Grilled Korean-Style BBQ Glazed Pork Chops with Red Onions and Baby Bok Choy image

Instead of marinating the meat, which is typical of Korean BBQ, these pork chops are brushed in a nutty hoisin glaze while they're on the grill. Grilled veggies, tossed in that same sweet and spicy glaze are served alongside.

2 tablespoons soy sauce
1 tablespoon chili garlic sauce, such as Sriracha
1 tablespoon toasted sesame oil
1 tablespoon light brown sugar
1 tablespoon rice vinegar
1 tablespoon peeled and finely grated fresh ginger
1 clove garlic, grated
1/2 cup hoisin sauce
4 bone-in pork chops (about 3 pounds)
Kosher salt and freshly ground black pepper
1 red onion, cut into 1/2-inch-thick slices
4 to 6 baby bok choy, halved lengthwise (about 1 pound)

Steps:

  • Preheat a grill to medium-high heat. Stir together the soy sauce, chili sauce, sesame oil, brown sugar, vinegar, grated ginger and grated garlic in a small bowl. Reserve 2 tablespoons for the vegetables and then stir in the hoisin sauce. Set half aside for serving with the cooked pork chops and stir in 1 to 2 tablespoons water.
  • Sprinkle the pork chops on both sides with 1/2 teaspoon each salt and pepper for all 4 chops. Place the pork chops and onions on a lightly oiled grill. Grill until the pork chops are just slightly pink near the bone, 6 minutes on the first side and 4 to 5 minutes on the second side. Grill the onions until they are soft. Start brushing both the pork and the onions with the hoisin sauce mixture about halfway through grilling. Transfer the pork chops to a cutting board to rest for about 5 minutes and the onions to a bowl.
  • Put the bok choy in a large bowl and cover with plastic wrap. Microwave until the center core has softened and can easily be pierced with the tip of a sharp knife, 3 to 5 minutes. Season the bok choy with 1/4 teaspoon each salt and pepper and grill until charred, 2 to 3 minutes per side. Add to the bowl with the onions and gently toss with the reserved 2 tablespoons ginger sauce. Serve the pork chops with the grilled vegetables and the reserved hoisin sauce mixture on the side.

Steps:

  • Dry roast the sesame seeds in a small skillet over medium heat for about 3 minutes until toasted. Set aside. In a small bowl or measuring cup, add the rice wine vinegar, orange juice, mirin, ginger, brown sugar and mix well until sugar is dissolved. Make ½ inch deep cuts about 1 inch apart on the fat/silverskin edge of the pork chops. This will help prevent them from cupping when cooking. Dry well with paper towels and season with salt and pepper on both sides. Heat the vegetable oil in a 12-inch (30 cm) skillet over medium-high heat until beginning to smoke. Add the pork chops and cook until well browned, about 4 minutes (or longer if your chops are thick). Turn and cook another minute. Check the pork internal temperature; if your pork chops are on the thin side, they may already have reached the internal target temperature of 140℉ (60℃) F. If so remove to a plate and tent with foil. Add the glaze mixture to the skillet, and continue cooking the pork until the internal temperature reaches 140℉ (60℃) F (about 3 of 4 minutes) and transfer the pork chops to a plate, tent with foil and allow them to rest for 5 minutes. Remove the skillet from the heat. After resting, add any accumulated juices and reheat the skillet over medium heat. Simmer, whisking constantly, until the glaze is thick and caramel colored, from 2 to 5 minutes. Return the pork chops to the pan, turning to smother with the glaze and transfer to a platter, browned side up and spread with the remaining glaze. 1/4 cup plus 1 teaspoon vegetable oil
2 tablespoons brown sugar
2 tablespoons rice vinegar
1 tablespoon minced ginger
1 tablespoon Sriracha
2 teaspoons sesame oil
3 cloves garlic, minced
Zest and juice of 1 orange
Eight 4-ounce thin pork chops, bone-in (about 1/4-inch thick)
2 tablespoons chopped fresh cilantro, for garnish
2 green onions, sliced

Steps:

  • Place 1/4 cup vegetable oil, sugar, vinegar, ginger, sriracha, sesame oil, garlic and orange juice and zest in a food processor and process for 15 seconds. Put the pork chops in a heavy-duty resealable plastic bag. Add half of the marinade and reserve the other half until serving. Squeeze out the air, seal and move the chops around in the bag to coat evenly. Marinate in the refrigerator at least 30 minutes, and up to 8 hours.
  • Preheat the oven to 375 degrees F.
  • Remove the chops from the bag. Place the reserved marinade in a small saucepot. Bring to a boil to reduce and thicken the sauce a bit, about 2 minutes.
  • Heat large stainless saute pan over medium-high heat and add the remaining 1 teaspoon oil. Brown the chops in the hot pan, 1 to 2 minutes per side. Place the saute pan in the oven and cook until done (155 degrees F internal temperature). Serve with a spoonful of the glaze, with cilantro and sliced green onions sprinkled on top.

