1 bunch broccoli, cut into spears
4 teaspoons minced garlic
2 tablespoons olive oil
1/4 teaspoon salt
Dash pepper
1 cup shaved Asiago cheese

Steps:

  • Place broccoli in a large skillet; cover with water. Bring to a boil. Reduce heat; cover and simmer for 5-7 minutes or until broccoli is tender. Drain well. Remove and keep warm., In the same skillet, saute garlic in oil for 1 minute. Stir in the broccoli, salt and pepper. Top with cheese.

16 oz broccoli florets (, sliced horizontally into flat chunks)
3 tablespoons olive oil
1/4 teaspoon salt (or more)
black pepper (to taste)
1/3 cup Asiago cheese (, shredded)

Steps:

  • Preheat oven to 400 F.
  • Make sure to slice each broccoli floret horizontally into thin, flat slices.
  • Coat broccoli with olive oil in a medium bowl, and transfer to the rimmed baking sheet (line it with aluminum foil, if you prefer) in a single layer. Sprinkle salt evenly over all of broccoli, making sure not to miss any (use at least 1/4 teaspoon salt, or more). Sprinkle with pepper, too.
  • Roast for 15 minutes, then remove from the oven and sprinkle with shredded Asiago cheese. Roast for 5 or 10 more minutes, until cheese melts.
  • Remove from oven and serve. Broccoli and cheese should be slightly browned and crusty.

8 cups broccoli florets (2 to 3 large heads)
5 tablespoons extra-virgin olive oil
4 large cloves garlic, roughly chopped
2 large shallots, roughly chopped
Kosher salt
1/8 to 1/4 teaspoon crushed red pepper flakes
1/4 cup finely shredded aged Asiago cheese
Zest of 1 lemon (about 2 teaspoons)

Steps:

  • Set a rimmed baking sheet on an oven rack and preheat to 425 degrees F.
  • Add the broccoli, oil, garlic, shallots, 3/4 teaspoon salt and red pepper flakes to a large bowl and toss to coat. Transfer to the preheated baking sheet and spread out in a single layer. Roast until the broccoli florets are browned on the ends, the stalks are crisp-tender and the shallots are caramelized, about 20 minutes, tossing about halfway through. Immediately sprinkle with the Asiago and lemon zest. Season with some salt if needed. Transfer to a serving platter.

1 large head broccoli, cut into long, thin spears
2 tablespoons extra-virgin olive oil, 2 turns of the pan
4 cloves garlic, finely chopped
1/4 pound Asiago cheese, shaved with vegetable peeler

Steps:

  • Simmer broccoli in 1/2-inch boiling, salted water in a shallow covered skillet for 6 or 7 minutes, until tender. Drain broccoli and remove from pan. Return pan to stove top over medium heat. Add oil and garlic. Saute garlic in oil 3 minutes. Add broccoli spears to the skillet and coat them with garlic oil. Transfer broccoli to a serving dish and garnish with curls of Asiago cheese.

2 tablespoons vegetable oil or 2 tablespoons olive oil, divided
4 boneless chicken breasts, cut into 1-inch squares
table salt & fresh ground pepper
1 medium minced onions or 1 cup minced onion
3 medium garlic cloves, minced
1/4 teaspoon dried oregano
1/8 teaspoon red pepper flakes
8 ounces ziti pasta or 2 1/2 cups ziti pasta
2 3/4 cups water, divided
1 2/3 cups low sodium chicken broth
12 ounces broccoli florets or 4 cups broccoli florets
1/2 cup heavy cream
1 ounce asiago cheese, grated, plus extra
asiago cheese, grated, for serving or 1/2 cup asiago cheese
1 tablespoon fresh lemon juice

Steps:

  • Heat 1 tablespoon of the oil in a 12-inch nonstick skillet over medium-high heat until just smoking.
  • Add the chicken pieces in a single layer and cook for 1 minute without stirring.
  • Stir the chicken and continue to cook until most, but not all, of the pink color has disappeared, and the chicken is lightly browned around the edges, 1 to 2 minutes longer.
  • Transfer the chicken to a clean bowl and set aside.
  • Add the remaining tablespoon of oil, onion, and 1/2 teaspoon salt to the skillet.
  • Return the skillet to medium-high heat and cook, stirring often, until the onion is softened, 2 to 5 minutes.
  • Stir in the minced garlic, oregano, and red pepper flakes, and cook until fragrant, about 30 seconds.
  • Add the ziti, 2 cups of the water, and the broth.
  • Bring to a boil over high heat and cook until the liquid is very thick and syrupy and almost completely absorbed, 12 to 15 minutes.
  • Add the broccoli and the remaining 3/4 cup water.
  • Cover, reduce the heat to medium, and cook until the broccoli turns bright green and is almost tender, 3 to 5 minutes.
  • Uncover and return the heat to high.
  • Stir in the cream, Asiago cheese, and reserved chicken with any accumulated juices and continue to simmer, uncovered, until the sauce is thickened and the chicken is cooked and heated through, 1 to 2 minutes.
  • Turn off the heat, stir in the lemon juice and season with salt and pepper to taste.
  • Serve.

1 C. Basmati rice (white or brown)
1-1/2 C. Vegetable broth
1 10-oz. box frozen Broccoli (thawed & rung out)
1 C. shredded Asiago Cheese
2 Eggs, slightly beaten
1/2 tsp. salt (cheese is somewhat salty)
I like to make the broccoli pieces small so if there are larger stems or florets, cut them to be not larger than thumbnail size. This adds to the pleasant presentation of the dish.

Steps:

  • Cook rice in broth instead of water. Mix rice with broccoli, egg, and 1/2 of the cheese and place into lightly greased casserole, souffle dishes or ramekins. Top with remaining cheese. Bake at 350 until cheese is slightly golden (approximately 45 minutes).
