It seems I'm always entertaining at the last minute. I keep many of the ingredients for this rich pizza on hand so I can make it at a moment's notice.

- Place crust on an ungreased 14-in. pizza pan. In a small bowl, combine the artichokes, 3/4 cup of each cheese, mayonnaise and garlic; spread over crust. , Top with tomatoes. Sprinkle with remaining cheeses. Bake at 450° for 15-20 minutes or until edges are lightly browned.

- Heat up your oven as hot as it gets.
- Prepare pizza crusts - you can use ready made or use your favourite dough recipe.
- Spread tomato sauce evenly to the both pizzas. Add the grated cheese - yes, the cheese goes under the toppings.
- Spread the mushrooms, artichokes and olives on the pizza.
- Bake in the oven for about 10 minutes or longer, depending on how hot your oven is. Pizza is done when the crust is golden.

- Preheat the oven to 450 degrees F (230 degrees C).
- Prepare pizza crust according to recipe or package instructions. Place on a pizza pan.
- Pour the liquid from the artichokes into a small skillet, and bring to a boil over medium heat. Cook for 1 minute, or until the liquid is almost gone.
- Add garlic, and cook, stirring, for less than a minute. Add artichoke hearts, stir to coat with garlic flavor, then remove from heat, and set aside.
- Spread spaghetti sauce over the prepared pizza crust.
- Sprinkle with cheese, then place the artichoke hearts and garlic over the cheese.
- Arrange tomato slices evenly over the top.
- Bake for 20 minutes in the preheated oven, until crust is puffed and golden, and cheese is melted.

ARTICHOKE PIZZA

- Preheat oven to 500 degrees. Lightly oil two 14-inch pizza pans. Set aside. In a medium skillet, heat 1/4 cup oil over high heat. Add artichokes, and cook, stirring, for about 1 minute. Add shallot, and cook, stirring, 1 minute more. Add wine and 1/2 cup water; bring to a boil. Cover, and lower heat to simmer. Cook until artichokes are tender when pierced with the tip of a knife, 8 to 9 minutes. Add marjoram, and stir to combine. Season with salt and pepper. Set aside.
- Divide dough in half. Cover one half with plastic wrap while working with the other. Working on a lightly floured surface, use fingers to flatten and stretch dough into a rough 8-inch circle. Transfer to one of the prepared pans or onto a pizza peel. Continue pressing dough outward until it just fits inside rim of pan or reaches almost to the edge of the stone. Dough should be less than 1/4 inch thick. Drizzle with olive oil. Repeat with remaining dough.
- Sprinkle each round with half the mozzarella. Transfer to oven, and bake for 10 minutes. Remove from oven. Divide artichokes evenly between pizzas, and sprinkle each with 2 tablespoons Parmesan. Return to oven until crusty and golden, 10 to 15 minutes more. Serve immediately.
SPINACH-ARTICHOKE PIZZA BAGELS

- Preheat the oven to 500˚. Combine the spinach, artichokes, cream cheese, parmesan, mayonnaise, sour cream, garlic, lemon zest, 1/2 teaspoon salt and a few grinds of pepper in a food processor. Puree until very smooth.
- Put the bagels cut-side up on a rimmed baking sheet. Bake until lightly toasted, about 5 minutes. Spread a heaping 1/4 cup of the spinach mixture on each bagel half. Dot each with 3 small spoonfuls of ricotta, then sprinkle with the mozzarella. Bake until the cheese is melted and bubbling, 10 to 12 minutes.
- Top the bagels with more parmesan and a pinch of red pepper flakes.
CAULIFLOWER-CRUST ARTICHOKE PIZZA

- Position racks in the upper and lower thirds of the oven; preheat to 425 degrees F. Put each crust on a baking sheet. Brush each with 1 teaspoon olive oil. Divide the pizza sauce between the crusts and spread almost to the edges with the back of a spoon. Sprinkle with the mozzarella, parmesan and oregano. Scatter the artichokes evenly over the pizzas. Bake, switching the pans halfway through, until the crusts are crisp and the cheese browns slightly, 12 to 15 minutes.
- Meanwhile, combine the escarole, mortadella, roasted pepper and giardiniera in a large bowl. Drizzle with the giardiniera brine and remaining 1 tablespoon olive oil and season with pepper. Toss.
- Cut the pizzas into quarters and divide among plates. Serve with the salad.

