Provided by AllysKitchen

Number Of Ingredients 32

SAVOY SLAW:
4-5 cups savoy cabbage, thinly sliced
1 tablespoon fresh ginger, grated
1/2 cup green onions, thinly sliced with some of the tops
1/2 cup green pepper, diced
2 radishes, sliced and cut in pieces
2 cups arugula, roughly chopped
SAUCE:
3 heaping tablespoons mayonnaise
1/3 cup plain Greek yogurt
2 tablespoons sesame oil
1/3 cup Dole pineapple juice
2 teaspoons sea salt
1 teaspoon coarse ground pepper
1 tablespoon hot sauce (your choice-I used Korean Sweet & Spicy Sauce.)
BURGERS:
1 pound ground chicken
1/2 pound ground pork
1/4 cup Greek plain yogurt
2 teaspoon dried onions, minced
2 teaspoons granulated garlic
2 teaspoons red chili flakes (adjust to your heat level)
2 teaspoons sesame oil
1 teaspoon sea salt
1/2 teaspoon pepper
1/2 cup fresh parsley, finely chopped
FINISHING TOUCHES:
4 serving buns
Thinly sliced sweet onion rings (optional)
4 large tomato slices (optional)
Reserved sauce (optional for drizzle on burger)
Dill pickle slices for garnish

Steps:

  • In a large mixing bowl, combine the ingredients, EXCEPT the arugula, for the slaw. Toss and mix with your hands. In another mixing bowl, combine the ingredients for the sauce and whisk together. Reserve about ¼ cup and then pour the rest over the cabbage slaw and toss and blend. Refrigerate until serving. Add the arugula right before serving and toss in. In a mixing bowl, combine all the ingredients for the burgers and blend together well with your hands. Form into 4 equal side patties. Cook on a hot grill (about 400-500 degrees) about 3 -4 minutes per side. Remove, stack one on top the other and let them rest about 5 minutes. Assemble your burgers and serve with your favorite sides! I went for nice kettle chips!

ASIAN CHICKEN BURGER, SPICY LEMONGRASS MAYO AND PICKLED SLAW

Asian Chicken Burger, Spicy Lemongrass Mayo and Pickled Slaw image

Make and share this Asian Chicken Burger, Spicy Lemongrass Mayo and Pickled Slaw recipe from Food.com.

Provided by Food.com

Categories     Spicy

Time 55m

Yield 4 serving(s)

Number Of Ingredients 20

1 cup mayonnaise
1 -2 tablespoon chili sauce, such as Sriracha
1 tablespoon bruised and finely minced lemongrass
1 lime (zest and juice)
kosher salt & freshly ground black pepper
1 1/2 lbs ground chicken, half dark and half white meat
2 tablespoons hoisin sauce
1 tablespoon toasted sesame oil
1 tablespoon soy sauce
4 garlic cloves, minced
4 scallions, green and white parts minced
kosher salt & freshly ground black pepper
4 hamburger buns with sesame seeds, halved and buttered
1/4 cup rice wine vinegar
2 tablespoons toasted sesame oil
2 garlic cloves, minced
kosher salt and black pepper
2 tablespoons thinly sliced pickled ginger
3 cups napa cabbage, finely shredded
1/4 red bell pepper, thinly sliced

Steps:

  • For the spicy lemongrass mayo:.
  • Mix together the mayonnaise, chili sauce, lime zest and juice and lemongrass in a small bowl. Season with salt and pepper and set aside.
  • For the Asian chicken burger:.
  • Combine the chicken, hoisin, sesame oil, soy sauce, garlic and scallions in a large bowl. Mix together and form into 4 equal patties about 1/2-inch thick and 4 inches wide. This patty will be a bit wetter than your average patty because of the sauces and flavor in there. Sprinkle each side of the patties generously with salt and pepper. Create a small well in the center of each patty, using your thumb.
  • Cook your patties on the griddle over medium heat until golden brown on each side and 160 degrees F, 4 to 5 minutes per side. Because of the sugar content in these patties, they can burn easily so watch your heat. Let rest 5 minutes. Place your buns on the griddle and toast them.
  • For the slaw:.
  • Add the rice wine vinegar to a mixing bowl and whisk in the sesame oil and garlic. Season with salt and pepper. Add the ginger, cabbage and peppers and toss to coat with the dressing. Adjust the seasoning and let sit 20 minutes to let the flavors meld together before serving.
  • For assembling:.
  • Place some of the spicy lemongrass mayo on each side of the buns. Add the chicken patties and top with the Pickled Asian Slaw. Finish with the top bun and serve with additional slaw and mayo on the side.

CABBAGE BURGERS

Cabbage Burgers image

This is a recipe created by Russian German immigrants. It is very popular in the Nebraska, South Dakota region where I am from. Cabbage and ground beef are encased in a neat little bread package.

Provided by AARONNE2004

Categories     Main Dish Recipes     Sandwich Recipes     Beef

Time 21m

Yield 18

Number Of Ingredients 8

3 (1 pound) loaves frozen bread dough, thawed
5 pounds ground beef
¼ cup water
1 large head cabbage, chopped
1 large onion, chopped
2 cloves garlic, chopped
salt and freshly ground black pepper to taste
2 tablespoons butter, melted

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Divide each loaf of frozen bread dough into 6 pieces, and roll into balls. Set aside.
  • Crumble the ground beef into a large pot over medium heat. Cook and stir until evenly browned. Drain off grease. Add the water, cabbage, onion, and garlic. Cook over medium-low heat, stirring as needed, until the cabbage is soft. Season with salt and pepper to taste. I like to use more pepper than salt. Drain off any excess liquids, and set aside.
  • On a lightly floured surface, roll the dough balls into 5 inch (approximate) squares. Place about 3/4 cup of the cabbage burger into the center, fold the dough over, and pinch to seal. Place on a baking sheet with the seam side down.
  • Bake for 15 to 18 minutes in the preheated oven, or until golden brown. Remove from the oven, and brush with melted butter. Serve hot.
