CHICKEN ASIAGO



Chicken Asiago image

A variation on Chicken Cordon Bleu or Chicken Parmesan, baked so lower in fat. Use your favorite jarred or canned sauce, or make your own. Serve with your favorite cooked pasta.

1 egg
water
1/2 cup dry breadcrumbs
1 tablespoon dried basil
2 boneless skinless chicken breasts
2 slices prosciutto ham (sliced thin)
2 pieces asiago cheese, about 1 inch square and 2 inches long
nonstick cooking spray
pasta sauce, heated
asiago cheese, for garnish

Steps:

  • Preheat oven to 325ºF. Coat an 8 x 8 inch baking dish with nonstick cooking spray.
  • In a shallow bowl, beat egg with just enough water to thin it a little. Set aside.
  • Place bread crumbs in another shallow bowl, and stir in dried basil. Set aside.
  • Place 1 chicken breast between two sheets of plastic wrap and pound with a mallet until about 1/4 inch thick, being careful not to pound holes in chicken; repeat with 2nd breast.
  • Remove plastic wrap and place 1 slice of ham on each breast.
  • Place one piece of cheese on the narrow end of each breast. Roll breast up jelly-roll fashion, and secure ends with toothpicks.
  • Dip breast in egg mixture and coat all sides. Roll in bread crumbs until well coated. Repeat with 2nd breast.
  • Place in baking dish and LIGHTLY spray with cooking spray (or an oil mister). This will help coating brown.
  • Bake for 30-35 minutes, until chicken is cooked through.
  • Remove toothpicks and place on plates. Top with some heated pasta sauce and some shredded cheese to garnish; serve.

I found this recipe on Pillsbury.com. Let me just say... YUM! This recipe is soooooo good. I never thought chicken would be good in a quiche, but it really works in this recipe. It's a very savory recipe. It is good for breakfast, lunch, or dinner.

1 pie crust, refrigerated
2 tablespoons olive oil
1/2 teaspoon garlic, minced
1 medium onion, chopped
1/2 cup bacon, cooked, about 4 slices
1 cup chicken, pre-cooked & chopped
1 (8 ounce) box frozen spinach, chopped, thawed, squeezed to drain
1 cup light sour cream
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/8 teaspoon pepper
2 cups cheddar cheese, shredded
1 1/2 cups asiago cheese, shredded
3 eggs
1/2 cup heavy whipping cream

Steps:

  • Heat oven to 375°F Unroll pie crust and press firmly against bottom and side of 9-inch regular or 9 1/2-inch deep glass pie plate; flute edge as desired. Prick bottom of crust several times with fork. Bake 10 minutes; cool.
  • Meanwhile, in 10-inch skillet, heat oil over medium heat. Add garlic and onion; cook 2 to 3 minutes, stirring occasionally, until onion is tender. Reduce heat. Stir in bacon, chicken and spinach; toss to combine. Remove from heat; transfer mixture to large bowl.
  • Stir sour cream, salt, garlic powder and pepper into spinach mixture until well blended. Stir in cheeses.
  • In small bowl, beat eggs and whipping cream with fork or wire whisk until well blended. Gently fold into spinach mixture until well blended. Pour filling into pie crust.
  • Bake 15 minutes. Cover crust edge with strips of foil. Bake 20 to 25 minutes longer or until center is set and edge of crust is golden brown. Let stand 15 minutes before serving.

4 boneless chicken breasts, cut into 1-inch squares

1/8 teaspoon red pepper flakes
8 ounces ziti pasta or 2 1/2 cups ziti pasta
2 3/4 cups water, divided
1 2/3 cups low sodium chicken broth
12 ounces broccoli florets or 4 cups broccoli florets
1/2 cup heavy cream
1 ounce asiago cheese, grated, plus extra
asiago cheese, grated, for serving or 1/2 cup asiago cheese
1 tablespoon fresh lemon juice

Steps:

  • Heat 1 tablespoon of the oil in a 12-inch nonstick skillet over medium-high heat until just smoking.
  • Add the chicken pieces in a single layer and cook for 1 minute without stirring.
  • Stir the chicken and continue to cook until most, but not all, of the pink color has disappeared, and the chicken is lightly browned around the edges, 1 to 2 minutes longer.

This is the quiche recipe that I created for RSC #11. It starts off with a homemade crust and then is filled with a delighful combination of eggs, bacon, spinach, asiago and cheddar cheeses, shallots or green onions and sun dried tomatoes.

1 1/2 cups all-purpose flour
1/2 cup shortening (I like to used the butter flavored shortening)
1/2 teaspoon salt
1/2 cup cold water
4 eggs
1 1/2 cups milk
1/2 cup shredded asiago cheese
3/4 cup shredded cheddar cheese, divided
8 slices bacon, cooked and chopped
1/4 cup shallots or 1/4 cup green onion, chopped
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
1 (10 ounce) package frozen chopped spinach, thawed and drained
1/4 cup sun-dried tomato, chopped

Steps:

  • For the crust: Mix flour, shortening and salt together with a fork until crumbly. Add water a little at a time until the dough holds together. Mix lightly with fork. Be careful not to over mix the dough or it will come out tough instead of flaky.
  • Place ball of dough onto a lightly floured surface and roll out to fit a 9" pie pan. Loosely roll the dough onto your rolling pin and place dough in pie pan. Push dough into the pie pan and trim off any excess dough. Finish edges with a fork or by crimping the edges with your fingers.
  • For the filling: In a large bowl whisk together eggs and milk. Mix in the asiago cheese and 1/2 cup of the cheddar cheese. Add bacon, shallots, sun dried tomatoes, salt, and cayenne pepper. Squeeze out the excess liquid from the spinach and add to the egg mixture. Mix everything together until it is well blended.
  • Pour into prepared pie crust shell. Sprinkle with the remaining 1/4 cup of shredded cheddar cheese. Bake at 400 degrees F for 40 minutes or until a knife inserted about 2 inches from the edge comes out clean.

  • Reduce heat to medium-low and stir in the heavy cream, salt, and pepper. Cook until sauce starts to slightly thicken. Add 1/2 cup Asiago cheese and stir until melted and smooth. Remove from heat immediately; overcooking the Asiago cheese will create a lumpy, stringy sauce.
