APRICOT ICE CREAM

1 pound apricots
3 whole eggs
3 yolks
1/2 cup sugar
2 cups heavy cream
1 1/2 cups milk
1 teaspoon vanilla extract
10 coriander seeds, crushed coarsely and tied in cheesecloth

Steps:

  • Wash and pit the apricots, chop them coarsely and simmer in three tablespoons of water until tender. Puree in a food processor and set aside.
  • Beat together the eggs, yolks and sugar until the sugar has dissolved and the mixture is pale and lemon colored. (This can easily be done in a food processor.)
  • Meanwhile, heat the cream and milk with the vanilla and coriander seeds. Remove from heat just before mixture reaches the boiling point.
  • Pour mixture in a thin stream into the eggs and mix thoroughly. Pour into a double boiler and put over very hot water on a medium flame. (You can also use a thick saucepan placed on an iron trivet over a low flame.) Cook until thickened to the consistency of custard.
  • Remove from heat and cool, whisking occasionally. Remove coriander bag. Strain mixture into a bowl and add the apricot puree. Chill thoroughly, then place the mixture in an ice cream maker and follow manufacturer's directions.

CHOCOLATE & APRICOT PUD WITH GLOSSY CHOCOLATE SAUCE

Traditional Christmas pud is not universally popular, especially with children - this wonderfully moist chocolate version could be the answer

200g ready-to-eat dried apricots
4 tbsp brandy
100g ground almonds
25g cocoa powder
100g self-raising flour
1 tsp baking powder
100g softened butter
140g light muscovado sugar
2 large eggs , beaten
4 tbsp milk
100g dark chocolate
2 tbsp clear honey
100g dark chocolate
284ml carton double cream
1-2 tbsp brandy (optional)

Steps:

  • Butter a 1.2 litre/2 pint pudding basin and put a circle of greaseproof paper in the base. Put the apricots in a small pan and add the brandy. Bring slowly to the boil, then simmer, turning the apricots occasionally until all the brandy has soaked in. Leave until cool enough to handle.
  • Tip the ground almonds into a bowl, then sift over the cocoa, flour and baking powder and mix everything together.
  • In another bowl, beat the butter and sugar together for 2-3 minutes until light and fluffy.Gradually beat in the eggs and milk.
  • Chop half the apricots into small pieces. Chop the chocolate into large chunks. Lightly stir the flour mixture into the cake mix, followed by the apricots and chocolate.
  • Put the remaining whole apricots into the bowl and spoon over the honey. Add the pudding mixture and smooth the top. Cover with double thickness buttered greaseproof paper and tie down. Trim off the excess paper, then overwrap in foil, tucking the ends under the edges of the paper.
  • Put the basin into a large pan and pour boiling water into the pan, to come halfway up the sides of the basin. Cover and steam for 21⁄2 hours, until it feels firm. (The pudding can be made to this stage up to 2 days ahead. Reheat by steaming for 1 hour, or microwave on medium for 6-8 minutes.)
  • Towards the end of the cooking time, make the sauce. Break up the chocolate and put in a small pan with the cream and brandy if using. Warm gently, stirring lightly until smooth and glossy.
  • Cool the pudding in the bowl for 10 minutes, then turn out and serve with the chocolate sauce and cream or good vanilla ice cream.

1 cup sugar
1/2 cup water
1/4 cup Cognac or other brandy
2 tablespoons fresh lemon juice
1 1/2 pounds firm fresh apricots, quartered lengthwise and pitted (4 cups)
Accompaniment: vanilla ice cream

Steps:

  • Cook sugar in a dry 12-inch heavy skillet over moderate heat, undisturbed, until it begins to melt. Continue to cook, stirring occasionally with a fork, until sugar is melted into a deep golden caramel, 8 to 10 minutes. Carefully add water, then add Cognac and lemon juice (caramel will harden and steam vigorously) and cook over moderately low heat, stirring, until caramel is dissolved. Stir in apricots and simmer, stirring occasionally, until apricots are tender but still hold their shape, about 10 minutes.
  • Serve warm or at room temperature.

BOOZY CHRISTMAS BOMBE

If you like rum and raisin ice cream, you'll love this brandy-soaked Christmas bombe

100g raisin
100g sultana
85g pack dried cranberries
6 tbsp brandy
2 tbsp dark muscovado sugar
284ml pot double cream
1 tbsp icing sugar
100g frozen cranberry (keep them frozen)
600ml good-quality fresh vanilla custard
brandy butter, to serve (optional)
85g light muscovado sugar
175g butter
2 tbsp brandy
100g frozen cranberry

Steps:

  • Put the dried fruit into a large bowl, add 2 tbsp brandy and the sugar, then cover with cling film. Microwave on High for 2 mins until the sugar has melted and the fruit plumped up. Give it a stir, then leave to cool and soak overnight. If you're short of time, carry on with step 2 and leave to soak for as long as it takes to complete step 2.
  • Put the cream, remaining brandy and icing sugar into a large bowl and whip to soft peaks. Pour the custard into another bowl and fold the cream into it. Tip into a freezer container and freeze the mix for 4 hrs, stirring the frozen edges into the rest of the mixture every hour or so until the whole tub is soft, but frozen (or use an ice cream machine, churning for 20-30 mins until thick). Meanwhile, line a 1.2-litre pudding basin with cling film.
  • Once the ice cream mix is thick, quickly fold the soaked fruit (and any liquid from it) and frozen cranberries through it and spoon into the lined basin. Freeze overnight or for at least 6 hrs. To serve, leave bombe at room temperature for 10 mins and turn out onto a serving plate.
  • To make the cranberry brandy butter sauce, in a heavy-based pan gently heat muscovado sugar and butter until the sugar dissolves.
  • Splash in brandy, add cranberries and boil gently till the cranberries pop, but still hold their shape and colour the sauce. If you want to, sieve the seeds out of the sauce and add some more cranberries for a really glossy finish. Serve hot or warm.

This peach sauce is a favorite over ice cream, cake, pancakes, waffles. If you do not want to use the brandy, peach or apricot nectar is a good substitute. Plain brandy can also be substituted if desired.

2 tablespoons peach preserves
2 tablespoons sugar
1 pinch salt
3 cups peeled and sliced peaches
2 teaspoons pure vanilla extract

Steps:

  • Combine the water, brandy, preserves, sugar, and salt in a medium heavy saucepan.
  • Bring to a boil, stirring occasionally until the sugar dissolves.
  • Reduce the heat to medium, add the peaches and cook for 3-5 minutes, or until the peaches are tender.
  • Remove the peaches from the pan with a slotted spoon and place in a serving bowl.
  • Cook the syrup until very thick- about ten minutes.
  • Toss with the peaches and vanilla.
  • The sauce can be served immediately, or can be served at room temperature or chilled.

This is the Runner-Up recipe for 1995 in the San Francisco Chronicle, from Georgeanne Brennan. The Blenheim variety of apricot has a particularly good flavour and is recommended for this recipe.

4 lbs ripe apricots
1 1/4 cups sugar
3 egg yolks
2 cups heavy whipping cream
2 cups milk
1 teaspoon almond extract

Steps:

  • Place the apricots in boiling water for 20 seconds to loosen their skins, then remove them from the water, drain and peel them.
  • Separate the apricots into halves and discard the pits.
  • Chop the apricots coarsely and put them in a large glass bowl.
  • Sprinkle with 1/4 to 1/2 cup of the sugar; stir and let stand for 1 hour, then puree them.
  • While the apricots are standing, prepare the custard ice cream base.
  • Beat the egg yolks in a bowl until they turn a light lemon yellow color, about 3 or 4 minutes. Set aside.
  • Combine the whipping cream, milk and the remaining sugar in a heavy-bottom saucepan. Cook over medium heat, whisking often, until the sugar has dissolved and the mixture is hot.
  • Ladle about 1 cup of the hot mixture into the beaten egg yolks, whisking constantly until well-blended and smooth.
  • Pour the egg yolk mixture into the saucepan and continue to cook over medium heat, whisking constantly, until the mixture thickens enough to form a film or coat the back of a spoon, about 5 minutes.
  • Remove from the heat and add the almond extract.
  • Let the mixture cool to room temperature, then stir in the pureed apricots.
  • Freeze in an ice cream maker according to the manufacturer's instructions.

  • Preheat oven to 450°. In a large bowl, combine flour and sugar. Cut in butter until crumbly. Add egg yolk. Gradually add milk, tossing with a fork until a ball forms., Press onto the bottom and up the sides of an ungreased 11-in. fluted tart pan with removable bottom. Bake 8-10 minutes or until lightly browned. Cool on a wire rack. Reduce heat to 350°., In a small saucepan, combine preserves and brandy; cook and stir over low heat until melted. Brush 2 tablespoons over crust. Arrange apricots over crust and brush with preserve mixture. , Bake 18-22 minutes longer or until crust is golden brown. Cool on a wire rack. Sprinkle with almonds. Serve with whipped cream if desired.

I came across this recipe while looking for something new to do with strawberries and thought it sounded delicious--combining my two of my favorite fruits. Prep time does not include letting ice cream cool and freeze (at least 8 hours). Cooking time includes processing time. Recipe source: Bon Appetit (July 1985)

1 cup dried apricot, chopped
2 tablespoons lemon juice
1 cup whipping cream
4 egg yolks, room temperature
2/3 cup superfine sugar (or regular white sugar run through the blender until very fine)
3/4 lb strawberry, sliced and gently mashed

Steps:

  • Soak apricots in lemon juice for at least 4 hours, stirring occasionally.
  • Scald cream in saucepan. Remove from heat.
  • Using an electric mixer beat egg yolks and sugar together until pale yellow. Gradually beat in hot cream. Return mixture to saucepan and cook over medium low heat until mixture thickens, stirring constantly. DO NOT BOIL!
  • Strain mixture into a meal bowl and refrigerate for at least four hours, stirring occasionally.
  • Fold strawberries, apricots and soaking liquid into custard. Process according to your ice cream maker manufacturer's instructions.
  • Freeze in covered container in freezer overnight or for several hours.
  • If frozen solid will have to let soften slightly in refrigerator before serving.
