place into a large shallow bowl.
