Turn a jar of artichoke hearts and a handful of mint into a great little dip in a matter of minutes

285g jar artichoke antipasto in oil
good handful of mint leaves, stripped from the stalks
3 tbsp crème fraîche
1-2 tsp lemon juice
6 pitta breads
2 tbsp olive oil
Maldon sea salt
lemon wedge and mint sprig, to garnish

Steps:

  • Up to a day ahead, blitz the artichokes and their oil with the mint in a food processor until fairly smooth. Add crème fraîche, season, then briefly pulse. Add lemon juice. Tip into a small bowl, cover and chill.
  • To serve, heat the oven to 200C/fan 180C/gas 6. Tear the pittas into rough pieces and spread over a couple of baking sheets. Drizzle with oil and scatter over some sea salt. Bake for 7-10 mins until crisp.
  • Set the bowl of dip on a large platter; add lemon wedge and mint. Surround with pitta pieces.

This artichokes dip is a very versatile sauce, full of taste and healthy! Artichokes and mint is a traditional Italian pairing. Pecorino Romano is the perfect cheese for this recipe. Season pasta, enrich your meats or simply spread the artichokes dip over toasted bread slices!

3 lb (1350 g) baby artichokes
3 tbsp Pecorino Romano
1 lemon
3 cloves of garlic
10 leaves fresh mint
6 tbsp extra virgin olive oil
1 tbs black pepper
to taste table salt

Steps:

  • FIRST STEPSGrate the yellow skin of the lemon and conserve it into a box. Squeeze into a bowl the juice of the lemon. Add 3 cups of cold water into the same bowl. Now, discard the most leathery artichokes leaves, and peel the stems. Slice the artichokes into halves. Pour the artichokes into the bowl with water and lemon juice.
  • STEWED ARTICHOKESPour 3 tbsp of olive oil in a pan and place over medium heat. Stir fry peeled and crushed cloves of garlic until golden brown. Now, add artichokes and stir fry a couple of minute over high heat. Finally, add 1 cup of cold water, cover the pan with a lid and cook 30 minutes over low heat until the artichokes are very tender.
  • ARTICHOKES DIPWhen the artichokes are well cooked and very tender, blend them with a mixer along with garlic, mint leaves, black pepper, the lemon skin grated and 3 tbsp of olive oil and salt as needed. If the artichokes dip is too thick, add a little more of water and blend again. Finally, sift the sauce to eliminate the most tenacious part of the artichokes and obtain a consistent dip.

4 medium artichokes
2 tablespoons olive oil
1/2 medium lemon
1/2 teaspoon salt
1/4 teaspoon pepper
AIOLI:
1/4 cup mayonnaise
1/4 cup plain Greek yogurt
1/2 teaspoon minced fresh garlic
1/4 teaspoon grated lemon zest
Dash pepper

Steps:

  • Preheat oven to 400°. Using a sharp knife, cut 1 in. from top of each artichoke. Using kitchen scissors, cut off tips of outer leaves. Cut each artichoke lengthwise in half. With a spoon, carefully scrape and remove fuzzy center of artichokes. , Drizzle oil into a 15x10x1-in. baking pan. Rub cut surfaces of artichokes with lemon half; sprinkle with salt and pepper. Place in pan, cut side down. Squeeze lemon juice over artichokes. Cover pan with foil; bake on a lower oven rack until tender and a leaf near the center pulls out easily, 50-55 minutes., Meanwhile, mix aioli ingredients; refrigerate until serving. Serve with artichokes.

This is a good starter recipe to learn how to cook fresh artichoke.....if you want to use the cooked prepared artichoke just skip the fresh boiling step. This dip comes out very good either way.Enjoy :)

1 large fresh artichoke ( you may use a can or jar 14 oz of artichoke) but skip the boiling step
1 small lemon
1&1/2 Tbsp minced garlic (divided)
1 large bay leaf
1/2 Tbsp thyme
1/2 Tbsp parsley
1 tsp salt
1 Tbsp dijon mustard
1/2 c sour cream
1/2 c parmesan cheese
1 c shredded mozzarella cheese (divided)
1/2 c real mayonnaise
1-2 Tbsp butter
1/4 c finely chopped onions
1/4 tsp red pepper flakes (opt)

Steps:

  • 1. BOILING STEP: Fresh artichoke, lemon, minced garlic, salt, and bay leaf- Trim and clean fresh artichoke leaving stem on. Add two slices of lemon, 1 Tsp of minced garlic, salt, bay leaf, pinch of black pepper to boiling water. ( enough water to cover the whole artichoke in the pot) Also squeeze the rest of lemon juice in to water. Boil at a high simmer for 25-40 mins ..it very on time because of size of the artichoke. please watch vid of more tips. Fresh artichoke is done when you poke threw the stem with a knife.   • 2. Butter, onions, minced garlic- add butter to skillet and sauté onions and 1/2 T of minced garlic just until soft Pre heat oven at 400
  • 3. In a mixing bowl add sour cream, mayo, parmesan cheese, dijon mustard, parsley, thyme, only 1/2 cup of mozzarella cheese, saute onions and garlic, and prepared cooked artichokes. Mix well add to small baking dish top with remainder of mozzarella cheese.
  • 4. bake at 400 for 10-12 mins then turn on broiler for an extra 5 mins until cheese is bubble and melted ( I serve with french bread and or chips & crackers )

Excellent change for those who are tired of the old steamed artichokes with mayo. These are delicious alone with no dip, but, if you must, I find that butter melted with a little lemon zest and juice is a better compliment than the old heavy mayo standby. I know the "servings" says for 4, but, I can eat a whole one by myself!!!!

2 large artichokes
1 lemon, zested and juiced
2 garlic cloves, minced
2 -3 basil leaves, chopped
1 -2 tablespoon olive oil
sea salt & fresh ground pepper, to taste
1/2 cup chicken stock or 1/2 cup vegetable stock

Steps:

  • Preheat the oven to 350 degrees.
  • Combine the olive oil, basil, minced garlic, lemon zest and juice, sea salt and fresh cracked pepper in a bowl. Mix until it becomes a paste.
  • With kitchen scissors, trim all the sharp ends off of each leaf. Wash the artichoke well in cool water. Slice down the center to form two halves.
  • Clean out all the fuzzy hairs and smaller leaves with a spoon then immediately rub all the cut areas with the zested and juiced lemon.
  • Coat the baking dish with olive oil.
  • Rub the paste all over the artichoke halves and inside the leaves.
  • Place each artichoke half top side down in a baking dish.
  • Pour the stock in the dish and cover with a lid or tin foil.
  • Bake for 45-50 minutes or until soft and tender.
  • Be sure to let cool for a few minutes before digging in!

1 garlic clove
50g pine nut , toasted, plus extra
zest and juice 1 lemon
3 tbsp grated parmesan (or vegetarian alternative)
20g pack flatleaf parsley , a few leaves reserved
3 tbsp extra-virgin olive oil

Steps:

  • Combine all ingredients in a food processor or blender, then season with salt and pepper. Purée until fine, then scrape into a bowl. Sprinkle with extra pine nuts and the reserved parsley leaves to serve.
