Artichoke Dip Bites image

These hot and bubbly, creamy, cheesy Artichoke Dip Bites cocooned in soft puff pastry are the best way to eat your favorite dip and sooo crazy delicious everyone will beg you for the recipe! These Bites boast three types of cheese - cream cheese, mozzarella and Parmesan, both mayonnaise and sour cream, green chiles for a tang and hand picked seasonings for maximum flavor. They are destined to become one of your favorite appetizers of all time and you don't even have to turn on the stove!

Provided by Jen

Time 45m

Number Of Ingredients 14

1 package puff pastry (2 sheets, 17.3 oz) (thawed according to directions)
1 14 oz. can artichoke hearts (in water) (rinsed, drained and chopped)
4 oz. Cream Cheese (softened)
1/4 cup mayonnaise
1/4 cup sour cream
1 cup freshly grated mozzarella cheese (divided)
1/4 cup grated Parmesan cheese
2 tablespoons canned mild chopped green chilies
1 teaspoon garlic powder
1/2 tsp EACH onion powder, ground cumin, dried parsley
1/4 tsp EACH paprika, pepper, salt
pinch-1/8 teaspoon cayenne pepper
bacon
parsley

Steps:

  • Mix together all of the Artichoke Dip ingredients in a medium bowl, using only 1/2 cup mozzarella. Set aside.
  • Preheat oven to 400 degrees F. Lightly spray two 24-count mini muffin pans with nonstick cooking spray. Set aside.
  • Unfold thawed pastries onto a lightly floured surface. Cut each pastry sheet into 36 squares for a total of 72 squares using your pizza cutter. To cut each sheet into 36 squares, cut each sheet in thirds along fold lines, then each third in half. Finally, cut six even rows.
  • Add two dough squares perpendicular to each other in 36 muffin cups as illustrated in above photo, pressing down in the center to create an indent for filling. (Note, they will only fill half of the second muffin pan).
  • Fill each dough cup with 1 tablespoon Artichoke Dip. Top dough cups evenly with remaining 1/2 cup mozzarella cheese.
  • Bake at 400 for 15 minutes, or until cheese is melted and turning golden. Wait 5 minutes before removing from muffin tin. Garnish with parsley and bacon if desired.

OVEN ROASTED ARTICHOKES

Oven Roasted Artichokes image

These fork-tender artichokes from Russ Crandall of The Domestic Man are a delicious addition to any feast.

Provided by Reynolds Kitchens(R)

Categories     Trusted Brands: Recipes and Tips     Reynolds®

Time 1h5m

Yield 6

Number Of Ingredients 10

4 artichokes (3 to 4 inches wide)
1 tablespoon olive oil
1 tablespoon butter, melted
1 tablespoon lemon juice
1 cup mayonnaise
2 cloves garlic, minced
½ teaspoon ground black pepper
¼ teaspoon ground dried chipotle pepper
½ cup freshly grated Romano, Asiago and/or Parmesan cheese blend
Reynolds Wrap® Aluminum Foil

Steps:

  • Preheat oven to 375 degrees F. To prepare the artichokes, trim each stem to less than 2 inches in length. Slice off the tips of the artichoke and snip the thorny tips with some kitchen shears. Slice the artichoke in half lengthwise and then remove and discard the "choke" (white fibrous hairs and inner purple leaves) with a small knife.
  • Lay out 8 squares of Reynolds Wrap® Aluminum Foil. Place 1 artichoke half in the center of each foil square. In a bowl, combine the olive oil, butter and lemon juice. Drizzle over the face-up artichoke halves, taking care to get the mixture in between the leaves. Flip the artichoke so it's cut side down on the foil. Bring up foil sides. Double fold top and ends to seal packet snugly around the artichoke. Roast on a baking sheet until the stems are fork-tender, about 40 minutes.
  • As the artichokes roast, combine the mayonnaise, garlic, black pepper, chipotle powder and cheese; set aside.
  • Open foil surrounding artichokes carefully by cutting along top with a sharp knife, allowing steam to escape. Using tongs, flip the artichoke face up. Scoop the mayo mixture into the divot made by removing the "choke" and spread with a spoon to extend beyond the divot. Turn oven temperature to broil. Leaving the foil open, broil until the mayo mixture is browned, 4-5 minutes.
  • To eat, remove the leaves from the outer part of the artichoke, dip in the mayo mixture and scrape the soft artichoke meat from the leaf with your teeth. Continue working your way through the artichoke until the leaves and dip disappear!