PESTO PIZZA WITH FETA AND ARTICHOKES

- For the dough: Mix the sugar and yeast in 1 1/2 cups warm water (100 to 110 degrees F).
- Let sit until foamy, 3 to 5 minutes.
- Stir in the olive oil. In a mixer fitted with the paddle attachment, combine the yeast mixture with the flour and salt and mix on low until smooth.
- Switch to the dough hook and knead on medium, adding a little more flour or water if needed, until the dough forms a loose, sticky ball around the hook. Increase the speed to medium-high and knead until the dough is soft, smooth and springy, 2 to 3 minutes.
- Put the dough in a large bowl, drizzle with olive oil and turn to coat. Cover with plastic wrap and let rise until doubled in size, about 1 1/2 hours.
- For the topping: Meanwhile, in a food processor, combine the basil, pine nuts, garlic and 3 cups of the arugula. Process to make a chunky paste. Add 1/4 cup olive oil and process until smooth. Add the Parmesan and pulse just until incorporated. Season lightly with salt and pepper.
- In a medium skillet, cook the bacon until crisp. Drain on paper towels.
- When the dough has risen, preheat the oven to 500 degrees F with a baking stone on the bottom rack.
- Punch down the dough. Brush an 18-by-13-inch rimmed half-sheet pan liberally with olive oil. Transfer the dough to the pan and press it all the way into the corners (it helps to cover the dough with a sheet of plastic wrap while pressing so the dough doesn't stick to your fingers).
- Bake on the preheated stone until the dough has puffed and just begins to color, 8 to 10 minutes.
- Remove the dough from the oven, loosen from the baking sheet with a metal spatula and brush lightly with olive oil. (The crust can be baked ahead to this point and topped and finished in the oven later, if desired.)
- Spread the pesto on the dough almost to the edges. Top with the mozzarella, feta, artichokes, cooked bacon and jalapeno slices.
- Bake on the top rack until the cheese is browned and crusty, about 8 minutes more.
- In a large bowl, toss the remaining 3 cups arugula with the remaining tablespoon olive oil and the jalapeno brine. Season with salt and pepper and scatter over the pizza. Cut into squares to serve.
PESTO-ARTICHOKE PIZZA

My own personal recipe:) The massive amounts of veggies stay moist and absorb every ounce of garlic pesto flavor, the crust is crisp...the pizza is quick, easy, satisfying, flavorful and healthy! Piled high with veggies and other good stuff, this puppy will satisfy even the most skeptical pizza gourmet. Try adding garlic grilled chicken for a carnivorous twist. ROWR!

- PREP: defrost spinach in microwave; cut tomatoes into large chunks; cut artichoke quarters in half.
- Spread pesto on crust.
- Toss a thin coat of shredded cheese over the pesto.
- Then begin to layer vegetables.
- First spread spinach evenly.
- Then top with artichokes, followed by diced tomatoes.
- Sprinkle a thicker layer of cheese on top of the vegetables (the cheese will hold it together).
- Drop small balls of goat cheese, sprinkle pine nuts, and finally add some shredded fresh basil to the top of the pizza.
- Bake according to pizza crust instructions.

SWISS CHARD ARTICHOKE PIZZA
The Swiss Chard and Artichokes combined with parmesan and mozzarella cheese makes for a unique and tasty pizza. You can use a store bough pizza dough (Trader Joes is good) or use this quick and easy pizza crust. Note: I have revised the recipe and added bacon and more cheese. - Saute onions and swiss chard stalks in olive oil until soft, add garlic and cook another minute or two, add swiss chard leaves and artichoke hearts, cook about 10-12 minutes until swiss chard is tender, stir in worcestershire sauce and red pepper flakes.
