SUNNY'S EASY ON YOUR BODY AND LEAN JALAPENO BURGER

Number Of Ingredients 10

1 1/2 pounds lean ground beef (97 percent meat, 3 percent fat)
1 1/2 teaspoons kosher salt
1 teaspoon salt-free Southwestern seasoning blend
Freshly ground black pepper
4 jalapenos
4 slices American cheese
4 whole wheat burger buns, warmed
1 medium red onion, thinly sliced
2 cups thinly shredded iceberg lettuce
Yellow mustard (optional)

Steps:

  • For the grill: Preheat the grill to 400 degrees F or a cast-iron pan over medium-high heat.
  • Crumble the beef into a large bowl. Add the salt, seasoning blend and some pepper. Mix the beef mixture gently with your hands so as to not overmix. Just fold the ground beef, don't mush or squeeze the ingredients into the beef. Form 4 patties.
  • Place the patties and the jalapenos over the direct heat of the grill or into the cast-iron pan. Cook the patties on one side until the meat is seared and releases easily from the grill grates or pan, 3 to 4 minutes. Flip the patties and rotate the jalapenos to get them charred on both sides. Cook until desired doneness on the beef, 3 to 4 more minutes for medium-rare to medium.
  • For the toppings: Top the burgers with the cheese and transfer to a plate or sheet pan. Cover with aluminum foil for about 5 minutes. Meanwhile, remove the charred jalapenos and chop. Spread over the cheese on the burgers.
  • Squeeze mustard on both the top and bottom buns if desired. Build the burgers by topping the bottom buns with the cheeseburgers, jalapenos, a pile of red onions, a pile of lettuce and the top buns. Serve.

Moist, delicious vegetarian alternative to boring frozen veggie burgers. These are easy to make and taste wonderful on whole-grain buns with some cheddar cheese, tomato and lettuce for crunch. Be watchful while cooking these ... the sugar content in the barbecue sauce can cause the burgers to blacken kind of quickly. Tastes great on the grill, too ... just keep an eye on them!

1 teaspoon olive oil
1/2 cup minced onion
1/2 cup chopped and seeded plum tomato
1 teaspoon minced jalapeno chiles, more if you like or 1 teaspoon serrano pepper
1 clove garlic, minced
1 teaspoon chili powder
1 (15 ounce) can kidney beans, rinsed,well drained
1/4 cup dry breadcrumbs
2 tablespoons barbecue sauce (I like homemade or Uncle Dougie's, a brand out of Barrington, IL)
1 egg white, beaten
4 whole grain buns, toasted
4 slices cheddar cheese
4 leaves lettuce
4 slices thick tomatoes
avocado, slices
barbecue sauce (Whatever else floats your boat ... sour cream?)

Steps:

  • Heat oil in nonstick skillet over medium heat.
  • Add next onion, plum tomato, jalapeno, garlic and chili powder; sauté 5 minutes.
  • Cool slightly.
  • Using fork, coarsely mash beans in bowl.
  • Combine with onion mixture, breadcrumbs, 2 tablespoons of the barbecue sauce and egg white.
  • Shape mixture into four 1/2-inch-thick patties.
  • (Can be prepared 4 hours ahead. Cover and chill.) It will look as though these little burgers will just fall apart and turn to mush, but they stay together really well once they"hit the pan"!
  • If grilling, oil the rack or spray grill rack with nonstick spray, then fire up coals to medium heat.
  • If pan-frying, heat a little olive oil over medium heat.
  • Place patties on grill or in skillet and cook until golden brown and heated through, about three minutes per side.
  • Place burgers on buns.
  • Serve with more barbecue sauce, and cheese, tomato, lettuce, avocado, or whatever topping you like!

ANDREW'S SPICY BBQ BURGERS

This is a hamburger recipe that my partner Andrew came up with one day, just playing in the kitchen. Hope you like it as much as he does.

