BAKED HAM WITH BROWN SUGAR GLAZE
Baked ham is moist, tender and delicious inside while the outside is brushed with a brown sugar glaze and caramelized for a hint of sweetness.

Steps:
- Preheat oven to 325°F.
- Combine dijon mustard and pineapple juice. Brush over ham.
- If your ham has a plastic disk on the bone, this should be removed and discarded. Place the ham, flat side down in a roasting pan, and cover tightly with foil. Roast 12-15 minutes per pound (or according to package directions).
- Meanwhile, combine glaze ingredients and bring to a boil. Turn heat down and simmer 2-3 minutes. Cool.
- 15 minutes before ham is done, remove from the oven and turn the oven up to 425°F.
- Brush with glaze and return to the oven until the glaze is caramelized and the ham has reached the safe cook temperature.

- Preheat oven to 325°F If desired, score ham by making diagonal cuts 1-inch apart in fat in a diamond pattern. Place on rack in a shallow roasting pan. Insert meat thermometer. Thermometer should not touch bone. Bake until thermometer registers 125°F For rump, allow 1-1/4 to 1-1/2 hours; for shank, allow 1-3/4 to 2 hours.
- Meanwhile, for glaze, in a medium saucepan stir together sugar, vinegar, and mint sprigs. Bring to boiling. Reduce heat. Boil gently, uncovered, about 30 minutes or until reduced to 1 cup. Remove from heat. Remove and discard mint. Brush ham with some of the glaze.

BAKED HAM WITH COFFEE AND BROWN SUGAR GLAZE
Based on the classic "Ham with red-eye gravy". The glaze may seem pasty and messy when you are putting it on but don't worry it lends a lovely color and flavor to the exterior of the ham. Don't let the title fool you, the majority of the cooking for this delicious ham is poaching on top of the stove. - Place the ham in a very large stockpot and place water in the pot until it just covers the ham. Put the pot on the stove and turn the heat on high. When the water begins to boil, reduce heat to low and let the ham poach for 1 1/2 hours.
- While the ham is cooking prepare the glaze. Combine the brown sugar, vinegar, mustard, and black coffee in a bowl, and stir with a fork until the sugar is dissolved. Add the breadcrumbs and blend in (The glaze will become somewhat pasty as the breadcrumbs absorb the liquid.).
- Preheat oven to 400 degrees.
- Remove the ham from the pot of water and place in a large baking pan. Carve away the excess fat, if desired, and some of the rind.
- Spread the glaze evenly over the surface of the ham.
- Reduce the oven heat to 375 degrees, and bake the ham in the oven for 20-30 minute, or until the crust is hot and dark brown.
- Remove the ham from the pan and place on a cutting board.
- Allow to rest for at least 15 minutes before carving.
