RAZORBACK CORN BREAD

Arkansas is called "razorback country", so this recipe seemed appropriate to represent our area! This dish is almost a meal in itself, but I serve it with mashed potatoes, fresh peas or butterbeans and cabbage slaw. I recently took it to our Senior Citizens Club and received lots of compliments and requests for the recipe.

Time 35m

Yield 12 servings.

Number Of Ingredients 12

8 ounces bulk pork sausage
2 cups cornmeal
1/2 cup all-purpose flour
3 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 large eggs, beaten
3 canned green chilies, chopped
1 large onion, chopped
1 can (11 ounces) Mexican-style or whole-kernel corn, drained
2 cups buttermilk
1/2 cup shredded cheddar cheese

Steps:

  • In a deep 10-in. cast-iron skillet, fry sausage until done. Reserve 2-3 tablespoons drippings. Crumble sausage. Combine cornmeal, flour, baking powder, baking soda and salt. In separate bowl, combine eggs, chilies, onion, corn, buttermilk and cheese. Add egg mixture to cornmeal mixture. Stir in sausage and reserved drippings. Pour into the greased skillet and bake at 450° for 20-25 minutes or until done. Serve warm from skillet.

Number Of Ingredients 6

6 baking potatoes, uniform size
1/2 c butter
1/2 c grated parmesan cheese
1/3 c dry bread crumbs
salt & pepper
paprika, for garnish

Steps:

  • 1. Preheat oven to 450 dF. Generously grease a large shallow baking dish. Set aside.
  • 2. Peel potatoes. Starting at one end, cut 1/4-inch slices without cutting all the way through to the bottom of the potato. Slices will fan out slightly. Place potatoes in the baking dish, cut side up. Sprinkle with salt and pepper to taste, dot with butter.
  • 3. Bake for 20 minutes, basting occasionally with butter from the bottom of the dish.
  • 4. In a small bowl, mix Parmesan cheese and bread crumbs. Remove potatoes from the oven and sprinkle the bread-cheese mixture between the slices and over the top.
  • 5. Bake 25 to 30 minutes longer without basting, or until golden brown and tender. Sprinkle with paprika.

2 cups buttermilk
1 teaspoon baking soda
2 cups cornmeal
1 teaspoon salt

Steps:

  • Preheat oven to 450 degree F. Beat egg(s) in large mixing bowl. Beat in all the rest of the ingredients. Pour into buttered hot square pan, muffing cups or corn stick pans. Bake just until set. Serve piping hot with butter. Cut corn bread into squares if baked in square pan. Bake 10-15 minute for sticks or muffins; 20-25 minute for corn bread.

1 stick jimmy dean light sausage
2 c martha white corn meal or you can use yellow
1/2 c all purpose flour
3 tsp baking powder
1 tsp baking soda
1 tsp salt
2 eggs beaten
1 can(s) ortega green chillies
1 medium onion chopped
1 can(s) mexicorn 11 0z
2 c buttermilk
1 stick shredded cheddar cheese 8 oz

Steps:

  • 1. Mix ingreidents to make cornbread.Cornmeal,flour,baking powder,baking soda,salt,eggs and buttermilk.
  • 2. cook sausage till done make sure its crumbled like hamburger meat.Add to wet cornbread mix.
  • 3. Add chillies,mexicorn,onion,and cheese to that and stir all together.
  • 4. Pour mixture into a 10 inch pan or iron skillet and bake at 350 f for 20 to 25 mins or until brown on top and done.