2 lbs minced beef
2 medium red onions, finely diced
3 tablespoons garlic, minced
2 tablespoons spicy curry powder
2 tablespoons Worcestershire sauce
1 tablespoon cayenne pepper
1 teaspoon italian seasoning
1/2 teaspoon mustard powder
salt
freshly ground black pepper

Steps:

  • Mix all the ingredients together, using breadcrumbs if required, until the meat holds together well.
  • Divide into four lumps then gently pack each burger into patties.
  • Barbeque for 10-15 minutes or back in a 450F oven for 25 minutes until crispy.
  • Serve in a bun with salad.

1 15- to 16-ounce can kidney beans, rinsed, well drained
1/4 cup dry breadcrumbs
6 tablespoons barbecue sauce
1 large egg white, beaten to blend
4 whole grain buns, toasted
4 tablespoons grated reduced-fat cheddar cheese
4 lettuce leaves
4 tomato slices

Steps:

  • Heat oil in medium nonstick skillet over medium heat. Add next 5 ingredients; sauté 5 minutes. Cool slightly.
  • Using fork, coarsely mash beans in medium bowl. Mix in onion mixture, breadcrumbs, 2 tablespoons barbecue sauce and egg white. Shape mixture into four 1/2-inch-thick patties. (Can be prepared 4 hours ahead. Cover and chill.)
  • If grilling, spray grill rack with nonstick spray, then prepare barbecue (medium heat). If sautéing, spray large nonstick skillet with nonstick spray and heat over medium heat. Lightly spray patties on both sides with nonstick spray. Place patties on grill or in skillet and cook until golden brown and heated through, about three minutes per side.
  • Place burgers on bun bottoms. Spread 1 tablespoon barbecue sauce over each. Sprinkle with cheese. Top with lettuce, tomatoes and bun tops.

4 medium jalapenos, cut in half lengthwise and seeded
2 (15 ounce) cans black beans, drained and rinsed
2 large eggs
5 tablespoons olive oil or 5 tablespoons other vegetable oil
1 teaspoon ground cumin
1/4 teaspoon salt
1/8 teaspoon dried ancho chile powder or 1/8 teaspoon dried chipotle powder
1 cup panko breadcrumbs
1 red bell pepper, seeded and finely chopped
1/4 cup minced cilantro
1 shallot, minced
4 ounces cream cheese, softened
6 ounces cheddar cheese slices
6 hamburger buns

Steps:

  • Heat broiler to high. Place jalapenos, cut side down, on a foil-lined baking sheet and broil until totally blackened, about 10-15 minutes. Cover with the foil immediately upon removing from the oven and let sit for 5 minutes.
  • Remove the skin from the jalapenos and finely chop the flesh. Set aside.
  • Meanwhile, place 2 1/2 cups beans in a large bowl and mash until smooth. In a separate bowl, whisk together the eggs, 1 tbsp oil, cumin, salt and cayenne. Stir together the egg mixture, remaining beans, panko, bell pepper, cilantro and shallot. Mix into the mashed beans.
  • In a small bowl, whisk together the jalapenos and cream cheese.
  • Form the burger mix into 6 patties. Divide the cream cheese mixture among the patties and stuff inside them so that the black bean mixture completely surrounds them.
  • Heat 2 tbsp olive oil in a 12-inch nonstick skillet over medium heat until shimmering. Place 3 patties in the skillet. Cook until browned on both sides, about 4-5 minutes per side. Repeat with remaining oil and patties.
  • Serve warm topped with cheddar cheese on a toasted bun.

  • Tip the black beans into a food processor and pulse a few times until they are crushed but not totally puréed. (Alternatively, smash them with a potato masher). Tip into a large bowl.

  • Heat 3 tablespoons of the olive oil in a large frying pan over medium-high heat. Add onion, celery, carrots, and zucchini and season with salt and pepper. Cook, stirring occasionally until the vegetables start to brown. Add garlic and cook another minute. Remove from heat and set aside to cool.
  • Mash the beans in a bowl with a potato masher to desired consistency (I mashed mine up pretty good for the kiddos, but you can leave it chunkier if you prefer). Add the vegetables and remaining ingredients and thoroughly combine. Taste mixture and add more salt, pepper or spice mix as needed.
  • Form 8 patties, about 1/2 cup each, or make smaller “sliders” if you’d like. Cover and chill for at least 30 minutes or overnight.