PITTSBURGH HAM BARBECUES

Pittsburgh Ham Barbecues image

I grew up on these delicious, sweet, and tangy barbecue sandwiches made from chipped deli ham. This dish is a staple in Western Pennsylvania, although each family seems to have its own way of making them! It's a terrific last-minute meal. Chipped chopped ham is a pressed ham loaf sold at deli counters in the Pittsburgh area which is always chipped. If you can get Islay's Chipped Ham, that is the original and still the best for these sandwiches. Otherwise, just get any deli ham and have it chipped or shaved paper thin. Enjoy!

Categories     Main Dish Recipes     Pork     Ham     Brown Sugar

Time 30m

Yield 8

Number Of Ingredients 11

½ cup butter
1 small onion, finely chopped
2 cups ketchup
⅓ cup distilled white vinegar
½ cup water
3 tablespoons brown sugar
2 teaspoons prepared yellow mustard

8 kaiser rolls, split
1 cup pickle relish

Steps:

  • Preheat an oven to 275 degrees F (135 degrees C).
  • Melt the butter in a large skillet over medium-high heat; cook and stir the onions in the butter until translucent, about 5 minutes. Stir in the ham; cook until heated through and the sauce is bubbling, 5 to 7 minutes more.
  • While the ham simmers, heat the kaiser rolls in the preheated oven until toasted, 5 to 7 minutes.
  • Assemble the sandwiches by dividing the ham mixture among the toasted kaiser rolls, topping the ham with pickle relish. Serve hot.

Provided by Michele O'Sullivan

Categories     Side Dish     Vegetables

Time 1h25m

Yield 6

Number Of Ingredients 8

6 whole artichokes
3 slices Italian bread, cubed
1 clove garlic, minced
⅛ cup chopped fresh parsley
¼ cup grated Romano cheese
½ teaspoon dried oregano
5 tablespoons vegetable oil, divided
salt and pepper to taste

  • Press about 1/2 cup of stuffing into each artichoke. Tightly pack stuffed artichokes together in a large heavy saucepan or Dutch oven. Add enough water to reach half way up artichokes and add 3 tablespoons oil.
  • Bring to a boil over high heat; reduce heat to low and simmer, covered, for 1 hour, or until leaves pull out easily.

GRANNYS HAM AND ARTICHOKE CASSEROLE

grannys ham and artichoke casserole image

This is a hearty, "warm you up" dish that my grandma used to make. it is one of the few things that i remember her making as she lived far from us and i only saw her once a year. Enjoy.

Provided by polly salama

Categories     Pork

Time 40m

Yield 4-6 serving(s)

Number Of Ingredients 8

3 jars marinated artichoke hearts
2 cans cream of mushroom soup
2 tablespoons chopped onions
1/4 cup sherry wine
1 teaspoon garlic salt
2 cups cooked, diced ham
6 ounces shredded cheddar cheese
pepper

Steps:

  • Drain artichoke hearts.
  • Combine soup, onion, sherry and garlic salt.
  • Mix well.
  • In a 3 quart casserole dish put artichoke and ham, pour soup mixture over top, then add cheese over top of the soup mixture.
  • cover and bake for 25-30 minutes in a preheated 375 degree oven.
  • One variation of this recipe that i leave out is to add 8 quatered hard boiled eggs to the pan before the soup mixture is poured on.
  • I am not a big hard boiled egg fan so I omit it.
  • She sometimes added chow mein noodles to the top 5 minutes before taking out of the oven.
  • When it is finished cooking i always take fresh ground pepper and sprinkle over the top before serving.

