Apricot Wine Cordial image

For a flavorful drink, chopped apricots are marinated in white wine, brandy, and sugar, for several weeks. This is a special drink to be served at Christmas or other festive get-togethers. The 1 to 4 weeks it takes to make this, is not listed below. The left-over apricots can be used for cake fillings.

Ingredients

12 ounces dried apricots
1 (1 1/2 liter) bottle dry white wine
2 cups sugar
1 cup apricot brandy

Steps:

In a food processor, proces apricots until finely chopped.
Place apricots in a non-metal container.
Stir in wine, sugar, and brandy.
Cover and allow to stand at room temperature 1 to 4 weeks.
Strain wine and pour into gift bottles.

This is a real "oldie"...my aunt says it was always brought out on Sundays. I'm not sure what happened after that.....

Yield 3 quarts

Number Of Ingredients 9

Ingredients

1 lb dried apricot
4 quarts water
6 1/2 cups granulated sugar
2 1/4 cups brown sugar
1 1/2 cups seeded raisins
1 tablespoon ginger
2 lemons, sliced thin
2 oranges, sliced thin
1/2 fresh yeast cake

Steps:

Wash the apricots, then cut in half.
Place in a large crock and pour on the warm water, less 1/2 cup.
Stir in the sugars, fruit, raisins, and ginger.
Dissolve the yeast in the remaining 1/2 cup of water.
Add this to the crock, and mix well.
Cover tightly, and let it stand away from direct sunlight, for thirty days, stirring every other day.
After thirty days, strain, and bottle.
