Salt and freshly ground black pepper
One 3- to 5-pound chuck roast
2 or 3 tablespoons olive oil
2 whole onions, peeled and halved
6 to 8 whole carrots, unpeeled, cut into 2-inch pieces
1 cup red wine, optional
3 cups beef broth
2 or 3 sprigs fresh rosemary
2 or 3 sprigs fresh thyme

Steps:

  • Preheat the oven to 275 degrees F.
  • Generously salt and pepper the chuck roast.
  • Heat the olive oil in large pot or Dutch oven over medium-high heat. Add the halved onions to the pot, browning them on both sides. Remove the onions to a plate.
  • Throw the carrots into the same very hot pot and toss them around a bit until slightly browned, about a minute or so. Reserve the carrots with the onions.
  • If needed, add a bit more olive oil to the very hot pot. Place the meat in the pot and sear it for about a minute on all sides until it is nice and brown all over. Remove the roast to a plate.
  • With the burner still on high, use either red wine or beef broth (about 1 cup) to deglaze the pot, scraping the bottom with a whisk. Place the roast back into the pot and add enough beef stock to cover the meat halfway.
  • Add in the onions and the carrots, along with the fresh herbs.
  • Put the lid on, then roast for 3 hours for a 3-pound roast. For a 4 to 5-pound roast, plan on 4 hours. The roast is ready when it's fall-apart tender.

1-1/2 pounds potatoes (about 3 medium), peeled and cut into wedges
3 tablespoons water
7 medium carrots, sliced
1 large onion, quartered
1 can (14-1/2 ounces) beef broth
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon dried thyme
1 teaspoon rubbed sage
1/2 teaspoon pepper
1 boneless pork loin roast (3 to 4 pounds)
1 jar (12 ounces) apricot preserves, divided

Steps:

  • In a large microwave-safe bowl, combine potatoes and 3 tablespoons water. Microwave, covered, on high for 10-12 minutes or until just tender. Drain and transfer to a 6-qt. slow cooker. Add carrots, onion and beef broth. In a small bowl, mix salt, garlic, thyme, sage and pepper; sprinkle half over vegetables., Rub remaining seasoning mixture over roast; place meat over vegetables. Spread half of the preserves over roast. Cook, covered, on low 3-1/2 to 4-1/2 hours or until meat is tender (a thermometer inserted in pork should read at least 145°)., Remove roast from slow cooker; tent with foil. Let stand 15 minutes. Serve with vegetables and remaining preserves.

1 boneless pork loin roast (2 to 3 pounds)
1 jar (12 ounces) apricot preserves
1 cup vegetable broth
2 tablespoons cornstarch
1/4 cup cold water

Steps:

  • Place roast in a 3-qt. slow cooker. In a small bowl, combine preserves and broth; pour over roast. Cover and cook on low for 6-8 hours or until tender. Remove meat to a serving platter; keep warm. , Skim fat from cooking juices; transfer to a small saucepan. Bring liquid to a boil. Combine cornstarch and water until smooth. Gradually stir into pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with pork.

1 cup water
2 cups beef broth
½ cup cider vinegar
1 cup apricot preserves
1 teaspoon salt
1 onion, chopped
1 carrot, chopped
1 ¼ teaspoons pickling spice
4 pounds eye of round roast
salt and pepper to taste
2 tablespoons vegetable oil
1 cup heavy cream

Steps:

  • In a medium saucepan over medium high heat, combine the water, beef broth, vinegar, apricot preserves, salt, onion, carrot and pickling spice. Stir together and bring to a boil. Then remove from heat, cover and refrigerate until well chilled.
  • Place roast in a 9x13 inch baking dish, pour chilled marinade over roast, cover and refrigerate for up to 24 hours.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat the oil in a large skillet over medium high heat. Place the roast in the skillet and sear the meat, browning well on all sides. Season with salt and pepper to taste, return meat to the baking dish and cover.
  • Bake at 350 degrees F (175 degrees C) for 1 1/2 hours. Remove from oven and let meat rest for 5 to 10 minutes.
  • Meanwhile, to make the gravy, transfer the sauce from the baking dish to a blender and puree until smooth. Then pour into a medium saucepan over medium heat. Stir in the cream and simmer until thickened, about 15 to 20 minutes. Slice meat and serve with the sauce.

