This healthy, flavorful salad comes together so quickly, and it is guaranteed to be a hit with your entire family!

Number Of Ingredients 13

1 tablespoon olive oil
2 boneless, skinless thin-sliced chicken breasts
Kosher salt and freshly ground black pepper, to taste
6 cups chopped romaine lettuce
1 Roma tomato, diced
3/4 cup canned corn kernels, drained
3/4 cup canned black beans, drained and rinsed
1/4 cup diced red onion
1/4 cup shredded Monterey Jack cheese
1/2 cup shredded cheddar cheese
1/4 cup Ranch dressing
1/4 cup BBQ sauce
1/4 cup tortilla strips

Steps:

  • Heat olive oil in a medium skillet over medium high heat. Season chicken breasts with salt and pepper, to taste. Add to skillet and cook, flipping once, until cooked through, about 3-4 minutes per side. Let cool before dicing into bite-size pieces. To assemble the salad, place romaine lettuce in a large bowl; top with chicken, tomato, corn, beans, onion and cheeses. Pour Ranch dressing and BBQ sauce on top of the salad and gently toss to combine. Serve immediately, topped with tortilla strips.

1 large carrot, peeled
3 cups shredded napa cabbage, from 1 small cabbage
3 cups shredded romaine lettuce, from 1 small lettuce
1 small red bell pepper, seeded and deveined, thinly sliced
2 tablespoons fresh Thai basil leaves or fresh mint leaves, chopped** see Cook's Note
2 cups thinly sliced store-bought rotisserie chicken (about 2 small chicken breasts)
1/2 cup slivered almonds, toasted** see Cook's Note
1 tablespoon toasted white or black sesame seeds*
1/4 cup peanut or vegetable oil
2 tablespoons low-sodium soy sauce
2 tablespoons rice vinegar*
1/2 teaspoon granulated sugar
Kosher salt and freshly ground black pepper, optional

Steps:

  • 1/2 cup chow mein noodles, for garnish
  • For the salad: Using a vegetable peeler, shave the carrot and add to a large salad bowl. Stir in the cabbage, lettuce, pepper, Thai basil, chicken, almonds, and sesame seeds.
  • For the dressing: In a small bowl, whisk together the oil, soy sauce, vinegar, and sugar until smooth. Season with salt and pepper, to taste, if using.
  • Pour the dressing over the salad and toss well. Garnish with the chow mein noodles and serve.

1/4 cup sugar
1/4 cup rice vinegar
1/4 cup onion, chopped
3/4 teaspoon mustard powder
1/2 cup canola oil
1 1/2 teaspoons poppy seeds
1/3 cup hoisin sauce
1/4 cup olive oil
1 tablespoon honey
1 tablespoon soy sauce
1 teaspoon fresh ginger, peeled and minced
1 garlic clove, minced
1/4 teaspoon dry crushed red pepper
1 tablespoon butter
1/2 garlic clove, minced
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1 cup day-old bread, crust removed and cubed into 1/3-inch cubes
4 boneless skinless chicken breast halves
8 cups romaine lettuce, chopped
6 plum tomatoes, quartered lengthwise
1 tablespoon sesame seeds, toasted

Steps:

  • For the poppy seed dressing: Whisk sugar, rice vinegar, onion and mustard powder in a small bowl to blend. Gradually whisk in oil. Stir in poppy seeds. Season to taste with salt and pepper. (Can be made 1 week ahead. Cover and refrigerate.).
  • For the Asian Barbecue Sauce: Whisk hoisin sauce, oil, honey, soy sauce, ginger, garlic and crushed red pepper in a small bowl to blend. (Can be made 1 day ahead. Cover and chill.).
  • For the Croutons: Melt butter in a medium skillet over medium heat. Add garlic, basil and oregano and stir 1 minute. Add bread cubes and toss to coat. Sprinkle with salt and pepper. Saute until croutons are golden, about 12 minutes. Transfer to a plate to cool. (Can be made 3 hours ahead. Let stand at room temperature.).
  • For Salad: Prepare barbecue to medium high heat. Sprinkle chicken with salt and pepper; brush with oil. Grill chicken until cooked through, about 5 minutes per side. Brush chicken with some Asian barbecue sauce. Grill 1 minutes longer per side. Transfer chicken to work surface; let stand 5 minutes. Cut crosswise into 1/2-inch thick strips.
  • Place lettuce and croutons in large bowl. Toss with 1/2 cup dressing. Dived lettuce mixture among 4 plates. Garnish with tomatoes and grilled chicken strips. Drizzle chicken with barbecue sauce. Sprinkle with sesame seeds and serve.