4 cups water, plus 250 milliliters, divided
4 slices of fresh ginger
1 spring onion, cut into 2-inch (5 cm) pieces
2 cloves garlic, crushed
2 tablespoons oil
2 tablespoons brown sugar
3 tablespoons light soy sauce
3 tablespoons dark soy sauce
3 tablespoons shaoxing rice wine
cooked rice, for serving
sliced green onion, for serving

Steps:

  • Cut the pork belly into roughly 1-inch (2 ½ cm) cubes.
  • Bring 1 liter of water to a boil in a pot, then add the pork, ginger, onion, and garlic, and cook for 3-4 minutes.
  • Remove the pork from the water using a slotted spoon and drain on a plate lined with a paper towel. Discard the remaining water and vegetables.
  • Clean and dry the pot, then return it to high heat and add the olive oil. Return the pork to the pan and cook until browned. The oil may pop and splatter, so be careful.
  • Add the brown sugar, then reduce the heat to low. Stir continuously until the sugar has melted, caramelized, and coated the pork evenly.
  • Immediately add the soy sauces and rice wine, stirring continuously for 5-6 minutes more, or until the liquid has reduced to a thick glaze.
  • Add the remaining 250 milliliters of water. Stir, cover, and simmer for about 45 minutes. Make sure the mixture is at a low simmer, not boiling. Stir every 10 minutes or so, adding more water if the pot is getting dry.
  • Remove the lid. The sauce should coat the pork in a very thick glaze. If it is too runny, continue to stir, uncovered, until the liquid has reduced.
  • Serve immediately over a bowl of rice and sprinkle with sliced green onions.

Steps:

  • Put oven rack in middle position and preheat oven to 400°F.
  • Cut scallions diagonally into 2-inch pieces.

6 pork steaks (or use 6-8 center-cut pork chops about 3/4-1-inch thick)
black pepper (to taste)
1/2 cup brown sugar
1 tablespoon cornstarch

1/4 cup Heinz Chili Sauce (use mild chili sauce)
1 -2 tablespoon fresh minced garlic (or to taste)

4 pork chops
1/4 teaspoon black pepper
1/4 teaspoon cinnamon
1/4 cup dry sherry or 1/4 cup water
1/4 cup hoisin sauce
1 green onion, chopped

Steps:

  • Sprinkle both sides of chops with seasoning.
  • Coat frying pan with oil and set over med high heat.
  • When hot add chops and reduce heat to medium and cook until golden about 3 minutes per side.
  • Remove chops to a plate.
  • Pour sherry or water into pan and using a wooden spoon scrape any brown bits from the bottom of the pan.
  • Stir in hoisin sauce (it may not dissolve completely).
  • Return chops to pan, cover and reduce heat to med low.
  • Simmer and turn the chops and stir the sauce occasionally until pork is firm about 5 minutes.
  • Place chops on plate and pour the pan sauce over and top with green onion.

1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon onion powder
1/4 teaspoon garlic powder

1 large white onion
2 tablespoons cooking oil
3 garlic cloves (minced finely)
3/4 cup apricot nectar
2/3 cup apricot preserves
2 tablespoons oyster sauce
2 tablespoons light soy sauce

Steps:

  • Chop onion.
  • Mix together the 1/4 tsp of salt, pepper, onion powder, garlic powder and the Ginger.
  • Season loin chops with the spice mixture.
  • Heat a large skillet over medium-low heat, and add the 2 TBS of oil.
  • Brown the onion and the loin chops for approximately 5 minutes per side.
  • Mix together all the remaining ingredients in a bowl.
  • When loin chops are browned on both sides, add the sauce mixture.
  • Simmer on medium-low heat for approximately 15-20 minutes, until pork is done to an internal temperature of 170 degrees and sauce is reduced and thickened.
  • Taste sauce (say Yum) and add more pepper or soy sauce to taste, if desired.
  • Serve over steamed white rice.

Asian-Style Pork Chop Bake image

Baked loin pork chops with an Asian citrus flair. The marinade will thicken in the oven, creating a thick glaze for the meat.

½ cup teriyaki sauce
½ cup orange juice
¼ cup dry sherry
2 teaspoons minced fresh ginger root
2 cloves garlic, minced
ground black pepper to taste
1 dash ground allspice
6 (3/4 inch) thick pork chops

Steps:

  • To Make Marinade: In a medium, non-reactive bowl, mix the teriyaki sauce, orange juice, sherry, ginger root, garlic, pepper and allspice. Add pork chops to bowl, cover, and marinate in refrigerator for 6 hours, turning as needed.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Remove chops and marinade from refrigerator. Remove cover and bake in the preheated oven for 30 to 40 minutes, or until internal temperature of meat has reached 145 degrees F (63 degrees C).
