Steps:
- Bring a large pot of water to a boil over high heat. Add 1 teaspoon salt. Meanwhile, with a twin curl cutter, cut 7 ounces of potato curls, about 2 cups. Cover with water and refrigerate the scraps for another recipe. Preheat the oven to 450°F. Lightly mist a small nonstick baking sheet with oil spray. Set aside. Transfer the potato curls to the boiling water. Cook for exactly 3 minutes but no longer or they will break. Drain in a colander. Set aside for about 5 minutes to cool. Meanwhile, in a large mixing bowl, combine the egg substitute, flour, paprika, cayenne, garlic powder, onion powder, and the remaining 3⁄4 teaspoon salt. With a fork, mix until well blended. Add the potatoes. Toss them with your fingers until they are coated with the seasoning mixture. Transfer, allowing any excess seasoning mixture to drip off, to the reserved baking sheet. Arrange the potatoes, not touching, in a single layer. Lightly mist with oil spray. Bake for 18 to 24 minutes, turning them about halfway through, until crisp and cooked through. - Pour fries into a large bowl and add seasoning mixture. Mix well. Dump fries onto a baking sheet lined with parchment paper and spread around evenly (so they aren't overlapping).
- Bake for 30-35 minutes, flipping every ten minutes so they become nice and crispy.

Steps:
- For the potatoes: Spiralize the potatoes into fries and soak in water in a container for 1 hour in the refrigerator.
- For the batter: Combine the flour, paprika, seasoned salt, cayenne, some salt and pepper and 1 cup water in a large pitcher and pour into a large resealable plastic bag.
- Drain the fries and pat dry. Put them in the bag with the batter and massage to make sure they are coated thoroughly with it. Set aside for 30 minutes so the fries can absorb all the flavors.
- Heat about 3 inches of oil in a heavy-bottomed pot over medium heat to 365 degrees F.
- Cook the fries in batches until golden and crispy, about 2 minutes per batch. Drain on a paper towel-lined plate, sprinkle with salt and serve immediately.

- Fill a large bowl with hot water (from the tap is fine, just make it hot), place the spiralized potatoes into the bowl, and let sit for 20-30 minutes. Strain
- Preheat oil in a deep fryer or large pot (high sides are key here). Oil temp should be about 375 degrees, and if you put it at medium heat for about 5 minutes you should reach this temp.
- In a bowl, make your batter: mix all dry ingredients with a whisk. Add water, then whisk until combined.
