Steps:
- Pre heat oven to 400 degrees.
- Snip the ends off the pea pods.
- Place pods in a single layer in a shallow baking pan.
- Combine Oil, shallot, seasoning & salt.
- Drizzle over the peas.
- Bake uncovered for apprx 8 minutes or unril crisp tender, stir once during baking.

- Preheat the oven to 350 degrees F (175 degrees C).
- Place peas, olive oil, ranch dressing mix, and garlic in a large plastic zip-top bag. Shake to coat peas. Spread evenly on a baking sheet.
- Bake in the preheated oven until peas are tender, about 20 minutes.

SUGAR SNAP PEAS WITH BROWN BUTTER, LEMON AND HORSERADISH
Steps:
- With a paring knife, remove the stems and peel the pod strings of the sugar snaps. Set aside.
- Using a peeler, remove the rough, outer skin of the horseradish. (Only remove the desired amount to be used, leaving the rest of the root intact.)
- In a large saute pan over medium-high heat, add the butter. Gently swirl the butter and lightly agitate with a small whisk. Season with some black pepper. Once the milk solids begin to turn golden brown, after about 2 minutes, add the cleaned snap peas. Toss them twice in the pan, then add the lemon juice and season with salt.
- Transfer to a serving vessel. Using a hand-held grater, grate the peeled horseradish over the top.
SUGAR SNAP PEAS WITH SESAME
Steps:
- Pick through the sugar snap peas to remove any that aren't perfect. Remove and discard the stem end and the string from each pod. Toss the snap peas in a bowl with sesame oil, sesame seeds, and kosher salt, to taste. Serve at room temperature.

- Whisk together yogurt and mayonnaise. In another bowl, toss chicken with 1/2 cup yogurt mixture; season with salt and pepper. Let stand 15 minutes (or refrigerate, covered, up to 2 hours).
- Whisk garlic, lime zest and juice, mustard, herbs, 1/2 teaspoon salt, and oil into remaining 1/2 cup yogurt mixture (it should have a pourable consistency; if too thick, whisk in water, 1 teaspoon at a time). Cover and refrigerate until ready to use.
- Stir together panko and cheese in a pie dish or other wide, shallow vessel to combine. Dredge a few chicken pieces at a time in mixture to coat; pat to adhere.
- Add enough oil to a medium nonstick skillet to reach 1/4 inch up sides. Heat over medium-high until a panko crumb sizzles immediately when tossed in.
- Working in batches, add chicken to oil and cook, flipping halfway, until golden brown all over and cooked through, 4 to 5 minutes a batch. Transfer to a wire rack set inside a rimmed baking sheet; season with salt. Let cool slightly.
- Toss lettuce, fennel, and snap peas with a drizzle of oil. Divide among plates and top with fried chicken, chile, and avocado. Serve, with dressing alongside.

- Bring a large pot of salted water to a boil. Fill a large bowl halfway with ice and then with enough cold water to cover the ice. Have a large slotted spoon at the ready. Cook the sugar snap peas in the boiling water until they're bright green and softened just a bit, about 2 minutes. Using the slotted spoon, transfer the sugar snap peas to the ice water to cool completely, then drain them on paper towels until you're ready to dress them.
- In the bowl of a food processor, combine the milk, yogurt, mayonnaise, lemon juice, mustard, salt, paprika and 4 ounces of the chèvre; process until completely smooth. Pour the mixture into a medium bowl, scraping the bottom of the food processor bowl in case any chèvre has stubbornly coagulated there. Stir in the garlic, shallot, chives, parsley and dill. Season to taste with the Tabasco and pepper. Add more salt if needed.
- In a large bowl, toss the sugar snap peas in the dressing so they're completely coated. Sprinkle the remaining 2 ounces of chèvre over the salad and then turn it out onto a platter to serve.