1/4 cup reduced-sodium soy sauce
1/4 cup honey
4 tablespoons canola oil, divided
2 tablespoons rice vinegar
1/2 cup barbecue sauce
1 pound boneless skinless chicken breasts, cut into strips
1/4 teaspoon pepper
1/4 cup honey mustard salad dressing
1 package (14 ounces) coleslaw mix
3 green onions, chopped
4 tablespoons sliced almonds, toasted, divided
3 teaspoons sesame seeds, toasted, divided

Steps:

  • In a large bowl, whisk soy sauce, honey, 3 tablespoons oil and vinegar until blended. Pour half of the honey mixture into a small bowl; stir in barbecue sauce. Sprinkle chicken with pepper. In a large nonstick skillet heat remaining oil over medium-high heat. Add chicken; cook and stir until no longer pink, 4-6 minutes. Add barbecue sauce mixture; heat through., Meanwhile, whisk salad dressing into remaining honey mixture until blended. Add coleslaw mix, green onions, 3 tablespoons almonds and 2 teaspoons sesame seeds; toss to coat. Serve with chicken. Sprinkle servings with remaining almonds and sesame seeds.

This a Cooking Light recipe that I have been using again and again and again since the beginning of the Summer - the chicken once marinated is very moist and tasty. And the leftover chicken is wonderful in a salad the next day!

1/4 cup packed brown sugar
1/4 cup low sodium soy sauce
1 tablespoon fresh lime juice
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon curry powder
3 garlic cloves, minced
8 (6 ounce) chicken thighs or 8 (6 ounce) chicken breasts, skinned
cooking spray
lime wedge (optional)
green onion top (optional)

Steps:

  • Combine first 6 ingredients in a large ziploc plastic bag, add chicken. Seal and marinate in refrigerator for 4 hours or overnight, turning ocacsionnally.
  • Prepare grill.
  • Remove chicken from bag, reserving marinade. Place marinade in a small saucepan. Bring to a boil, cook 1 minute.
  • Place chicken on grill rack coated with cooking spray; grill 20 minutes or until done, turning and basting frequently with cooked marinade. Garnish with lime wedges and green onion tops, if desired.

1 small roasted chicken , about 1kg
½ red cabbage , cored and finely sliced
3 carrots , coarsley grated or finely shredded
5 spring onions , finely sliced on the diagonal
2 red chillies , halved and thinly sliced
small bunch coriander , roughly chopped, including stalks
2 heaped tbsp roasted salted peanuts , roughly crushed
3 ½ tbsp hoisin sauce
1 ½ tbsp toasted sesame oil

Steps:

  • Combine the dressing ingredients in a small bowl and set aside.
  • Remove all the meat from the chicken, shred into large chunks and pop in a large bowl. Add the cabbage, carrots, spring onions, chillies and half the coriander. Toss together with the dressing and pile onto a serving plate, then scatter over the remaining coriander and peanuts.

  • Make the Asian BBQ sauce. In a small bowl whisk together the hoisin sauce, soy sauce, sweet thai chili sauce, sesame oil, honey, dijon mustard, crushed red pepper, ginger, garlic and lemon juice. Add the chicken to a bowl or gallon size zip lock bag and toss with 1/2 of the asian BBQ sauce (save the remaining sauce for later). Grill for 5 to 6 minutes per side or until the chicken is cooked through. Additionally you can bake or sear the chicken - whichever you prefer! Once the chicken is finished, let cool for a few minutes and then cut into chunks.
  • While the chicken is cooking preheat the oven to 375 degrees F. Cut the tortillas in whatever shape you prefer - triangle, circles, squares. I chose circles. Place the cut tortillas on a greased baking sheet. In a small bowl whisk together the 1 1/2 tablespoons hoisin sauce, 1 tablespoon soy sauce and 1 tablespoon honey. Brush the sauce all over the upside of the tortillas, sprinkle the tortillas with the sesame seeds. Bake for 5-8 minutes, just until the chips are browning on the edges. Watch closely, I burnt a few of mine!
  • To make the salads, combine lettuce, cabbage, carrots and green onions in a large bowl and toss well with olive oil, rice wine vinegar, sesame seeds and poppy seeds. Add in chicken and toss well, then separate on to two plates or bowls. Drizzle the salads with the remaining Asian BBQ sauce and eat with the honey sesame crackers.
