Arugula, Mozzarella, Roasted Red Pepper and Mint Salad image

1/3 cup olive oil
3 tablespoons mayonnaise
2 tablespoons red wine vinegar
1 teaspoon Dijon mustard
1 small shallot, minced
1/2 lemon, juiced
Kosher salt and freshly ground black pepper
1 red bell pepper
6 cups arugula (about 3 ounces)
1/2 cup torn fresh mint leaves
3 balls mozzarella bocconcini, sliced

Steps:

  • Whisk the olive oil, mayo, vinegar, Dijon, shallot, lemon juice and some salt and pepper together in a small bowl.
  • Turn a gas burner on medium-high and cook the whole red pepper directly on the flame, turning occasionally, until charred all over, about 10 minutes. Put the pepper in a small bowl and cover with plastic wrap or a dish towel. Let stand for 15 minutes to steam, then use the back of a paring knife to remove the skin from the pepper. Remove the stem and seeds, then cut the pepper into thin strips.
  • Toss the arugula and mint together in a wide shallow bowl or platter, then arrange the mozzarella and peppers on top. Drizzle with the vinaigrette and serve.

3/4 pound short pasta, such as casarecce or campanelle
1 teaspoon finely grated lemon zest
2 tablespoons lemon juice
2 tablespoons extra-virgin olive oil
Coarse salt and ground pepper
2 cups baby arugula
1/2 cup fresh basil leaves, torn if large
1 tablespoon capers, rinsed and drained
6 ounces fresh mozzarella, cut into 1/2-inch pieces (1 cup)
1/2 teaspoon red-pepper flakes

Steps:

  • In a large pot of boiling salted water, cook pasta according to package instructions. Drain.
  • Meanwhile, in a large bowl, whisk together lemon zest, lemon juice, and olive oil; season with salt and pepper. Add pasta, arugula, basil, capers, mozzarella, and red-pepper flakes. Toss to combine and season with salt and pepper.

Roasted Tomato, Arugula and Mozzarella Salad image

4 plum tomatoes, cut in 1/2 and seeded
3 tablespoons olive oil
Kosher salt and freshly ground black pepper
One 5-ounce box baby arugula
One 8-ounce package baby mozzarella balls, drained
1/4 cup chiffonade basil leaves
Balsamic vinegar

Steps:

  • Preheat the oven to 450 degrees F.
  • Add the tomatoes to a shallow 2-quart casserole dish in a single layer.
  • Toss the tomatoes with the oil, and salt and pepper, to taste. Make sure the tomatoes are cut side up after tossing. Roast until the tomatoes are extremely tender, about 35 to 40 minutes. Remove them from the oven and keep warm.
  • In a large salad bowl, toss the arugula, mozzarella balls, basil and the warm tomatoes along with any juices from the dish. Drizzle with some good balsamic and season with salt and pepper, to taste.

EASILY DIGESTIBLE ARUGULA MOZZARELLA SALAD



Easily Digestible Arugula Mozzarella Salad image

So I have trouble with salads. Well, raw vegetables in general because my body just has trouble digesting them. When the weather gets warmer I begin to crave salads and I also love to pack something quick that will keep for a couple hours unrefrigerated so I can pop into a park or sit on a park bench and enjoy my lunch outside. I also don't love pre-made salad dressings but get a little lazy about making my own. I have experimented over the years with dressing my salads with olive oil only and aimed to find the best olive oil dressed salad. As a result of these factors an easy salad was born! This recipe is designed as a fast and easy lunch for one but can easily be made in a large salad bowl and served to a crowd!

A couple handfuls pre-washed fresh arugula 1/4 ball of fresh mozzarella 4 thin slices pre-cut organic soppressatta Fresh ground black pepper Extra virgin olive oil

Steps:

  • 1. Place arugula in a shallow flat reusable (I prefer glass) to go container. 2. Slice soppressatta into long thin strips and place on top of arugula. 3. Dice fresh mozzarella into small 1/4″x1/4″ cubes and spread on top of the soppressatta. 4. Lightly drizzle the olive oil over just the part of the salad covered by the toppings being. careful not to overdress or dress the arugula directly. 6. Top with fresh ground black pepper to taste. *Note - if you dress the salad in this way the arugula will not wilt before you have time to eat it. 1 cup breadcrumbs
8 ounces mozzarella cheese
2 eggs
2 tablespoons olive oil
2 tomatoes

Steps:

  • To make the balsamic dressing, place the olive oil, vinegar and sugar in a bowl and stir to combine. Set aside.