ARTICHOKES WITH HAM

Artichokes with Ham image

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes

Number Of Ingredients 9

1 lemon halved, plus 2 tablespoons freshly squeezed lemon juice
12 medium artichokes
Coarse salt
1 cup plus 5 tablespoons olive oil
1 tablespoon sherry vinegar
1 tablespoon whole grain mustard
2 colossal shrimp, peeled, deveined, and finely chopped
8 thin slices Serrano ham or prosciutto, 2 1/2 by 4 inches
1 recipe Pigs' Ears, cooked and julienned

Steps:

  • Fill a large bowl with ice water. Squeeze lemon into bowl, and add lemon halves; set aside.
  • Trim artichokes; snap off tough outer leaves. Slice off the upper 2/3 of bulb and discard. Using a vegetable peeler, remove green outer layer from around heart. Using a melon baller, scoop out choke, and discard. Keep in acidulated water while preparing remaining artichokes.
  • Bring a medium saucepan of water to a boil. Add 10 of the artichokes and 2/3 cup oil. Cook until tender when pierced with the tip of a knife. Using a slotted spoon, transfer to a blender. Slowly add 1/3 cup of the cooking liquid and 1/3 cup oil. Blend artichokes until smooth. Season with salt and pepper. Transfer puree to a small bowl; set aside.
  • In a small bowl, whisk to combine the vinegar and mustard. While continuing to whisk, gradually add 3 tablespoons olive oil whisking until thickened; set aside.
  • Place julienned pigs' ears in a small skillet. Cook over medium-high heat until heated through and golden brown. Remove from heat; set aside.
  • Thinly slice the remaining 2 artichokes lengthwise. In a large skillet, heat 1 tablespoon oil over medium-high heat. Add the artichokes, and saute until crisp and golden brown. Remove, and set aside. To the same skillet, add remaining tablespoon oil. When the oil is hot, add the shrimp. Saute until pink and just cooked through. Remove and set aside.
  • Evenly divide the artichoke puree between 4 plates. Place ham on work surface. Divide shrimp between slices of ham, and wrap to enclose to form bundles. Place 2 bundles in the center of each plate. Garnish with sauteed artichokes and pigs' ears. Drizzle with vinaigrette, and serve immediately.

COUNTRY HAM

Country Ham image

Provided by Alton Brown

Categories     main-dish

Time P2DT4h30m

Yield 20 portions

Number Of Ingredients 3

1 country (dry cured) ham
1 liter Dr. Pepper
1 cup sweet pickle juice, optional

Steps:

  • Unwrap ham and scrub off any surface mold (if you hung in a sack for 6 months you'd have mold too). Carefully remove hock with hand saw. (If this idea makes you eye your first aid kit, ask your butcher to do it. But make sure you keep the hock, it's the best friend collard greens ever had.)
  • Place ham in cooler and cover with clean water. (As long as it's not too dirty you can use what southerners call the "hose pipe"). Stash the cooler in the bushes. If it's summer, throw in some ice. If it's freezing out, keep the cooler inside. Change the water twice a day for two days turning the ham each time.
  • Preheat oven to 400 degrees F.
  • Place ham in a large disposable turkey-roasting pan and add enough Dr. Pepper to come about halfway up the side of the ham. Add pickle juice if you've got it and tent completely with heavy-duty foil. Cook for 1/2 hour then reduce heat to 325 degrees F, and cook another 1 1/2 hours.
  • Turn the ham over, insert an oven safe thermometer (probe-style is best) and cook another 1 1/2 hours, or until the deepest part of the ham hits 140 degrees F (approximately 15 to 20 minutes per pound total).
  • Let rest 1/2 hour then slice paper-thin. Serve with biscuits or soft yeast rolls.
  • Cooks note: Even after soaking, country ham is quite salty, so thin slicing is mandatory. If you're a bacon fan, however, cut a thicker (1/4-inch) slice and fry it up for breakfast.

ARTICHOKE AND HAM STRATA

Artichoke and Ham Strata image

Nothing but rave reviews when I've made this! I tend to put in a little more cheese and mix it up with Havarti and play with other ingredients like mushrooms, but straight from the recipe is superb, as well! Makes for a great dish if you're entertaining for brunch- just make sure you plan ahead! The Cooking Light editors recommend at least 8 hours (or overnight) to let the dish sit in the fridge.
