This Simple Spinach & Arugula Salad is the perfect side dish for just about any meal. It's light, healthy, easy to make and full of fresh flavors!

8oz. spinach & arugula salad mix
Juice from 1 lemon
1 T. of olive oil
Salt & Pepper
1/4 cup of shredded parmesan cheese

Steps:

  • Rinse 8 oz. of spinach & arugula salad mix.
  • Place rinsed spinach and arugula in a medium sized bowl.
  • Squeeze juice of 1 lemon over the greens.
  • Add 1 T. of olive oil over the greens.
  • Add salt & pepper. Toss to coat.
  • Top with 1/4 cup of shredded parmesan cheese and serve it up! ????

FOR THE CHERRY VINAIGRETTE:
3-4 Tbsp cherry preserves (i use bonne maman)
2-3 Tbsp extra virgin olive oil
1-2 Tbsp white wine vinegar
to taste pepper and kosher salt (i usually end up with about 1 tsp of salt)
FOR THE SALAD:
4-5 c baby arugula
3-4 c baby spinach
2 c cooked chicken cut into 1 1/2 inch cubes
1/8 c pine nuts (you can toast in a dry pan if you wish)
3 Tbsp dried cherries
1/3-1/2 c shaved parmesan/fontina cheese (i'm obsessed with sartori tuscan reserve blend)

Steps:

  • 1. Put all ingredients for the cherry vinaigrette into a medium bowl and whisk until well blended. Pour into a decorative bowl and set aside. All components of this vinaigrette are flexible! Add more cherry preserves if you like, or more vinegar if that floats your boat!
  • 2. Tear the spinach and arugula into rough pieces and arrange on a large tray. Sprinkle your pine nuts, dried cherries, and cheese shavings over the top of the greens.
  • 3. Arrange the chicken down the center of the salad. Serve with the vinaigrette on the side, and a small bowl of extra cheese shavings if you're that type of person (I am!! LOL!!).

1 teaspoon Dijon mustard
2 teaspoons red wine vinegar
1/4 cup extra-virgin olive oil
1 teaspoon sugar
1 teaspoon honey
Kosher salt and freshly ground black pepper
6 cups arugula

Steps:

  • Combine the shallot, mustard, vinegar, oil, sugar, honey and salt and pepper in a jar and shake to emulsify.
  • Toss arugula with vinaigrette, to taste.

2 cups arugula leaves, washed and trimmed
2 hearts romaine lettuce, coarsely chopped
1 cup walnut halves, lightly toasted
3 tablespoons balsamic vinegar
1/2 cup extra-virgin olive oil, eyeball it
1/2 teaspoon salt
1 teaspoon coarse black pepper
6 ounces, (1 cup) blue cheese crumbles

Steps:

  • Chill salad plates when you begin preparing your entree.
  • When your entree is almost ready to serve, combine arugula and romaine leaves and separate onto 4 chilled salad plates. Scatter toasted walnuts evenly among the salads. Pour vinegar into a small bowl and whisk in extra-virgin olive oil in a slow stream to combine dressing. Season dressing with salt and pepper, then stir in blue cheese crumbles. Ladle dressing evenly over top of salad plates and serve.

  • Toast the pecans in a small frying pan over medium-high heat. Once they begin to brown and smell fragrant, add the maple syrup and black pepper to the pan and stir until the pan is mostly dry. Remove the pan from the heat, add the butter and mix it through the pecans. (The butter prevents them from being too sticky.) Transfer the pecans to a piece of parchment paper in a single layer and let them cool.
  • Place the Fresh Cherry Vinaigrette ingredients into your blender and blend on high until smooth. Feel free to double or triple the recipe to have extra!
  • Add the baby arugula, fresh cherries, goat cheese or avocado, and the candied pecans to a large salad bowl. Pour the vinaigrette over the top and toss to coat.