1/2 cup apricot jam
1/2 cup Dijon mustard
1/2 cup packed light brown sugar
Freshly ground black pepper
One 4- to 5-pound spiral-cut ham

Steps:

  • Whisk together the jam, mustard, sugar and 1/4 teaspoon black pepper in a small pot. Bring the mixture to a boil to melt the sugar, whisking occasionally. Reduce the heat to a simmer until the mixture thickens, about 2 minutes. Remove from the heat, and reserve.
  • Add 3/4 cup water to the insert of a 6-quart slow cooker. Place the ham in the insert on its side, and brush lightly with the glaze. Cover, and cook on low until the ham is hot throughout, 6 to 7 hours. Refrigerate the remaining glaze.
  • When the ham has about 10 minutes left to cook, reheat the glaze in a small saucepan over medium-low heat, stirring frequently.
  • Transfer the ham to a carving platter or serving dish, and brush with enough glaze to make a glossy, sticky coating. Slice, and serve with the remaining glaze on the side.

ANDY'S POT ROAST (WITH APRICOT NECTAR)

I got this recipe out of the Washington Post many years ago....I'm not sure who Andy is but I've made this many times

3 tablespoons vegetable oil
1 (3 -4 lb) thick cut bone in blade chuck roast
24 ounces apricot nectar
2 -3 tablespoons vinegar (to taste)
2 -3 potatoes, cut into large chunks (unpeeled)
3 -4 carrots, cleaned and cut into large chunks
1 large onion, sliced
1 -2 teaspoon seasoning salt (to taste) or 1 -2 teaspoon seasoning, blend of your choice (to taste)

Steps:

  • Brown roast on both sides in oil in large skillet set over medium high heat. Add apricot nector to almost cover meat. Stir vinegar into nectar. Add potato and carrot chunks. Cover with onion slices and add seasoning.
  • Cover pan and simmer over very low heat 2 1/2 to 3 hours. Check occasionally and adjust heat or add more liquid as needed. Cook until meat is tender enough to fall off bone and vegetables are saturated with juices.
  • I usually make this in the oven cooked at 325 degrees covered tightly for about 3 hours or until meat is tender. I'll brown the meat first and then put in a roasting pan and add all other ingredients. It would probably be great for a crockpot although I haven't tried it yet. This recipe is good with any chuck roast.

3 -5 lbs boneless pork roast, I usually use center cut loin but whatever boneless is OK
1 (15 ounce) can whole berry cranberry sauce, NOT jellied
1/2 cup apricot preserves
1/2 cup apple juice, can use cider
1 (1 ounce) envelope onion soup mix
1 tablespoon cider vinegar
2 teaspoons Dijon mustard
1/4 teaspoon ground cloves
1/4 teaspoon crushed dried rosemary
1 lb carrot, peeled and sliced (optional)

Steps:

  • If using the carrots, place them on the bottom of your slowcooker.
  • Next, put the boneless pork roast in the slowcooker.

2 pork tenderloins (about 12 ounces each), trimmed of excess fat
1 tablespoon olive oil
Coarse salt and ground pepper
1 jar (10 to 12 ounces) apricot jam, (about 1 cup)
1/4 cup spicy brown mustard

Steps:

  • Heat broiler; set rack 4 inches from heat. Line a rimmed baking sheet with foil. Rub pork with oil; season with salt and pepper. Broil 10 minutes.
  • Meanwhile, in a small saucepan, whisk together jam and mustard. Cook over medium heat until jam melts, 3 to 4 minutes; remove from heat. Transfer half to a small bowl for brushing. Cover pan to keep remaining sauce warm.
  • Remove pork from broiler; brush with reserved sauce. Continue broiling until pork is blackened in spots and registers 150 degrees on an instant-read thermometer, 5 to 10 minutes more.
  • Cover pork loosely with foil; let rest 5 minutes before slicing. Serve drizzled with warm sauce.

1 teaspoon nutmeg
1 teaspoon cinnamon
1/2 teaspoon ginger
2 teaspoons salt
1/8 teaspoon pepper
2 tablespoons olive oil
2 onions, sliced
1 clove garlic, diced
1/2 cup brown sugar
1/2 cup red wine (or cider vinegar)
1 cup water
4 bay leaves

Steps:

  • Combine nutmeg, cinnamon, ginger, salt, and pepper; rub into meat.
  • Heat pressure cooker, add olive oil and brown meat well on all sides.
  • Add onion, garlic, brown sugar dissolved in wine, water, and bay leaves.
  • Close.
  • cover securely.
  • Place pressure regulator on vent pipe and cook 35 minutes with pressure regulator rocking slowly.
  • Let pressure drop of its own accord.
  • Or cook at 300 degrees for about 4 hours in a Dutch oven, or cook 8 hrs on low in a crock pot.
  • (This is my preferred method.).
